My first food post will be about today's dinner! Super healthy and delicious! But I couldn't resist adding that feta because I believe a meal without feta is a meal wasted! Today I got a great workout in at the gym: leg day followed by a sprint/incline treadmill run, stair stepper and core work! Let's just say it was a tough one! Anyways, dinner includes grilled pollock with tomatoes and spinach all seasoned with salt, pepper, lemon juice, and lemon pepper seasoning, also roasted carrots, sautéed snap peas, and a large grilled portobello mushroom cap that I stuffed with fresh avocado and feta of course! Super delicious and full of veggies, healthy fats, and lean protein. Turkey stuffed bell pepper with a colorful salad for dinner tonight 🥗👅👌🏽
Caramelized my onion with avocado oil, garlic, salt and pepper, added mushrooms and cooked that down with beef stock. Removed from pan and cooked my turkey in some of the leftover broth. Once almost cooked completely I added the onion and mushroom into the pan and mixed well. Stuffed my pepper and wrapped in foil and put into the 350 degree oven for 10 mins, unwrapped and cooked for another 10. Added some feta and cooked for 5 more mins. Topped w tapatio and... boom done. So so so tasy 😍

✔️3 tbs peanut butter
✔️1/4 cup sugar free maple syrup
✔️1/4 cup unsweetened almond milk

After making some chicken wings to prep for my Super Bowl blog posts [get ready!! 😉], I decided to make some homemade broth with the bones. Truth is, I'm allergic to MSG, so I can't really do store bought anyways. 🤷♀️
Some time ago, a nutritionist looked at my food diary and had a funny look on her face. How could I eat white rice, she asked. High glycemic index food, I should be diabetic, yada yada. Um, hello! Did she not notice who was standing in front of her? If all she knew as a non-asian person was true, why didn’t my ancestors and living relatives have diabetes and die of complications of obesity, metabolic syndrome, and heart problems? How could we have had generations of relatives who never experienced metabolic disorders? Why were they living into their late 90’s? Do you understand your genetic history and medical history well enough to customize your nutritional profile for your health and stop relying on generalized advice? BTW, I didn’t hire her; she admitted she didn’t have any experience with people like me! I learned early on that I needed rice paired with a protein and a fat to help slow the uptake of that high glycemic index grain, but rice has always been a safe food for me. Later, I learned that rice was one of the few grains I could safely eat at all, but I knew that well before test results confirmed it. None of this knowledge comes from generalized advice about healthy eating; you don’t learn this from reading a magazine, cookbook, or fitness club membership. My point being, you can use the latest available science to help guide you, AND you can learn to tune into your body and its responses to food. Individualized response to food is common.
