▫️What's in it: baby kale, spiralized zucchini, spiralized beets, oven roasted delicata squash (lightly tossed in @chosenfoods avo oil and pink sea salt and baked on 400 for 25 minutes), tricolor quinoa, and roasted organic chicken (shredded). ▫️What's on it: homemade honey tahini dressing (YES) ✔️1 tbsp. @bradsorganic tahini, 1 tbsp. @chosenfoods avo oil, 1 tsp. raw honey, and sea salt to taste. DRIZZLE THAT GOODNESS 🙌🏻Sprinkle with fresh parsley and black pepper as desired. ENJOY 😚

Simple ingredients but yet a kick ass Salad!
Not messing about too much with simple ingredients is a great way to get your nutrients from your Vegetables. Potatoes get a bit of stick but they're actually a source of Vitamin C, which is just underneath the skin, so by using a peeler and not a knife to take the skin of is a great way to retain some of that Vitamin C, another way is to use New Potatoes and keep the skin on.
🐟🥑 AHÍ POKE 🥑🐟 Lately, I've gotten into incorporating yellowfin tuna into my diet a bit more. When you plan on eating it raw, it's essential to select a cut that's sushi-grade, and as fresh as possible. Be sure to also pick a cut of the fish that has very few white lines, as those are made of connective tissue and will make your ahí a bit chewy. Other than that, follow basic protocol to prevent getting sick and enjoy this awesome raw paleo poke bowl!
Ingredients: - 1 cup cauliflower rice
- 1/4 medium carrot, sliced thinly
- 1 small cucumber, sliced thinly
- 1/3 red bell pepper, cut into small slices
- 1/4 avocado, sliced
- 1 tangerine
- ahí tuna - sesame seeds
Begin by quickly cooking your cauliflower rice over a high heat, for about 4 minutes before placing it in a deep bowl. If your cauliflower rice is already cooked, go ahead and plate it. Lightly season your ahí, as in this situation less really is more. I gave mine a light toss in a dash of coconut aminos and some fresh lime juice. Take all the ingredients and arrange them on top of your cauliflower rice however you would like. Garnish with sesame seeds and enjoy!

I lovelove helping out in vegan outreach activities. Leafleting is an effective way to plant new seeds of change and you don't need a big investment of time. At the right time and place, just one person can hand out hundreds of brochures in less than an hour. You will inevitably interest many new people in making their way toward veganism, be an extra reminder on a day where they might not have thought about animal cruelty.
