#mealprep this week is an Asian stir-fry dish. Also one of my favorite meals! I use a marinade that is low-sodium and gluten-free, and a bag of frozen Asian mixed veggies (peas, carrots, baby corn, and broccoli). I would normally add white rice to this, but I've been feeling super bloated lately so I decided to leave it out this week. Healthy, delicious, AND super easy! Brunch on my birthday weekend I ordered the red velvet pancakes 🥞🎉🎈
They were definitely not even close to being low FODMAP but totally delicious!
I've said this before but I am a big advocate in on special occasions just living life and saying screw it, I'll order the pancakes 😂😂😂😂❤️❤️❤️
To be honest I surprisingly didn't have the severe symptoms I expected from this, I feel I more felt sick because I basically just ate a big bowl of sugar 😜🎂🍧🍫🍦

♦️RECIPE: Zucchini Noodle Mac n' Cheese (with Bacon)♦️
#
Ingredients: ♦️2 large zucchini
♦️1 cup shredded mozzarella
♦️1 cup shredded Parmesan ♦️1/2 cup plain Greek yogurt
♦️4-6 pieces of bacon
♦️Salt and pepper to taste

Directions: 
1) Spiralize your zucchini. I use the inspiralizer from @inspiralized ! Cook your zoodles for about 3 min.
2) In another pan, cook your bacon until crispy.
3) Strain your zoodles and then, using paper towels, work quickly to squeeze out any extra water. They will be hot so be careful! 
4) once you've squeezed out all the moisture, add your mozzarella and Parmesan cheeses, and Greek yogurt. Stir until cheese has melted and is smooth. 
5) Chop your bacon into small pieces and top the zoodles with it. 
6) Enjoy!! #
Tim was suuuuper skeptical of this meal, but he loved it! If you're a big mac n cheese fan, this is a great way to make it a little healthier. The Greek yogurt helps melt the cheese into smooth deliciousness 😋 this wa a test recipe, and I'm so happy with how it came out! I tend to overwork myself, life of an entrepreneur I guess, but we all have our crutch. These days I find myself making more time for reflection and space. Giving myself permission to slow down and have this time to do nothing or hang with my family or enjoy quiet time really changes my perspective and keeps me well.

It takes more that cutting foods out and diet plans to get your IBS under control and stay well so you can take your life back. And this includes time out!

❌when my group of friends were eating on the $65 banquet menu, I assumed that the alternative meals I got (to cater for my food intolerances) were just included in the price of the banquet like other resturants would, but no they make you pay for each individual dish - so be wary!
❌when I questioned them about it they said my food requests were "too difficult"

Also always remember resturants may say they understand terms like "fructose friendly" etc but they probably don't, especially when they try to offer you an apple salad to eat 😂🤦🏼‍♀️🤦🏼‍♀️🤦🏼‍♀️

I've been doing a little better health wise since starting and getting used to #Constella! I've been able to start working out more regularly and have felt more like myself for the first time in months 🙌🏼 -
The specialist prescribed me a months worth to try it out so I ran out completely just a few days ago, and I've already noticed such a difference ☹️ So I'm currently chasing up a repeat prescription of that 🤞🏼

I also have my second specialist appointment next week and I'm starting to feel pretty nervous. I come out of most appointments feeling defeated and I'm worried that we'll get no further again 😑 If anyone has any advice on what to expect from the 2nd appointment with a GI specialist or how to get the most out of it, please let me know 💕

Now this is how a good Nasi Goreng is supposed to look like. And it tasted delicious too. I always order my fried rice without onion and garlic. But still you have to be careful what sauce they use. Because that mostly contains onion and garlic too. And if you're vegetarian be sure to tell them, as here they add chicken to pretty much everything in Asia.

Hello @vitamix it's 3:30 and time for a green smoothie snack!

A month ago and actually months prior to that I had extremely low energy, despite getting enough sleep now that my toddler sleeps through the night 🎉
.
I tried everything to start exercising like Zumba or yoga classes or swimming but I just couldn't find the much time more the energy to actually make the change.
. 
And damn girl! My carb cravings were bad. I wanted doughnuts (yum!) and fries and chicken fingers and pasta ALL.THE.TIME!
.
But something needed to change. Eating for IBS is one thing but low energy sucks your life away and those craving can really get one off track - I know I did not feel good!
.
So... now I eat my oats for breakfast, some filling big lunch with mostly veggie carbs, this smoothie to keep me full until dinner and then a pretty good dinner without all that starchy pasta rice and bread that I used to have. Carbs are important but I was going heavy on the sugary stuff!!!
.
Now this feels good. And my cravings for crap are less and less everyday. If you need a change - you got this dude! Shift. Do it! Start with the little things and commit. I'm here to help if you need me 😘

Yay, tempeh! This was my first meal back in Indonesia. Tempeh & Tofu Goreng with veggies, rice and fried egg. It was perfect. But don't worry I didn't eat it all by myself, that would have been a bit too much I believe.

