We were away over the weekend so I planned on doing the groceries this morning after I took Kobi to the park but in a matter of an hour my happy boy was so upset & by the time I got to the shopping centre it turned into crying hysterically non stop!! He was complaining of a sore ear. We ditched the groceries & went to the medical centre..Turns out he has an acute middle ear infection 😢 so we went straight home to bed.
It's amazing how you can feel you have no food in the house but still end up with a semi decent meal.
This is just a tin of Tuna, a boiled egg, salad scraps from the fridge, Hummus that I made with last nights dinner & a sprinkle of Black sesame seeds.
Grocery haul.. we shall try again tomorrow for now this Mumma needs to get her boy better 🤒💔
My new favourite post work out meal 🥘
French toast using one egg and gluten free bread, topped with poached eggs, drizzle of lactose free natural yoghurt and Nandos hot sauce (this is optional) then with a side of smoked salmon and half an avocado
Soak the bread in the egg mixture then cook on a fry pan with a small amount of organic butter till brown on both sides then add the poached eggs and rest of the ingredients:

Sunday meal prep in the books! Ready for a productive week. I made a 10lb ham today. I have found that finding whatever large piece of meat on sale is what drives meal prep for that week. Ham paired with mixed veggies (broccoli, asparagus, onions, carrots and mushrooms), and white rice for mid day meals. Breakfasts are regularly protein shakes and plain greek yogurt and fruit. Mid morning meal of deviled eggs and smoked salmon. I "shopped" my freezer today before I headed to the grocery. We have some things I'm aiming to use up in the next few weeks to clear out some freezer space & make sure nothing goes to waste.
❗️All the meat in today's prep came from my freezer clean out! I aim to use everything within 6 months of freezing, and use the rule that things come out with as much shelf life as they went in. .

1️⃣ Burrito bowls w/ white rice, shredded pork, corn, black beans & sautéed bell peppers 👉🏼 topped with salsa & guac. 🥑
2️⃣ Roasted veggies & potatoes w/ chicken.
3️⃣ Roasted veggies & potatoes w/ mini meatloaf (recipe from @budgetbytes)
4️⃣ Roasted veggies & white rice w/ mini meatloaf.
5️⃣ Greek yogurt drizzled w/ honey. 🍯
6️⃣ Another batch of pumpkin spice granola. 🎃
7️⃣ Peaches & apples for snacks! 🍑🍎
🥕I roasted brussel sprouts, broccoli & carrots and alternated which meals they were included with 👉🏼this helps keep each meal slightly different, while keeping prep easy 'cause I tossed them all in the oven to roast!
