I had an awesome Keto spread but to be honest I ate (and drank 🍷) way over on carbs (pours more wine.... grabs some cranberry sauce for plate). Did you too? WHO CARES! I hope you enjoyed yourself because I truly did. And I know it bumped me out of ketosis. But guess what?......Tomorrow is a new day and a fresh start. Sometimes we deviate and live in the moment. Sometimes we over eat, have a dinner roll, and over drink wine. THATS OKAY. I’m okay with indulging tonight. -• C R O S S I N G T H E F I N I S H •- These last couple weeks after completing my Marathon, I’ve been doing a bit of soul searching. I worked hard on my training leading up to race day and now that’s it accomplished- what’s next? Another marathon for sure- But I have a few months before I start training for one late April and since the Holidays are here (bringing cold weather and tasty food) I could see it being very easy to let myself get a bit too relaxed with challenging myself physically. So I’ve decided to beat myself to the punch- these last couple weeks I’ve decided to try something new and challenging for me. I’ve been attending CrossFit classes and joined a CrossFit gym! It’s been new, challenging, intimidating and exciting! I took classes on form and the movements and have been running low mileage in the morning (2-6 miles) and then going hard in their afternoon class. My goals are to increase overall fitness, lower body fat, get stronger, and become more confident in myself- all while remaining a low carb, Ketogenic Athlete! I’m so excited to share these next couple months with you and challenging myself in new ways👊🏽 •
Yesterday we did 75 burpees then went into three sets of: 400m run, 20 box jumps, 3 rope climbs. Very different than long 10-15 mile runs but very fun!

Easy dinner! Soft scrambled eggs with lots of coarse ground pepper. And a side salad (not pictured). The eggs tasted so fresh and delicious. Rarely do I eat them plain without sauce, but I've had lots of salt today and these tasted great as is.😋🍳🥚👌

Dry ribs and broccoli slaw. These dry ribs from Superstore were amazing and low carb at only 1g net carbs per 12 ribs. Broccoli slaw with a homemade peanut Thai dressing. Thanks you @ketojourneycanada for the rib post yesterday because they were amazing and so meaty!
First ski day of the year (we just did a few runs but tomorrow we go all day). The mountains are beautiful and I am super excited for the season! One of my kids put on his skis like it was yesterday. I needed to test a pie recipe today before I made it for family, haha. Pecan pie. It's my favorite pie. The only time I have it is this time of year.
This year I wanted to skip the corn syrup mess and keep it keto for me. I make it, it's my pie, I will make it "me approved." I got this recipe from @keto.connect last year. Printed it, and never used it. Until today. Coconut flour crust, no corn syrup. Used @lakantosweetener products .
I just inhaled a peice and it is frickin delicious. The crust reminds me of a shortbread crust so it's crumblier rather than flaky. But I tend to prefer that. The last time I made "normal" pecan pie, I made a shortbread crust. In a blind taste test, you'd never know that this wasn't a corn syrup base. Hallelujah! Keto pecan pie ❤. Oh, yeah the edges of the crust are a little burned. I forgot to go in and cover them. I got side tracked😂🤷♀️. It does NOT taste burnt though. I know most of my followers aren't keto, but it's still a good recipe to escape the corn syrup. You can easily swap non keto things and have this turn out amazing.

Oh hello Friday, my old friend. So I basically made the most glorious chicken crust pizza of life. WAY better than fathead!
Crust: 1 pkg ground chicken, 1 egg, 1/2 (ish) cup of Parmesan cheese and Italian seasoning.
Toppings: pepperoni, banana peppers and mozzarella.
Bake just the crust at 350F for about 10 minutes (until cooked through). Add desired toppings and put back in oven. Once toppings are on and cheese is fully melted, finish with broil to brown. Note: don’t overlook the base as it will continue to cook once toppings are on!
Serve with franks and @primalkitchenfoods ranch.
Lettuce tacos for lunch. Ground turkey, avocado, Queso Fresca and a dollop of salsa. When people want to know how to be keto, my answer is basically lettuce wrap everything. Such an easy substitute to cut the carbs.
Dinner with a good girlfriend tonight. Shared the scallops, green beans (forgot to take a pic before we dished up), steak and cauliflower. Everything was beyond delicious. Only a few modifications to ensure it was keto friendly!

Shout out to @bubbiespickles , my favorite brand of pickles and sauerkraut!🎉🥒🙌😍🐪 I have been eating #bubbiespickles for years! I love how they taste and what they stand for. The pickles are always big and crispy. They have a very different taste than your average store bought pickles...but in the BEST way possible! And *warning* they are highly ADDICTIVE and so is the pickle brine/juice.😍😁 I eat one pickle every morning and then drink a little bit of the juice. Honestly, I could drink the whole jar full of juice in one sitting, but I politely refrain, as I know I will want some the next day. 😳😅😋 These pickles are naturally fermented (no vinegar) and are full of healthy probiotics, which is great for #guthealth ! 💃 🎉 Made blackened fish tacos wrapped in red cabbage, last night for dinner. Super easy! Topped it with all sorts of goodies and a special (extra spicy) hot sauce that I buy from one of my favorite local, hole in the wall, Salvadoran Restaurants. YUM!!🔥🌶😍 Make sure you pat dry your fish before seasoning, for a crisper texture on the outside. Also, lightly press the seasoning into fish before cooking...it helps it adhere to the fish, which is important when making blackened seafood, or chicken. 👍😍😋🐟🌮🌮🌮
-• L O W C A R B P U M P K I N P I E •- Preparing some Keto Thanksgiving recipes as I’ve started to get more comfortable baking low carb. I used the crust from those pecan pie bars I made previously and adapted a pumpkin pie cupcake recipe for the filling🙌🏽 Adding the maple syrup really gives it a great flavor!
