Today was good. Until I accidently ate garlic (which is super high fodmap) and then got really sick! I did remember to ask for no onion and gf, but i forgot about the garlic in the sauce 😓 How ever it wasn't all bad, I had a coffee from my favourite place @surfside_cafe,met a teeny tiny doggo and felt super cute in my latest opp shop find 🤗

I love Rice Paper Rolls! the best part about them is that they are easy to make and Low FODMAP!

Ingredients:
2 Lebanese cucumbers, cut into thin sticks
2 medium carrots, grated
1 bunch Vietnamese mint leaves
100g beanshoots
1/2 red or yellow capsicum, thinly sliced
30 sheets rice paper
300g firm marinated tofu, thinly sliced

Dipping sauce:
Juice of 1 lemon
1 red chilli, deseeded and finely chopped
1 tablespoon fish sauce
1 cm piece fresh ginger, sliced

Method:
• Soak rice paper sheet in warm water until soft and pliable (about 30 seconds).
• Place a softened rice paper sheet on a board. Spread and layer a small amount of each vegetable, 2 pieces of tofu and a few Vietnamese mint leaves on the top third of the paper.
• Roll up the rice paper, tucking in the edges. Place on a platter or tray. Continue with the other sheets of rice paper until all the filling is used.
• Mix all the ingredients for the sauce together.
• Serve rice paper rolls cold or at room temperature, and use sauce to dip rolls into.

• Vegetable mix, spices and flavouring can be varied according to taste.
• For variety, use minced chicken or pork, cooked in Asian spices in the filling.
• If you are preparing food for people on a gluten-free diet, always check the ingredients on all food labels, especially any prepared items like sauces.

It's so cold in Melbourne today I am throwing it back to summer and much warmer times. If you hadn't already noticed most of my recipes are completely fodmap friendly. I follow a low fodmap diet thanks to my tummy troubles. When I was 15 I started having so much trouble with stomach pain, weight loss, nausea and vomiting. Turns out it was thanks to fructose malabsorption (I can't absorb fructose). So I started following a low fodmap diet at the age of 16 and it has worked wonders. I can tolerate a lot of things now in small doses but onions and apples are still completely out of bounds for me! If you ever have any questions about low fodmap diets or fructose malabsorption I am always happy to help, so please ask away!

1 cups sugar⠀
⅓  cup canola oil⠀
⅓ cup cocoa powder⠀
2 eggs⠀
1 tsp vanilla extract⠀
1 ¼ cups all purpose gluten free flour⠀
1 tsp. baking powder⠀
⅛ tsp. salt⠀
¼ cup powdered sugar⠀
⠀
In a large bowl, whisk together sugar and canola oil. Gradually stir in cocoa powder. Add eggs and vanilla, beating until well blended.⠀
In a separate bowl, stir together gluten free flour, baking powder and salt. Gradually add to cocoa mixture, mixing well.⠀
Cover dough and refrigerate for 6 hours or more.⠀
After dough has set, preheat oven to 350°F. Line cookie sheet with parchment paper. Roll dough into 1-inch balls before rolling in powdered sugar, to coat. Place on lined cookie sheet.⠀
Bake 11-13 minutes or until tops are crackled. Removed from oven and transfer to wire rack to cool. ⠀

Что такое ФОДМАП?
FODMAP это углеводы (сахара), которые содержатся в продуктах питания. Не все углеводы являются FODMAP
FODMAP в рационе представлены такими веществами и продуктами:
• фруктоза (фрукты, мед, кукурузный сироп с высоким содержанием фруктозы (глюкозо-фруктозный сироп),
• лактоза (молочные продукты)
• Фруктаны (пшеница, лук, чеснок, и т.д.), (фруктаны, также известный как инулин)
• Галактаны (бобы, чечевица, бобовые, такие как соевые и т.д.)
• Полиолы (подсластители, содержащие сорбит, маннит, ксилит, мальтит, косточковые фрукты.
FODMAP являются осмотически активными веществами (это означает, что они тянут воду в желудочно-кишечный тракт в просвет кишечника). При употреблении их в индивидуально избыточном количестве они не могут быть легко переварены  и полностью абсорбированы  в кишечнике  и в дальнейшем они подвергаться ферментацией бактериями кишечника.
Какие симптомы говорят что у тебя есть не переносимость этих ингредиентов ?
Такие симптомы как избыточное газообразование, вздутие, спастическая боль и дискомфорт в животе  с или без диареи могут наблюдаться у людей с индивидуальной непереносимостью FODMAP.  Диета с низким содержанием продуктов богатых на FODMAP может помочь уменьшить подобнее симптомы.
Кому показана диета с исключением продуктов ФОДМАП?
Диета с низким содержанием FODMAP показана пациентам с синдромом раздраженного кишечника. Также эта диета может помочь пациентам с диареей при Неспецефическом язвенном колите  и Болезни Крона а также пациентам с функциональной диспепсией.
 Что она даст ?
Эта диета приводит к уменьшению в рационе продуктов содержащих пищевые волокна. Так некоторые продукты с высоким содержанием пищевых волокон также богаты и на FODMAP. Пищевые волокна это сложные длиноцепочные углеводы, которые организм не может переварить. Пищевые волокна составляют структурную основу бобов, овощей, фруктов и цельнозерновых круп, а также хлеба и выпечки из муки грубого помола.
Чем можно быстро перекусить, соблюдая FODMAP диету?

