🐪 we are already in the middle of the week 🙌🏻🙌🏻 For today’s recipe I made protein bars, super easy, no baking required, it literally takes 5 min to make and half an hour for those to be completely ready!
I know that buying a protein bar may be faster but this recipe is specially good for anyone who follows a ketogenic diet and can’t have most of the protein bars in the market or for people who are vegetarian/ vegan that can’t also find many options out there.

Keto protein bars
Yields: 3 bars
½ cup of almond butter
¼ cup of sugar free syrup
2 ½ scoops of protein powder (I used ISO 100 you may use plant base protein)
For the chocolate:
1 tablespoon of unsalted butter
2 tablespoons of unsweetened cocoa powder
3 tablespoons of coconut cream
2 tablespoons of stevia blend
1. In a bowl mix all the ingredients with a rubber spatula.
2. Once ready presses it into the pan (lined with parchment paper and put it in the freezer while you prepare the chocolate.
3. In a saucepan add all the ingredients for the chocolate, at low heat, stir until smooth and remove from the heat
4. After freezing the bars for about 5-10 minutes, remove from freezer and slice into bars. Drizzle or cover them with melted chocolate and freeze again until set.
5. Store in the fridge for a week or longer in an airtight freezer bag or container.y

1/3 cup of almond Flour
1 oz of Cream Cheese
1 tsp of baking powder
1 Tablespoon of Stevia Blend (Pyure)
2 Egg whites
1 tablespoon of grated lemon zest
Dash of almond milk
Walden Farms Pancake Syrup
Nutiva coconut butter
1. Preheat larger griddle or skillet with oil or spray to medium heat
2. Add all ingredients to a blender and blend on high until mixed
3. Pour ¼ cup Batter onto the griddle or skillet and cook pancakes 1-2 minutes on each side. Flip and repeat for 30 second to 1 minute
4. Serve stacked with Walden Farms Syrup and your favorite Toppings

Today I made these peanut butter protein macaroons 🤤🤤 keto, no sugar, just delicious 🙌🏻👌🏼 .
Peanut butter protein macaroons
3 cups of unsweetened shredded coconut
1 scoop of vanilla protein
1 egg yolk
3 tablespoons of coconut cream
2 tablespoons of pbfit (peanut butter powder)
1 tablespoon of sugar free syrup
⅓ cup of almond flour
2 tablespoons of stevia blend
½ teaspoon vanilla extract
For the chocolate:
1 tablespoon of unsalted butter
¼ coconut cream
2 tablespoons of stevia blend
2 tablespoons of unsweetened cocoa powder
1. Preheat the oven at 325F and line a pan with parchment paper.
2. In a bowl mix all the ingredients with a rubber spatula, you may have to use your hands to ensure that all the ingredients are binded together.
3. Make balls and bake them for 8- 10 min.
4. While the macaroons are baking, make the chocolate in a saucepan, add 1 tablespoon of unsalted butter, ¼ cup of coconut cream, 2 tablespoons of stevia blend and 2 tablespoons of unsweetened cocoa powder, in low heat until the ingredients are homogeneous, take off the heat.
5. When the macaroons are ready removed them from the oven and let them cool at least half an hour before dipping them in chocolate.
6. Put them in the fridge for 10 min for the chocolate until the chocolate is firm.

Pumpkin spice truffles 🙌🏻🙌🏻 If you like pumpkin like I do, you are going to love these!
Lately I been making everything with pumpkin, cupcakes, donuts, bundt cakes, obviously I am one of those excited for pumpkin season 😂😂 Recipe:
1/2 cup of pumpkin purée
1/3 cup of almond butter
2 tablespoons of sugar free syrup
1/4 cup of coconut flour
4 tablespoons of granulated stevia
1 tablespoon of coconut oil
1/2 teaspoon of cinnamon
1/2 teaspoon of pumpkin spice
1/4 teaspoon of vanilla
2 oz of unsweetened 100% dark chocolate
1. Blend the pumpkin purée, almond butter, sugar free syrup, coconut flour, only 2 tablespoons of the stevia, cinnamon and pumpkin spice in the blender, at low speed, until all ingredients are blended nicely.
2. On a pan with parchment paper start making little balls with the mixture. (I sprayed my hand with a little bit of coconut oil, since the mixture is very sticky)
3. When ready freeze the balls for about 30 minutes.
4. In the microwave heat the coconut oil and dark chocolate until it is melted.
5. stir chocolate and coconut oil, add the 2 tablespoon of stevia left.
6. When the balls are ready and firm, dip them in the chocolate and place them back on the parchment paper and bring the back to the freezer for another 30 minutes.
7. When ready you may keep them in fridge.
▫️You may use peanut butter, I used almond since it is keto friendlier.
▫️You may also switch coconut for almond flour, I used coconut since it absorbs more water than almond flour.
▫️ If you are not following a #ketogenicdiet you may replace the 100% dark chocolate for 60% or 70% dark chocolate and add less stevia if you do that, since it will be already sweet
My favorite kind of latte, Pumpkin spice ✨ specially if it is #bulletproof ☕️ I always switch from matcha and coffee, because I love the taste of coffee way to much.

