Ombré Pancakes 🥞 ⠀⠀
Well, not so ombré. I played with colors in the kitchen. I used both raspberry and blueberry purée and a little bit of beetroot powder for natural dyes. ⠀⠀

Some days just seem to fly by, and before I know it it's already 6pm! As was the case yesterday. I had thought about dinner in a round-a-bout way (of course) because as one meal finishes I then think about the next!! But, I needed something quick, something that could be created with what I had in the fridge and pantry and something that could take care of itself as we got the little man organised with showering and feeding. The end result was this. trofie with zucchini, tomatoes (from our garden) & capers. We ate this on the couch whilst watching the Australian Open (I love this time of the year) I'm going to share this recipe with you, well, try to anyway. As it was a bit of a throw together meal but one that can be put together in no time at all and sometimes that's exactly what we need!
250g trofie pasta
1 red onion, sliced
2 sticks celery, sliced
1 red pepper, sliced
1 zucchini, quartered lengthways then sliced
2 large tomatoes, chopped rustically
1 teaspoon baby capers
A splash of red wine vinegar
A splash of balsamic
A good grinding of pepper
A pinch of salt
Lots of shavings of Parmesan
A good amount of fresh basil
Get your salted water on to the boil for the pasta.
Heat a splash of olive oil In a large pan, add onions and celery and cook for about 5-10 minutes over medium heat until softened, add the pepper and the zucchini, cook for another 5 minutes, then add the tomatoes and the capers and the vinegars, reduce the heat a little and continue to cook for another 15 minutes, adding in some of the pasta water if it's drying out too much. Once the pasta is cooked add this straight from the pot to the pan adding a bit more water to loosen everything up. Mix it all together, season. Top with Parmesan and basil leaves and a good drizzle of extra virgin olive oil. This makes enough for two hungry people plus some leftovers for lunch the next day. X
