I dont remember the last time i had banana bread. I make just about everything from scratch. Especially when it comes to baking, because I'm allergic to 5 of the top 8 most common foods people are allergic to.
A new store opened up here and I came across @kingarthurflour 's banana bread mix. I'm intrigued. I check out the ingredients to make sure I can have it and then I check the list of things I will need to add to the boxed mix. And I decide some @enjoylifefoods chocolate chips would be the perfect addition.
So here are my gluten free, vegan (I used flax eggs), soy free, non gmo banana chocolate chip muffins, and I've had three just myself tonight. I substituted coconut oil for the butter and I never expected something so moist to come out of my oven!
This past week has been rough. My food allergies really got the best of me + left my body feeling destroyed for a few days // I did all the Fall FitPlan workouts, but NOT in order + some not fully. I didn’t do the challenges because any little time I had I slept. I didn’t get to the yoga flows because that’s not what my body wanted. // BUT, I’m 100% okay with all that. Life happens. Our bodies give us so many signs when they start to get out of whack. We just have to listen + fully appreciate the cycle of it all. // next time you’re body is telling you something LISTEN. Whether it causes you to miss an event, workout, or just normal activities that’s OKAY. You’ll be much happier + healthier if you do.

Milo man and I are participating in the #tealpumpkinproject this year in order to give kids with severe food allergies a fun Halloween too! The premise is simple... put out a teal pumpkin (or shade of teal like ours) to let families know that your house has non food allergies for kids that can't enjoy the treats other kids get! You know the people who you meet and quickly feel like you've known them forever and want to invite them to every family holiday? Sweet Mrs. June became that person for me this weekend. ⠀
Y'all. Her experience with Plexus has been nothing short of AMAZING!! Mrs. June COULD NOT WALK back in January. She is now walking 4 miles EVERY SINGLE DAY!!!!!!! What in the world?!?!?! It all started with taking Ease and Nerve Plexus products. This beautiful lady has also lost 89 POUNDS since January!! 7 years ago this is what allergy testing looked like for Thai. Diagnosed with 7 food allergies at 9 months. We have always turned his skin prick testing into a fun day out as we travel 2 hours to see his specialist. Lately I’ve been having soups for dinner but tonight I wanted something I could bite into 😬 I just made some carrot and parsnip fries and fried up some organic chicken sausage on the stove! 🤤🥕🐔 For the carrot/parsnip fries, I just chop them into thin slices, mix them in a bowl with olive oil and sea salt, and then bake them in the oven until crispy (400 degrees)! 😍✨
Hey everyone! I apologize for being kind of MIA the past 2 weeks or so. I've been super busy with school work and just life in general. I'm super proud of myself though because usually when I get swamped with work I turn to unhealthy foods and let stressful thoughts take over but not this time! I maintained a mostly healthy diet, took some time to myself, and even managed to practice portion control when I went out to dinner this weekend! I've also started getting back into running and meditating so I can't wait to share my experiences with you all in the coming days/ weeks! For now, I hope you enjoy this picture of some chicken marsala pasta I made with my boyfriend. It was soooooo good 😋

Well first I wanna apologize to my neighbor for breaking down when she came to the door.
Cause see... I had this whole dinner going, was pretty excited about it, squeezed the tomato paste in, and realized immediately I had just ruined dinner....for me.
Apparently I ordered the wrong flavor of the tomato paste online. This one is not Jessica-safe. 3 lbs of grass fed steak later and the family will be living large while I’ll be eating the last egg casserole square I had in the freezer instead of the fajita stew I made for dinner.
Gah. Sorry to be such a downer today but it hasn’t been an easy one.

Eating some fish today. I am transitioning to 💯 plant based, seafood is the last animal product in my list. it is a process that makes me feel incredible from inside out.
If you want to have a safe and smooth transition to plant based I will suggest you to start slow and consciously.