Ingredients: 6 oz of coffee
¼ cup of unsweetened almond milk or coconut cream
½ teaspoon of vanilla extract
½ teaspoon of pumpkin spice spice
½ teaspoon of stevia or a packet of @pyure

1. Heat the milk in the microwave until hot

If you are on a Keto diet or just like to do #bulletproof coffee, add a tablespoon of grass-fed unsalted butter or ghee and 1 tablespoon of brain octane oil. If it is the first time trying your coffee that way I recommend adding less brain octane oil and work your way up to 1-2.
I do my coffee with coconut oil. Recently I was able to attend a conference where one of the topics was the benefits of coconut oil and I made the switch. . 💕✨happy Tuesday 💕✨

I have been bloated a lot the past few days and I was craving something that would be easy on my stomach and comforting (since I miss my mom 🙄) so I cooked a zucchini creamy soup hoping that it would taste at least half as good as my mom’s and I think I made it.

These donuts are amazing for the sugar cravings even tho they are free of sugar and low carb 👌🏼 .
Donuts glazed with coconut butter
Yield: 6 servings
Preparation time: 10 minutes
Total Time: 30 minutes
2 egg whites
1 cup of blanched almond flour
1 tablespoons of melted coconut oil
1 oz of softened cream cheese
½ cup of coconut milk
2 tablespoons of stevia for baking
1 teaspoon of baking powder
½ teaspoon of baking soda
¼ teaspoon of vanilla
2 tablespoon of coconut butter
Pinch of salt
1. Pre-heat the oven to 375F and grease the donut pan.
2. In a bowl, add all dry ingredients (almond flour, stevia, baking powder, baking soda, baking powder, baking soda, and salt). Mix well with a spoon. Set aside
3. In a separate bowl add wet ingredients (Eggs, egg whites, coconut oil, cream cheese, vanilla extract, and coconut milk)
4. Using an electric mixer, mix well until foamy.
5. In the same bowl of wet ingredients, add dry ingredients slowly while mixing with the electric mixer. Gradually add all the mix until it’s all dissolved. Continue mixing until a homogenous batter is obtained.
6. In pre-greased 6-Donut pan, split the batter evenly in six. Make sure you allow at least ½ inch in each donut mold as the donuts will raise.
7. Bake for 12- 15 minutes.
9. Remove donuts from the oven. Check for readiness by piercing a toothpick in one of the donuts. If it comes out clear, the donuts are ready. If there is batter in the tooth pick insert donuts again for another 3-4 minutes, and repeat the process until they are ready.
10. Once ready top donuts with coconut butter.

Total Time: 30 minutes
1 cup of crushed pork rinds (Just put in the blender for about one min)
2 tablespoons of oat fiber
1 cup of water
1 egg white
Turn on oven in broil at 370F
Greased and heat a griddle to medium temperature.
Pour all the ingredients in the blender until you have an homogenous mixture.
Pour the batter into the griddle with a ⅓ measuring cup and spread carefully until the circle is thin enough
Flip them when they are dry. Once they are cooked, let them dry for 5 min on a plate.
Put the tacos in a taco shell mold or you can do the shell shape using a cooling rack hanging them upside down.
Bring them to the oven, let them toast for about 10 min, more or less depending on your taste.
Serve them with ground turkey or mahi mahi for the best fish tacos.

🥄1 ¼ of almond flour
🥄2 eggs 🥄1 tablespoon of melted coconut oil 🥄1 teaspoon of baking powder
🥄2 tablespoons of stevia for baking 🥄½ teaspoon of baking soda
🥄1 teaspoon of pumpkin extract
🥄1 teaspoon of vanilla extract
🥄¼ cup of unsweetened almond milk .
🥄6 oz of cream cheese 🥄1 tablespoon of melted butter
🥄¼ cup of powdered stevia 🥄3 teaspoons of pumpkin extract
🥄1 teaspoon of vanilla
🥄1 teaspoon of cinnamon
🥄2 teaspoon of pumpkin spice
🥄Yellow natural food coloring
Preheat the oven at 375F and grease the cupcake pan.
In a bowl whisk the dry ingredients, set aside.
In a separate bowl whisk the wet ingredients with an electric mixer for about two minutes.
Add the dry ingredients to the mix, continue whisking for another 2- 3 minutes.
With a spoon pour the batter evenly among the cups.
Bake for 15- 18 minutes, stick a long wood bamboo to the center of one cupcake to make sure cupcakes are done (they are done if the stick comes out clean)
Let the cupcakes cool off.
While cupcakes are cooling off in a clean bowl add the softened cream cheese and butter and whisk with the electric mixer for about two minutes.
Add the stevia, pumpkin extract, vanilla extract, cinnamon and pumpkin spice and continue whisking until until you have an homogenous mixture.
Once done spread evenly onto each cupcake or add it using a pastry bag.

Yield: 4 servings of 4
Preparation time: 2 minutes
Total Time: 15 minutes .
1 ¼ cup of almond flour
3 whole eggs
3 egg whites
⅓ cup of almond milk
2 tablespoons of stevia blend for baking (this can be adjusted and modified depending on preference)
½ teaspoon of pumpkin extract
1 teaspoon of pumpkin spice powder
Pinch of salt .
For the frosting: .
3 oz of softened cream cheese
1 teaspoon of butter or ghee
¼ of cup of coconut cream
1 tablespoon of stevia blend
1 teaspoon of pumpkin spice
½ teaspoon of cinnamon
In a bowl whisk all the ingredients with an electric mixer or blend them in the blender. With a ¼ measuring cup add the batter to a previously heated and greased griddle.
Leave pancakes for about 2 min each side and flip.
Wish the softened cream cheese with the butter with an electric mixer.
Add the stevia and the pumpkin spice, continue whisking.
Add coconut cream slowly and whisk until smooth.
When done add the frosting in between each pancake and on top.
