Today am sharing my mother's trick to get rid of this and make a super tasty simple vendakka mezhukkuperatti. Random bowl of leftovers for lunch today 👌🏻 Basically my go to lunch is just an egg thrown together with any prepped or leftover veggies I have in the fridge 😋 Super easy and not a lot of mess 👏🏻 The egg and leftover turkey burger were a bomb combo 💯 I know it's a thing to put egg on burgers so I don't know why I never thought to do it on a turkey burger 🤔 Now I have a feeling it's going to become a go to of mine 😏 Also I love adding these @ghsnacks gluten free pretzels into my bowls! It gives them the best little crunch 🙌🏻 Seriously these pretzels are one of my favorite snacks right now, they are addicting 😩 I'm off to study for the GRE and hopefully watch my recorded Bachelorette episode later 🤗 We survived Monday everyone 🎉 ---------------------------------------------- #whatsinmybowl 1 egg fried in coconut oil + 1 leftover turkey burger + mini cucumber + cherry tomatoes (they were SO ripe!) + grilled asparagus + grilled squash + @ghsnacks gluten free pretzels (aka the most addicting snack) ❤️
This veggie burger was a delight. I have problems finding a good veggie patty....BUT Had an organic, GF bean patty by @hilaryseatwell. So delish! Clean ingredients and made with real food no extra anything 👌🏽👌🏽 super tasty. I pan fried in coconut oil for an extra crisp. I'm obsessed. Used a GF bun and spread some @chosenfoods Avo mayo on it. No dairy.....love love!
Sometimes Mondays call for a big plate of #pasta . See below for #recipe ! We added meatballs from NuNus in Youngsville and instead of spaghetti noodles we used fettuccini 😋 #thevintagefork
Spaghetti Red Sauce (not meat sauce)
1 yellow onion
2 cloves garlic
1 Small can petite dice tomatoes
1 large can crushed tomatoes
1 large can tomatoe sauce
1 cup wine
Half a container of portobello mushrooms
20-25 halved grape tomatoes
Good bit of Italian seasoning
Few pinches of red pepper flakes
Few pinches of sugar
4-5 pinches of dried basil
Brown meatballs with a little olive oil in a sauce pan.
Once brown place meatballs on a cookie sheet and throw in the oven at 350F
In the Sauce pain with meatball drippings put in chopped yellow onion and chopped garlic to brown. Once translucent add in small can of diced tomatoes, cherry tomatoes, and mushrooms. Once boiling add in the red wine and let the alcohol cook out and thicken with the tomatoes.
When the sauce is thickened add in the crushed tomatoes and tomato sauce and season with the crushed red pepper, sugar, dried basil, and Italian seasoning.
Bring to a boil and let simmer with finished meatballs in the sauce. #enjoy
After a long day of camp, I could certainly use some cheer in drink form. Matcha is one of my go-to comfort drinks. This maca matcha is loaded with green matcha goodness. The macarons give this drink a little touch of extra sweetness as well. Mmmm. Tasty.

KOREAN TURKEY AND QUINOA LETTUCE WRAPS
The Korean Beef Bowl recipe from @smilesandwich was my inspiration but I subbed in 85% lean ground turkey and half the brown sugar + made them into lettuce wraps! Served with an Asian cucumber carrot salad; spiralized carrot, cucumber, rice vinegar, agave, sesame oil, black & white sesame seeds, red pepper flakes, salt & cilantro. Can use a pre cooked rotisserie chicken to save time. With fresh Ontario peaches, crunchy cashews and the most yummy orange and sour cream based dressing this was a winner! Tonight's dinner was the opposite of a #meatlessmonday . I went super hard for a Monday and we had baby lamb chops. 🤷🏽♀️So I'm sending myself on a trip to a few days ago. Last week when it was wayyyyyy too hot to cook I did the most sensible thing - pull out what's left in the fridge and pantry and chow down.
