Sweet potato rosti is a standout favourite on our menu. Pan fried in coconut oil and finished off in the oven so you get a nice crispy outside and soft inside! Paired with our housemade kasoundi, kale and garlic mushrooms this is an incredible flavour combination. And of course it comes with a pair of eggs - it is breakfast after all 🌼
Do your crepes come with a side of fresh greens and fish sauce? No? But they should! I think I found my new fav spot for Bánh xèo - Vietnamese Savory Crepes. The name is literally translated to "sizzling cake", named for the loud sizzling sound it makes when the rice batter is poured into the hot skillet or pan. Made of rice flour, water, turmeric powder, stuffed with slices of pork belly, shrimp, diced green onion, and bean sprouts. The Crepe is super crispy and the fillings are perfectly cooked. The crepe is normally cut up, rolled into lettuce leaf, adding some pickled daikon & carrots, fresh basil & mint. Dipped into house made Nuoc Cham fish sauce - the savory, crispy, fresh flavors all come to a harmonious and delicious bite. There’s so many great homemade dishes at Dong Ky. Tucked inside a strip mall just north of Lawrence on Broadway and next to an asian supermarket. Don’t be fooled by the humble space, there’s a lot of good Vietnamese and Chinese dishes coming out of their kitchen. They favor using photos of their food as decorations, so there’s lots of visual help if you’re not familiar with this style of cuisine. Prices are very reasonable and service is efficient. Meet my challenger and now coach Ashley😉 “About a year ago, I decided to make a change...a BIG change. I made the decision to start working out regularly, something I have never done since college -when I would go to the free aerobics class and then quickly follow it up with a personal pan pizza and Dr. Pepper. 😬
I was working out 3 hours a week, pushing myself outside of my comfort zone. While I was seeing that changes were happening, like going from a speed walker to almost a full on runner on the treadmill, to being able to lift heavier weights, I still wasn’t happy with the way I looked on the outside. Still wasn’t comfortable in my own skin and yes, my stomach issues had improved, but they were not gone completely.
Then, in July, I was introduced to Clean Eating and joined my first 7 day challenge group. You guys, this was a game changer...a LIFE changer! I almost instantly began to see that I was leaning out and best of all...no more uncomfortable bloating and cramping!!! That challenge group then lead into a fitness and nutrition 30 day group that transformed the way I worked out and thought about fitness and what I was really capable of. I went from thinking I had to be in a gym or have a trainer in my face to actually make me do it to working out at home, by myself with my favorite streaming program with my favorite trainers. No need to schedule extra time to get to and from the gym, MUCH cheaper, and an amazing accountability group and virtual coach by my side every step of the way.
To keep going with fitness and nutrition ACCOUNTABILITY is key! How many times have you started something and not finished? It’s much harder to throw in the towel when you know you have a team of people behind you, watching you, cheering you on, encouraging you every step of the way. They are there through the successes and the failures. They use your drive to keep going to keep themselves going. Awesome concept, right?!?” You see, even the working out plays a huge part of your health, nutrition is the key to creating a healthy lifestyle.

So I wanted this to be a super pretty picture of the layers but it fell apart as l scooped it out 😆 so if you cannot tell, this is Sheppard’s pie, or as my dad calls it, gardeners pie (vegan, of course!) so for us this was a staple growing up. Except the regular version with meat and dairy/butter whipped potatoes. It’s one of those meals that l had a really hard time finding a good vegan version. It was always just so so. Didn’t really have a lot of flavor. For the most part l have had no problems finding vegan alternatives to my family favorites and Classic meals most people eat. Even baking l have done pretty well making vegan/gluten free yummies. But there are a handful of things that just aren’t the same. This was one of them.....until now! This version is even better than what l grew up eating. There’s a twist to it. It’s a BBQ chickpea and lentil Sheppard’s pie. This is a huge deal for me because I’ve always hated BBQ. Ask anyone who knows me. I’ve never enjoyed anything about it. Yuck, just yuck. But this, mind blown 🤯 and even more amazing is it’s so simple!
Make your mashed potatoes ahead of time and let them cook a bit. While the potatoes are cooling prepare your veggies (we did corn, carrots, onion.....l think that’s it!) then you add the chickpeas and lentils and cook until thoroughly heated. Then you toss them with your favorite BBQ sauce. Place this in the bottom of your casserole dish. Then too it with your mashed potatoes and throw in the oven at about 400 for around 20 minutes until it gets bubbly and the top starts to brown. Viola, after that it’s ready! Seriously, give it a try, you won’t regret it. Yum 😋

@ Food House - New year, same love for these thick noodles. And now I think I've found a new favourite: Food House in Chinatown might just have edged ahead of my regular - Changs. The soup was more flavourful and I prefer the chunks of lamb opposed to the slices at Changs. Plus it's easier to get to for a lazy person like me 😂
Oily fish like salmon is a great source of Omega-3 fatty acids, which help to keep our heart lovely and healthy. It’s really important we aim for two portions of fish a week, one of which oily like salmon, mackerel or sardines. It’s also a great portion of protein so team it up with veggies and a portion of carbs.

My first burger of 2018 had to be special and I think I’ve done myself proud here! 😍
I’ve mixed turkey mince with chilli, lemongrass, lime, coriander, ginger, finely diced spring onions, one medium free range egg and 50g of panko breadcrumbs. Formed into burgers and let sit in the fridge to firm up 🙌🏽
Cook in a griddle pan on a medium high heat for 6 minutes on each side and boom! Winner! 🏆
Now we all know a burger is just a burger without toppings so I’ve loaded my brioche bun with a mango, chilli and coriander slaw, grilled halloumi, @cherrytree_dorset spicy tomato and onion chutney and some watercress 🍔
Honestly how have I not been approached about this book deal yet? 🤷🏼♂️