♦️RECIPE: Scrambled Egg Muffins ♦️

♦️Ingredients ♦️
-10 eggs
-1 cup spinach
-1 large red pepper, diced
-OPTIONAL: onion
-OPTIONAL: shredded cheddar cheese
-OPTIONAL: bacon bits
-salt
-black pepper
♦️Directions♦️
1) Preheat oven to 350° and lightly grease a muffin tin. Set aside. 
2) Crack eggs into a bowl and whisk. Add salt and pepper. Pour eggs evenly into muffin tin, filling each opening only about halfway
3) In a separate pan, sauté spinach and peppers for about 5 min. Add spinach and pepper mixture to each muffin. 
4) NOTE: if you are adding any other veggies or bacon, sauté as well and add with the spinach and peppers. If you are adding cheese, top each muffin with cheese after adding veggies. 
5) Cook for 20-25 min at 350°. #
You can add any veggies you want to these, so you can personalize them in any way you want! These are perfect for on-the-go breakfast. Simply pop in the microwave for 30-45 sec and they're ready to eat! I personally like hearing them in a toaster oven over a microwave, but it's totally up to you!

Today I had a beautiful lunch at Estelle Bistro for my auntie's birthday🎈🍽
I decided that I was going to enjoy myself and not over analyse the fodmaps in the foods I was eating. It was a set menu and I didn't bring up the fact I was doing the FODMAP diet. We ate:
1️⃣Bresaola, mozzarella and tomato (delicious! And FODMAP friendly)🍅
2️⃣Roast beef, mushroom and potato galette (roast beef had some kind of sauce which I highly doubt was FODMAP friendly, and I gave the mushrooms to my boyfriend to eat), also with a side of roast vegetables and salad🥔🥗
3️⃣Sticky date pudding, butterscotch, vanilla icecream (omg amazing. You can tell by the picture 😂 definitely not FODMAP friendly!!! Does anyone know whether sticky date pudding generally contains fructose? It probably does so I'm not looking forward to how I'm going to feel later! 😳🤢😷)🎂
Overall the food was amazing and to be honest I feel they would have catered for me if I explained to them my requirements (a person on the table was gluten free and they catered for it perfectly!), but for once I decided to just go with the flow🏄🏼‍♀️ (and pay for the consequences later)😕
It's my birthday this coming week so I'm expecting this trend to continue 😂🎈 then I'll be back on board 🚃🚃🚃

1/4 teaspoon baking soda

Chuck the lot in a bowl and mash!

It's my third and last week in Malaysia. Beautiful country, nice people and delicious food. My diet has been a bit on the tough side though. Most of the dishes contain onion and garlic and my struggle was to find anything besides fried rice that I could eat. A few things I found so far: tandoori chicken with thosai (Indian style pancake), popadum, keropok (prawn crackers), water spinach, ketupat (rice cooked in palm leave). But the most difficult to come by: Veggies. Any suggestions for Malaysian food or what I could give a try?

I have a few work lunches this week so only need 3 meals for my lunches 🍴so I decided to just do a quick and easy low FODMAP meal using ingredients I had in the house 🏡
🍚🍚🍚🍚 Fried rice! This literally took me about 15 minutes to prepare and always tastes yum! All you need is:
➖Brown rice🍚
➖Bacon🥓
➖Onion infused oil for cooking
➖Capsicum, chopped
➖Spring onion (green part only)🌱
➖Jalapeño, finely diced🌶
➖2 eggs, fried
➖Soy sauce
➡️And throw it all together in a pan to cook!

After 5 days on a lonely island with no internet and only fried rice to eat, I needed something different. This was the breakfast plate at the café opposite our hotel: egg floss (I think it might be deep fried scrambled egg - but who knows), hash browns, chicken sausage (or something that looked like it... I didn't eat it because it tasted quite weird), croissant and salad (which I also didn't eat because of the sauce). But besides that, the coffee was pretty good 😊 well, I usually try and order the safest food option. But that's how it is with travelling. You never know what you're getting. And you just have to go with it and make the best out of every situation. Right?
