This kid, muchin on dried seaweed 😊 I bought this for myself and he snatched it from me and attacked it like he'd never eaten before. I had to hide the bag from him! It's so easy assume kids won't eat something bc it's an "adult" food. I really try to introduce him to all the same foods that we eat. Don't get me wrong, he's still a toddler and doesn't always like what I make or even always eat healthy. I try to make healthy foods more abundant in his life though 😍🥑 What's the strangest food your kid likes??
My sinuses have really been acting up these past few days and I haven't been feeling the best. 😷 I've been putting garlic and ginger in everything to boost my immune system. Tonight I made a dressing that came out really good.
Mango Garlic Ginger Dressing
• fresh mango juice
• grated ginger
• grated garlic
• grated turmeric
• olive oil
• apple cider vinegar
(All to taste. I made mine strong.)
* If too strong, I think a little agave would be perfect.

A lot has happened in the last four months and I've chosen to keep most of it offline to give myself the space to process. Investing in my mental health has been great, but I know that through everything I desperately wanted to find someone who had been through the same thing. I didn't really find that, and it left me feeling more confused. So now that I've started to regain my center, I want to open back up about what I've experienced and what I'm still learning. Hopefully, it will be reassuring and even helpful to someone out there. I have a lot to share, so I'm going to take it one day at a time. We'll get through it all eventually 😊
One of the biggest struggles has been my heart rate. The more I run the slower it gets. So to avoid the slowly-turning-to-cement feeling that bradycardia gives me, I basically stopped running. That drove me crazy and in the end didn't eliminate my problems. Last month a new cardiologist told me to exacerbate my symptoms to make the tests more effective. That meant running A LOT. I didn't think I could do much after four months off so I did two weeks of shorter than four miles per run. Well today the weather was cool and 🌬so I said screw it, I'm going long, 6 miles here I come. Then I procrastinated for an hour and when I finally set out I was so nervous that I talked myself down to 5. And then God stepped in. For the first time ever my run tracker stopped telling me where I was in my miles, so I had to estimate. As I started the home stretch, I felt so good. I thought I must be short in miles but oh well I'll just enjoy it. But oh He had big plans to show Himself and when I checked at the end I had run 6.67 miles. Almost double what I've done in the last five months! And it felt great! I am stunned by what God does for us when we least expect it.

With that said, I've decided to dedicate all of my posts this week to detail how I get ready the week before a big event! I will tell you guys all about my favorite ways to "beat the bloat," workout, take care of my skin, whiten my teeth and anything else I find myself doing to prepare for a day where I want to look and feel my best. Knowing I'm a vegan now, she could only give me veggies and rice 🍚 lol. "Any who," when I got home, I mixed up some squash, redskin and russets potato 🥔 yellow onions, minced garlic, yellow peppers and kale with a scoop of white rice. "Can we say delicioso!" I like how creative I'm becoming with my dishes. Being vegan is also healthy in other departments in my life. HOMEMADE PROBIOTIC COCONUT YOGURT!! It's so dang easy and soooo good for gut health. If your gut isn't healthy, nothing is. Skin irritation, headaches, brain fog, etc. all stem from an unhealthy gut. So, probiotic, fermented foods help get your gut back on track! AND you only need TWO ingredients to make this stuff:
Coconut milk and probiotics! You can buy probiotic capsules (sold at health food stores) break them open into the milk, OR use 2 tbsp worth of an already made probiotic coconut yogurt to get it started. Once fermented, the probiotics are alive and can be transferred! So here's what you do:
Empty 8oz of coconut milk (or more, depending on how much you wanna make) into clean jar. Add in probiotics (2 capsules or 2 tbsp of probiotic yogurt) and mix in with a wooden spoon. I also added honey (from my mama @jillfawcett's hive) and vanilla bean powder!! You can add fruit to! Get crazy! Then, cover jar with a paper towel and rubber band to secure and let ferment in a cupboard for 24-48 hours. The longer it ferments, the more thick and tangy the yogurt! Then refrigerate and eat up! All this info came from @jillfawcett herself cuz she's the queen! First Kale harvest of the season! Planted June 1st. 3 hrs rows set up and transplanting baby kale+ 2 hrs weeding and laying mulch+ 2 hrs water tank hurling= 7 hrs of total labour for 5 trashbags of kale.
Two school programs and a couple of food pantries are about to eat some scrumptious kale.

