💛Raw Vegan Mango Carob Swirl Cheesecake (also gluten-free, soy-free and refined sugar free)!
I've made this delish cake for @addictedtodates' #nobakecakeparty giveaway! When Christina's post about this turned up in my feed, I got soooo excited! The giveaway is full of soooo many awesome products, it seemed almost too good to be true!!
So anyway, here's the recipe:
💛MANGO CAROB SWIRL CHEESECAKE💛
●2 dates, soaked overnight
●1/3 cup almonds
●1/8 cup sunflower seeds
●1/8 cup flaxseeds
●1/2 tbsp maple syrup
●Pinch of salt
●Splash of vanilla extract
●1/3 cup cashews, soaked overnight
●Splash vanilla extract
●3 tbsp coconut cream, plus 1 tbsp extra (scooped from the top of a can of coconut milk chilled overnight)
●2 tbsp maple syrup
●3 tbsp coconut oil, softened
●1/3 cups frozen mango chunks
●1/2 tsp carob powder
1. Process all ingredients a mini food processor or high-speed blender until a crumb is formed.
2. Press into the base of a lightly greased 4" springform cake tin. Freeze while you make the filling.
1. Process cashews, vanilla extract, 3 tbsp of the coconut cream, maple syrup and coconut oil in a mini food processor or high-speed blender until smooth.
2. Take out 1/4 cup of the mixture and put it in a small bowl. Take out another 1/4 cup and out it in another small bowl.
3. Blend mango with the mixture in the blender.
4. To another part, stir in the carob powder.
5. Dollop alternating spoonfuls of the three different mixtures over the base and swirl around with a skewer.
6. Freeze for at least 3 hours, then remove from freezer about an hour before serving.

Potatoes (I usually make 3-4lbs at a time)
2 tbsp butter
1 tbsp toum (garlic sauce) or 3-4 cloves chopped garlic *
Clean potatoes, I like to keep the skin on, boil whole and let them soften but not to the super soft point. Keep a bit firm so you can cut them and keep them in the fridge for other meals.
Drain. You can store potatoes whole in a container and use whenever you're ready. Easy way to prep for weeknight meals or breakfasts.
In a large pan (cast iron is good here), medium heat, add 2 tbsp of butter, yes butter is better here! Let melt and add in 1-ish tablespoon of toum (you be the judge). If you don't have toum, read on for adjustment. Cut your par-boiled potatoes into large chunks and add to pan. Let crisp up, rotating and flipping to cook all edges. As potatoes finish, season with salt, pepper and chopped rosemary. **If you don't have toum, you can add chopped garlic during the time you add your potatoes. You don't want the garlic in the pan too long as it will burn easily. It will be a slightly different garlic flavor than the toum as the toum is absorbed into the butter.

This is why I prefer to be a sense of support and a sense of positive vibes for people. U never know. The simplest things could easily save someone from a bad decision. If someone responds to what your saying in a bad way, and you were just stating someting in general, that's how you know fuh real that they are guilty in something. But don't bash them for it. You know living in a privileged place like Singapore, it always escapes us sometimes to be grateful of the small things. It's not that you are a bad person if you don't, it's just being human when you forget. But it does put things into perspectives when you feel you're having a tough time and what not. And I'm not tryin to sound insensitive too no. I appreciate that hardships are real. But it could always be worse.
When I was sick I used to blame life as to why me. But others who were in my situation have had it far worse. Permanent damage on their bodies, lost of limbs, even death. For me, I put on my shirt and no one would be able to tell that I had a so called "impairment" on my body. For that I'm grateful for who I am now, and the ones who love and care for me. Not tryin to be preachy, just want to share my thots before they get drowned by umpteen other things when work begins.
