For those of you who didn't see my post on Facebook, here's the dish I'm serving the taster tomorrow at the MasterChef audition. A cumin and fennel short bread, with avocado mousse and two beautiful Argentinian shrimp.

Bought this in Ottawa last weekend at Kowloon Market in Chinatown because I had never seen Schweppes make a cream soda domestically. Everytime I go shopping in Chinatown or a Chinese/Korean/Asian Grocer I'm almost always surprised by items they have and I used to have to visit up to 3 or 4 different Asian Grocery Stores to fulfill our orders for the restaurant and not use Sysco if we could avoid it. Did up a nice pair of thick milled,large one piece maple serving blocks. They would be suitable for a large cheese/charcuterie tray for a group or even an entree served family style. Finished in a food safe water based poly. Hand milled, cured in the barn for over a year, sanded then finished myself. The wood came from my neighbor's multi generational farm across the road when they were sustainably cleaning up their tree lines. Another part of the farm is making an appearance at the table and not just as the local food but the locally made and sourced farm to table service wear. $65/Each or $110/ Pair. Each block measures 16x13.5x2 inches. Can deliver to Ottawa for a little extra. Treating myself to a mind bendingly good Jerk Beef Sammy on in house made Foccacia from the one and only @fieldhouseperth. I'm also getting hooked on their Americanos/ their coffee in general. This place opened up with a strong baking/pastry game and its only gotten better since the much better.. Juliana, Andrew and their team should be proud of what they've created. Cooking Porchetta Step 2: Mark all sides until there is a nice crust developing. Don't be afraid of a little (or alot) of smokey char. At this point it will smell so good that you're halfway convinced that it's an un-holy act of the devil to tempt you into eating it before it's ready. Wasn't feeling well yesterday and my parents were both working hard at different antique shows so I raided Mom's garden for her heirloom yellow pear tomatoes, different peppers (chocolate, banana, and green) as well as onions, garlic and herbs. I assembled it all together into a yellow tomato sauce based chicken cacciatore. Since my stomach was fucked I only had the sauce reduced and mounted with a nob of butter. Cold smoked then Beer battered Cod. The smoke is just the right amount and not too aggressive and the batter is light and airy without greasiness. Some good fondant and buttercream work my Sister-in-Law did on the farm themed birthday cake for one of the family elders at the family reunion earlier this week. The grass and water are pressed out fondant and the fence and grass around it are buttercream and rolled up fondant for the fence posts. She did the baking/icing and stuff in the kitchen/dining room area of a camper. Mad respect for what she pulled off in such a tight space. This picture is when it's 75% complete since I had to leave the reunion early and head back to Ottawa.