This is what PURE JOY looks like 🙌⭐️ a few days ago, I was invited to a group ocean swim in Redondo and immediately said yes!! I was scared, but also super excited! I hadn't swam in 5 years and had been wanting to throw myself back into it. I just didn't have the motivation to until that moment!
It felt terrifying, but very familiar at the same time; exhilarating but nerve-wracking; it was like I was meeting an old friend that I had fallen out of touch with yet when we were reunited it was so easy and comfortable 💗
I didn't know what to expect since it had been SO long since I last swam laps. To be honest, I thought I was just going to do one lap around the buoys and call it a day! BUT...I swam 3 LAPS AROUND THE BUOYS!!! I was surrounded by triathletes which definitely helped motivate me and I totally surprised myself that I was able to keep up AND I surpassed my limit of 1 lap!
It is so important to get outside your comfort zone and to try things that scare you, because more often than not, you will COMPLETELY surprise yourself 😉 and you will realize just how darn tootin' AMAZING AND STRONG you really are! Thank you @rebsoni for inviting me and I cannot wait to swim again this weekend!! 💪☀️🌊🏊♀️(by the way, that smoothie tasted so good after a long swim! I forgot how HUNGRY I get after a good swim workout 😜)

Dinner tonight!🌿 I have been craving so many sweet potatoes 🍠🍠🍠! They taste so good and feel so nourishing to me, and they sweep out bad estrogens out of the body! Which is important to me because I'm healing an ovarian cyst. This is a sweet potato, streamed broccoli, and cauliflower mash with garlic and parsley😀😋 and lemon balm tea🌿☕️
With all the movement and change going on lately, I absolutely love having these!! Because 👉🏼 "when you need some coddling, there's nothing more comforting than a baked sweet potato. Unlike greasy, fried, or sugar-filled and processed "comfort" foods that leave you feeling bloated, lethargic, and more depressed, a sweet potato has properties that actually give you the sensation that the world around you has shutdown. This is an important function that makes you feel safe and soothed, like you're getting a hug even if no one's there to give you one, so that you can draw up the strength to deal with hard times" and we have some extra stress going on at home, and I need my world to feel like it's shutdown so I can relax. Having this type of dinner does exactly that for me. Giant Salad Gains!!🌱🥒🥗💪🏽

I had the pleasure to eat this amazing dish while I was in Spain staying in a house full of family and friends. I did not make this delicious salad and the people who prepared it for me are clearly better cooks than me. I was so happy they made this for me and needless to say I ate the whole thing with a smile on my face. Let's all take a moment and thank those who make an effort to make us vegan dishes when they have no obligation to. I had such an amazing time where I stayed and ate a lot of delicious food as well. -
The recipe for this salad was simple I believe:
The base was a handful of lettuce and spinach mix (other leafy greens mixed in with spinach)
The raw veggies in the salad were: cucumber wheels, red bell pepper "slices", shredded carrot, and diced tomato.
As for the "cooked" ingredients of the salad, the ingredients were: steamed broccoli, sautéd mushrooms, and beans. -
I cannot emphasize how good this was. In fact, it was so good that I'm trying to eat a giant salad like this everyday just to eat as much raw veggies as I can in one sitting. I challenge you to make something similar and see for yourself how good you feel after making and eating a giant salad bowl and eating all those raw veggies!

Saw a nutritionist this last week. I think it went really well and it looks like I might begin juicing. She has me starting with a couple local bought juices to find out if they further aggravate my gut related symptoms. If not, I can start regularly juicing myself. A little nervous about the watermelon juice since it has a lot of sugar...hoping it goes well. Probably should have done this a long time ago as it could really help me with my nutrient deficient diet.
