After finishing meal prep for the week (thank you @mmmeatshops 🙏🏻), making pastries, and amidst doing laundry, downloading GoT, and cleaning the kitchen (twice); I looked at the batch of pasta I made for Peter, and wasn't pleased. So I headed out for semolina, and got kneading. When something doesn't feel right, you're usually right. When it doesn't look like you know it should- start over. I made three balls of dough, and the last was the best feeling, looking, and easiest to work with. This time, I made the wise decision to a) let the dough rest, b) not salt it, c) roll it super thin, and d) use a homemade (ghetto) "ruler" to mark my lines so that each piece was perfect. The Honey Chilly Potatoes were my fav among the three! Broccoli was lil' bland but healthiest among. You can choose different sides & any entree combo! This is what i choose!
Flaky, crispy, phyllo; sweet, jammy, raspberry filling, amaretto glaze. Breakfast was great. I've realized that the lighting in this house is wayyyy too warm, so I've been playing with extra lights and boards again.
"I remember the month following my decision to quit a corporate career of many years, to write about food full time. My mom was in town then & felt unsure about my decision. She was understandably anxious as any parent from a middle class family would be. She'd have preferred for me to have stuck to the stability of a full time job. After 15 years as a market researcher, food writing was uncharted territory for me. I hoped to figure out a path for myself. My wife Kainaz, who comes from a creative background herself, was a big source of support & encouragement as I took baby steps in this field. I also turned to Buddhism which gave me a lot of hope & determination during those days as I started working on creating a new career.
I began to focus on my blog, Finely Chopped, and then things slowly began to happen on the work front. My book got commissioned, The Travelling Belly. I was commissioned by leading publications to write for them. I got to work with brands in the food space as an influencer & as a consultant. Slowly a new path & new life began to take shape.
Mom visited us again, she saw me happy and busy with work. She walked in to my study the day before she left, while I was giving the finishing touches to my book. She nodded at me & said, 'I understand now," & left the room looking at peace.
In fact even she writes a popular blog herself now.
Basically, what I understood from this is, you can't really control either the environment or the way others react. All you can do is show them the purpose behind why you are doing, whatever it is that you are doing. Nobody says you need to have it all figured out in the beginning. You can meander, people will have their doubts. But in the end, when they see your steadfast purpose behind it, it will all fall into place. When you are happy, people who care for you will be happy too"
Our candid at Candies with Mr. Karmakar couldn't have gone better as we bonded over the love of food & the struggle. It's a story of every middle class household, of working hard & not giving up & breaking the conventional rules that dictate a need to have a steady income & to not be able to afford the "luxury" of a risk and a dream.