This recipe is TOO good and TOO easy not to share. This is a recipe from the nutrition plan to my fitness program, but I will share with you how to alter it to make it either vegetarian and/or eliminate legumes and sugar.

Turkey Chili:
- 2 tsp. extra-virgin organic coconut oil, melted
- 1 medium chopped onion
- 1 medium chopped green bell pepper
- 1 medium chopped red bell pepper
- 2 cloves garlic, finely chopped
- 1 lb. cooked 93% lean ground turkey breast
- 2 cans (15-oz. each) kidney beans, drained, rinsed
- 2 cans (15-oz. each) organic diced tomatoes, no salt added
- 1 cup red wine
- 1 Tbsp. chili powder
- ½ tsp. sea salt (or Himalayan salt)
- 2 tsp. crushed red pepper flakes (optional)
- Chopped fresh cilantro (garnish)
- 8 tsp. crumbled goat cheese
. 
1. Heat oil in large saucepan over medium-high heat.
2. Add onion and bell peppers; cook, stirring occasionally,
for 5 to 6 minutes, or until onion is translucent.
3. Add garlic; cook, stirring frequently, for 1 minute.
4. Add turkey, beans, tomatoes (with liquid), wine, chili powder, salt, and
red pepper (if desired). Bring to a boil. Reduce heat; gently boil, stirring
occasionally, for 20 minutes, or until slightly thickened.
5. Evenly divide between eight serving bowls; top each with cilantro and
1 tsp. cheese.

Okay so here are the alterations I made! I switched out turkey for tempeh (just crumbled the tempeh with my hands to have the feel of ground turkey). Then I replaced kidney beans with chopped butternut squash. I used vegetable broth (can use chicken broth too) instead of wine and skipped the goat cheese.

The cilantro seriously MADE THE DISH. I also topped with sauerkraut for healthy probiotics bacteria for my GUT. ☺️

Seriously SO FREAKING GOOD. Only thing I wish I had done differently was double or triple the recipe! Also I totally didn’t get the bloat I usually get from chili. Felt healthy and light the next morning! ☺️

Jamie Oliver's five-ingredient Sicilian tuna pasta salad looked pretty underwhelming, but tasted surprisingly good! I don't know why I'm that surprised – the man has to be a money-making machine for some reason. It's also completely FODMAP-friendly if you use gluten-free pasta.

How to make it: While you're boiling the (exceedingly well salted, obvi) water for the pasta, fry four heaped teaspoons of capers in a tablespoon of olive oil until they're super crispy. Jamie says to then take the capers out and sprinkle them atop the pasta at the end, but I was too lazy and added the 500g worth of halved cherry tomatoes, a generous sprinkling of oregano and a can of tuna to the pan. I let that sit for a while, after which I added the cooked pasta and garnished with more oregano and oil. Voila – done!

Low Fodmap Arugula Salad 🥗 with Grapes is filled with peppery arugula, succulent red grapes, crunchy walnuts and a balsamic Dijon vinaigrette.⠀

¼ cup chives⠀
¼ cup garlic-infused olive oil⠀
1 tsp. Dijon mustard⠀
2 tsp. balsamic vinegar⠀
1 bag arugula⠀
1 ½ cups red grapes, halved⠀
½ cup walnuts⠀
⠀
Place chives, olive oil, dijon and balsamic vinegar in a blender. Blend until smooth. Season with salt and pepper, to taste.⠀
In a large bowl, toss dressing with arugula, grape halves and walnuts. Serve and enjoy!⠀

As I said yesterday I’ve tried two of the dishes at @foxintheboxrestaurant. This was the lasagne: gluten free, no onion and garlic and completely fodmap safe. And super yummy 😋 I would go back in a heartbeat. But there are so many other fodmap friendly places to try in Melbourne. What’s your favourite?
