Sea salt peanut butter squares 🥜🍫
These turned out delicious and were super easy to make! 
I used @pbfit.official peanut butter and @traderjoes Organic 72% Cacao Belgian Dark Chocolate Bar And popped it in the freezer ❄️🌬I also added organic maca powder to the melted chocolate which gives it a caramel flavor⭐️✨ The best part is, these are full of protein, iron, antioxidants AND gives you energy🏃🏼‍♀️, doesn’t get any better than that!!

This topic weighs on my heart heavily around this time of year, because in the past, I have spent too many holiday seasons agonizing over what I “should” and “shouldn’t” eat. And if I ended up eating more of what I “shouldn’t” eat I’d agonize over what workout I was going to do in order to “undo” it. I feel inclined to speak about this because I know way too many people out there have struggled or are currently struggling with this too

Thanksgiving is a time for thanks, gratitude, love, and making beautiful memories with family and friends. What it is not: it is not a time for shame or guilt. You do not need to earn the right to eat food, ever. Eat the food that calls to you, savor it and the memories surrounding it
▫️
I understand that this is not always the easiest task and yes it takes a lot of mindset shifting practice; however, please try. And be extremely gentle with yourself. Our worth as humans is not grounded in what we did or didn’t eat. Or whether we did or didn’t work out
▫️
So, I’m here to give you permission, even though you don’t need it one bit, to enjoy, whole heartedly, all the glorious food this thanksgiving with zero shame and zero guilt surrounding it. Sometimes we just need someone else to hold that space for us in order to start that mindset shift
▫️
Sending out all my love to each and every one of you this thanksgiving, may your day be filled with nourishing food, family, friends, and memories to last a lifetime. 💛❤️ .

Today’s lunch was increased by a lot since I haven’t really been gaining my calorie intake has been increased by a lot more. So today is a challenge, because I have to eat a lot more calories from now on, and it’s very difficult! However, I am fighter and I am pushing through❤️
Lunch: Grilled Cheese Sandwich- 2 slices of  Sara Lee 100% Whole Wheat Bread with 2 slices Sargento Colby-Jack Cheese and 1 slice of deli smoked turkey breast+ some ketchup on the side to dip, a Whole Wheat hot dog bun with Applegats’s Organic Uncured Beef Hotdog and yellow mustard, 5 Gullon shortbread cookies, Good Healthy Mickey Mouse shaped Veggie chips, and a lot of green grapes, water. 
So although this was a major challenge, and ed was being very loud and clear about a way increased meal plan, I tried my best to focus on the food so that I can conquer ana💪🏼 I am really proud of myself because this is a major step and change☺️ I hope you all have a wonderful afternoon, and stay strong warriors! Keep fighting and do not let ed control you! You have the power and you are in charge! Do not allow your life to be taken away! - 1 Banana
- 1 Roma Tomato
- 1 Apple
- 1/4 Cup Unsweetened Almond Milk
- 1 Cup of Water
- 1 Scoop of Vega One Protein Chocolate Shake

I threw this into the Magic Bullet and threw it into a bowl, topped with Banana and Chia Seeds and voila done! Easiest lunch yet since starting a Vegan diet! I think a variety of this smoothie bowl might become a favourite.

Perfect Vata pacifying food here. Butternut squash soup is warm, grounding, well spiced, slightly sweet, and thick to counter act Vata qualities of cool, erratic, and dry.

💚As the weather gets colder, comforting foods is definitely a craving. This  vegetable curry 👉🏻@mildredsrestaurants was absolutely delicious with generous portion sizes too. 🙈I did request brown rice with mine as it is made with white basmati and trying to eat lots of whole foods at the moment. 🙏 Practicing mindfulness tonight along with gentle stretching to relax as feeling slightly overwhelmed when going through change. Although it is a good change, this does not always mean it’s any easier and putting pressure on ones self to succeed is not always beneficial. So I’m breathing deeply and enjoying each moment. Happy #humpday lovelies. .

I bought my duck, the best I could find was Mary’s Free range. I love roasted duck much more than turkey, and is a better size for our family. Other than that, there will for sure be a big salad, and I thought I’m not making any pie but guess what, there is sweet potato baking in my oven right now 😂🤓. It’s all experimenting, I’m not American and I only moved to the US 2.5 years ago, so I’m not at all familiar with the T-day staple recipes, other than what I see online. The gorgeous orange color of sweet potatoes is a sign of powerful antioxidants, such as beta-carotene, that protect the body from inflammatory free radicals. Sweet potatoes are also a good source of vitamin E, an anti-inflammatory nutrient that’s hard to get if you can’t or don’t eat almonds or sunflower seeds. One trick: You need to eat fat with your sweet potatoes in order to help the beta-carotene get inside your cells—so sprinkle your sweet potatoes with extra-virgin olive oil to give your pain and inflammation a one-two punch. #foodismedicine #recipe below 👇 •

RECIPE (serves 4):
3 cups sweet potatoes
1 handful cilantro, finely chopped
2 teaspoons fresh grated ginger
2 tablespoons extra- virgin olive oil
1 sprig coriander (optional)

Preheat the oven to 400°F. Place the sweet potatoes on a baking tray and bake for an hour. Remove the potatoes and set aside for 15 minutes to cool. Split potatoes in half with a knife and scoop out the flesh into a mixing bowl with the cilantro, ginger, and olive oil. Mix well until the consistency of the mash is to the desired smoothness. Serve with a drizzle of olive oil and a sprig of coriander.

My recipe uses coconut butter. This can be fairly expensive and you can omit but I think it makes them creamier. Coconut butter is made from the meat of a coconut. It contains mostly saturated fat but unlike coconut oil it has fiber and iron.

Pumpkin Fat Balls
▪️1/2 cup pumpkin purée
▪️1/3 cup raw almonds
▪️1/3 cup raw cashews
▪️1/4 cup raw macadamia nuts
▪️1/4 cup melted coconut oil
▪️2 tablespoons coconut butter
▪️1/3 cup unsweetened coconut shreds
▪️1 scoop @vitalproteins unflavored collagen peptides
▪️4 Medjool dates, pitted
▪️1 teaspoon vanilla
▪️1 teaspoon cinnamon
▪️1 teaspoon all spice
▪️1/2 teaspoon nutmeg
▪️1/2 teaspoon salt
▫️Blend all ingredients in a food processor. Roll into 8-10 balls. Place in an air tight container lined with parchment paper and freeze. Thaw when ready to eat.

🍌 Banana + Coconut Breakie Loaf 🍞

1 cup of oats (blended to flour if your blender isn’t great)
1/4 cup coconut flour
1/4 cup shredded organic coconut
1 large banana (1/2 for the Loaf + 1/2 for the top)
1 red apple diced up
2 organic eggs
2 tbsp maple or Manuka honey or dice malt
1 scoop vegan coconut protein (@180nutrition - family friendly)
1/2 cup almond milk or milk or of choice

1. Blend all ingredients until smooth.
2. Preheat oven to 180 degrees (I use fan bake).
3. Poor ingredients into a loaf tin, top with 1/2 a banana and sprinkle cacao nibs on top.
4. I baked mine for 25 minutes then turns it around in the oven and baked for a further 10 minutes.
