Finally! I hate to get totally excited about chicken salad, but the truth is, this is pretty fantastic. I developed it as a Whole30 recipe, but it's become a favorite for everyone. I start with my Everyday Roast Chicken breast which is so juicy, then pull it into bits and make a divine mixture of pistachio pesto, homemade mayo, my Marinated Onions and the marinade oil. It's keeper, whether you're eating Paleo/Whole30 or you simply like delicious food. I've shared it in my stories for months but finally I am revealing the recipe on the blog…so dig in!

Perfect organic vegan, GF salad option. Roasted butternut squash s, roasted peppers 🌶 , mushrooms 🍄, cucumbers 🥒 , carrots 🥕 , hemp seeds, sesame seeds, and maple cashews over a bed of mixed greens and red kale all on top of some organic brown rice 🍛. Just throw in a big jowl toss with some Lemon vinaigrette and you're good to go 👍👌

When a client generously gave me some of the garlic she recently bought, I knew juuuuuust what to do with it. I stuffed the cloves between the leaves of an artichoke, drizzled with olive oil, and roasted it on our grill...because our oven is still broken after the darn hurricane...

Things are pretty busy at the moment and I haven't been home much at all and eating out more than I like. Don't get me wrong, I love to eat at certain restaurants and there are ethnic foods that I cannot prepare at home, but it gives me such satisfaction and incredible happiness to eat my own food!!! 😋
I also feel better when I eat my own food. I can control the oils and the quality of the food I prepare. It's a win win.

I woke up early and started roasting veggies 🔥
Unlike many other meal preps that include a bunch of lunches and dinners on repeat, I make a bunch of dishes and sides that can be combined in a variety of ways. I do this because I get bored and don't want to eat the same meal every day for five days and also because I'm feeding my whole family and like to get creative and repurpose ingredients to make new meals.
