Such a yummy snack I had to share these jicama shoestrings I made. Spiralize one peeled jicama. Toss with 2 tbsp coconut oil, 1 tbsp taco seasoning (I used my homemade version- can be found on the blog), and bake in a 415 degree oven for 15 minutes, toss then cook for another 10 minutes. Whenever I run into people that I haven't seen in years, it always seems like one of the first things they ask is "How are your migraines?" .
It's been a few years since I have suffered from chronic migraines, but it really wasn't that long ago when my life felt defined by the term "chronic migraine sufferer". From the time I was 8 until I was in my mid-twenties, I fit the criteria, meaning I suffered from more than 10-15 migraines each month. It was how people knew me. .
Every once in a while I have this jarring moment where I realize, "Whoa, that was me." I hardly recognize that person anymore. My life has transformed in so many ways, and one of the most notable is that I no longer live under a veil of pain or anticipated pain.
Inevitably, people always ask what I did. And my answer is always the same: Food. I changed how I nourished my body and it began to respond, almost immediately. .
Most people never think it's possible that what they eat can affect so much about how they feel until they experience it for themselves. It only takes one person to let them know that there is a solution. I will never ever forget the person who showed me this path. Maybe I am that person for you. .

Strawberry, Apple and Coconut Loaf Cake 🍓🍎🌴🍰 EXPAND FOR RECIPE 👇🏻 Gluten, Dairy, and Refined Sugar free
I was a bit unwell earlier this week with a tummy bug and completely lost my appetite for several days. All I could eat was cake and banana smoothies! It was really weird for me as I don't normally eat sweets and there I was - eating nearly a whole cake by myself! It sounds terribly unhealthy but there isn't really any 'bad' in this cake, it's based on coconut and the only natural sweetener is apple sauce.
Strawberry, Apple and Coconut Loaf Cake Recipe
1 cup tapioca flour
1 cup dedicated coconut
1/2 cup coconut flour
1 tsp bicarb soda
1/2 tsp vanilla powder
1 cup of quartered frozen strawberries (about 2 cups unchopped medium size)
1 cup apple sauce
Oven - 160C fan forced, line a 11 x 21cm loaf tin with baking paper
In large mixing bowl, mix together dry ingredients then add strawberries and mix through. In a separate bowl combine eggs and apple sauce, whisk together then add to bowl of dry ingredients. Mix really well then pour into loaf tin. Bake for about 50mins until center is cooked (springs back when touched and kebab stick comes out clean). You could definitely use fresh fruit but the cooking time will be a bit less - I've also added more frozen fruit on top of this in the past (about 1 cup more) - that was really delicious but extended the cook time by about 40mins. I've loved this served warm with fresh strawberry chia jam 🍓😋 hope you enjoy and let me know if you make this too xx

I've been trying to figure out whether the health food scene in Bali is rooted in the authentic culture or if it's just to please all the progressive travelers. Maybe it's both. And if it is influenced by the western spiritual movement, if that's a bad thing or not... regardless, I am loving the food here. It seems like every day I find a new, amazing cafe with consciously grown and prepared food, for a third of what it would cost in the states.
This was my lunch yesterday--brown rice, marinated tempeh, steamed and raw greens, sweet potato, beet kraut, tomato, cucumber, sprouts, curry cashews, and a curry-goji vinaigrette dressing.
I'll tell ya one thing: when I get home, I'm gonna have LOTS of new cooking ideas and inspiration 😏😁😍

La leche de vaca esta hecha para consumirse por sus bebes (ósea sus becerritos). 😂
Desgraciadamente la industria nos vende este alimento como algo necesario para desarrollar unos huesos fuertes y sanos. El problema es que la leche que tomamos hoy en día es una leche con un valor nutricional muy bajo. La mayoría de la vacas son inseminadas constantemente para quedar embarazadas y así acelerar todo el proceso. Después de esto, los becerritos son separados de sus madres desde muy pequeños y son alimentados artificialmente. Al igual que las hembras, estos animales suelen ser alimentados con granos y cereales genéticamente modificados; lo cual altera toda su genética y por su puesto, la de nosotros al consumir esta leche. Las vacas también son tratadas con grandes cantidades de antibióticos lo cual también nos afecta. Otro punto muy importante es que los lácteos acidifican nuestro cuerpo. Entonces, una vez que el pH de nuestro cuerpo se vuelve acido, nuestro organismo trata de normalizar estos niveles extrayendo calcio de nuestros huesos. SIII, así que todo eso de que la leche es necesaria para obtener huesos fuertes debido a su alto nivel de calcio, es una mentira! Los lácteos descalcifican. Lo cual aumenta el riesgo de osteoporosis y muchas otras intolerancias y alergias alimentarias.. Mamás, dejen de alimentar a sus hijos con leche de vaca, no importa si es orgánica o no. No los benefician!👶🏻 En fin, existen otras formas de sustituir estos alimentos. Tal como la leche de almendra, coco, hemp, nuez de la india, etc. Así que no se dejen engañar. Perfectamente pueden obtener calcio de otras fuentes con valores nutricionales mas altos que la de los lácteos. .🥛🧀
