Momofuku Milk Bar's Chinese Sausage Focaccia, from the Momofoku Milk Bar baking book by Christina Tosi. Extremely yummy, extremely addictive.

Bertrand Russell, the Nobel prize winning British philosopher, mathematician, and political activist said "To conquer fear is the beginning of wisdom." I have been afraid of bread baking for decades. Does me making this Chinese-Italian focaccia count in the realm of fearlessness meant by Mr. Russell? Probably not. But who's asking him? He's dead!

I'm not actually that into bread, I have some sort of gene lacking that precious connection to yeast leavened dough and crust. In fact, my sandwiches must be crustless or you'll see a big pile of crust ripped off and cast aside in a sort of tableau, illustrating the very meaning of vexation. Bread and I have a lukewarm relationship, possibly due to a childhood of being raised on basmati rice, potatoes, and noodles as the occasional starch alternate. I do like sourdough, and have often wondered if I can muster up the patience to make a  starter and spend my life in quivering anticipation of "the rise" or "the crumb". It all seems much too drama filled and better suited to those inclined to tasks of monastic, unhurried partying. BTW, I've attended breakfast breads making classes at the prestigious George Brown College Culinary Arts school, and even after that I harboured a defeatist cloud over my ability to bake bread.

What got me motivated to make this was the savoury combination of sweet cured Chinese sausages and garlic in a spicy oil. Instead of toban djan I used the suggested alternate of shiro miso combined with my favourite hot sauce, harrisa. The miso, once again elevated all the other salty and sweet flavours, making this unique focaccia an experience I'd happily repeat. Even my picky husband loved it and wouldn't stop raving about it. He seemed gobsmacked that it wasn't store bought. It's not pretty to look at, but I can assure you this is a genius recipe from the Momofoku group.

Za oknem mam nadzieję w końcu pokaże się słońce, więc i na talerzu było dziś słonecznie. Udało mi się zachować kawałek Focacci do dzisiejszego śniadania. Razem z jajecznicą pysznie się Po takim śniadaniu mogę ruszać do pracy 👌👌👌.

We recently bought @leithscooking “How to cook bread” cookbook and we absolutely love it! Making bread can be a bit intimidating but the book explains very well all the techniques you need to know and makes it accessible to everybody. We started by making this sweet focaccia with chocolate chips and hazelnuts! We recently bought @leithscooking “How to cook bread” cookbook and we absolutely love it! Making bread can be a bit intimidating but the book explains very well all the techniques you need to know and makes it accessible to everybody. We started by making this sweet focaccia with chocolate chips and hazelnuts! Momofuku Milk Bar's Chinese Sausage Focaccia, from the Momofoku Milk Bar baking book by Christina Tosi. Extremely yummy, extremely addictive.

Bertrand Russell, the Nobel prize winning British philosopher, mathematician, and political activist said "To conquer fear is the beginning of wisdom." I have been afraid of bread baking for decades. Does me making this Chinese-Italian focaccia count in the realm of fearlessness meant by Mr. Russell? Probably not. But who's asking him? He's dead!

I'm not actually that into bread, I have some sort of gene lacking that precious connection to yeast leavened dough and crust. In fact, my sandwiches must be crustless or you'll see a big pile of crust ripped off and cast aside in a sort of tableau, illustrating the very meaning of vexation. Bread and I have a lukewarm relationship, possibly due to a childhood of being raised on basmati rice, potatoes, and noodles as the occasional starch alternate. I do like sourdough, and have often wondered if I can muster up the patience to make a  starter and spend my life in quivering anticipation of "the rise" or "the crumb". It all seems much too drama filled and better suited to those inclined to tasks of monastic, unhurried partying. BTW, I've attended breakfast breads making classes at the prestigious George Brown College Culinary Arts school, and even after that I harboured a defeatist cloud over my ability to bake bread.

What got me motivated to make this was the savoury combination of sweet cured Chinese sausages and garlic in a spicy oil. Instead of toban djan I used the suggested alternate of shiro miso combined with my favourite hot sauce, harrisa. The miso, once again elevated all the other salty and sweet flavours, making this unique focaccia an experience I'd happily repeat. Even my picky husband loved it and wouldn't stop raving about it. He seemed gobsmacked that it wasn't store bought. It's not pretty to look at, but I can assure you this is a genius recipe from the Momofoku group.
