It's already thursday I can't believe it! This week passed by so fast. It's quite cold outside (at least for me where I am not used to Minnesota weather yet 😀) so I made a big pan of hot supergreens pasta @ronzonipasta with spinach, shrimp and roasted walnuts 🌱

A simple skillet dinner for this cold weather of make your own chicken fajita. Used my own taco seasoning, sautéed some chicken, pepper, and onions. Have some warm tortillas on the side with hot sauce, salsa, corn, and cheese! Just a nice cozy dinner 👩🏻🍳😋🐔🌶🌮🧀🌽

Beyba seems a little under the weather, maybe? She didn’t eat much of either of the two (🙄) breakfasts I prepared for her, and she has dark circly eyes and a general demeanor of floppiness. So I made us this quick soup to share on the couch while we watched a Sesame Street Christmas special.
Two cups (ish) of our beef-lentil salad from earlier in the week, a can of fire roasted tomatoes, a cup of stock that I keep frozen and pre-portioned in the freezer, and a handful of ditalini pasta. Threw it all in a pot - frozen stock, dry pasta, and all - and left it to simmer; the pasta was tender in about 12 minutes. Pasta e fagiole in no time. (Piles of fresh parm not required but highly recommended.)
