There are some days I rush out of the house for my 6am client and don't get back home until late morning or midday. The wise thing to do is pack an on-the-go breakfast, which is what I usually advise people to do but.... nobody's perfect 😕
Today has been one of those days. So, because I'm blessed with clients that are like family, I innocently asked for a bottle of water and 'any fruit'. I was thinking of an apple or banana but was blessed with this breakfast of fruit - apple, plum, watermelon, paw-paw, and a bottle of water of course.
God bless this "mystery client" who also gave me a brand new phone when mine suddenly stopped working. Next time you pray, please spend a minute on her and ALL my awesome clients 🙏 .
Throwback to one of my go to Haggis favourites! Veggie haggis & goats cheese filo parcel!! So simple and so delicious!!
Simply lay out a sheet of filo pastry and lightly brush on some olive oil. Place another filo sheet on top at an angle and oil again. Repeat several times. Scoop warm veggie haggis on to the top sheet and add chunks of goats cheese. I add a spoonful of chutney or chilli jam too! Gather up the filo to enclose the filling and twist in to a parcel shape. Lightly brush with oil and place in the middle of a preheated oven for approx. 15mins or until golden brown. So this is one of my fave fillings for fresh rice paper spring rolls - but that requires work and some days, you just want a tasty, healthy and speedy dinner so I skipped the wrapping step and went straight to the scoffing 🤗
The lynchpin for this yummy meal is the sauce: 4 tbs 🥜 butter (assuming you’re not allergic - if you are, silken tofu could also work, noting the end result will have a different taste and texture) + 2 tbs hoisin sauce + a splash of warm💧= instant sweet satay style sauce (I also like to add #siracha or fresh 🌶 to mine for some extra 👊🏽)
You can pretty much pad the rest out with whatever you like - the sauce is the star after all 😉. I used shredded cabbage, green beans, 🥒, radish, 🌽, herbs from my #balconygarden (Vietnamese mint, chives, coriander, Greek basil, mint - the more the merrier I say 😁), green tea noodles, and fresh 🦐 with a squidge of 🍋
What is Balkan food? Actually pretty decent wholesome fare full of punchy flavour that overcomes a slight lack in presentation 😋. I dined @21grams.dubai last night, a new cafe-cum-bistro on Jumeirah Beach Road at the Al Thanya intersection (in the Park Regis Boutique Hotel - unlicensed) operated by a Serbian owner and team. Named after the weight of the human soul (!); the latitude of the Balkan Peninsula; and the area code of the owner’s Serbian home town (Novi Sad). Mein gestriges Frühstück - #zoats . So leicht ist es 3 Portionen Gemüse uns 2 Portionen Obst pro Tag zu esse. Da ich ja kein Fleisch esse, sind es bei mir sogar noch mehr. 😅
Heute ist schon wieder Donnerstag. Wo rennt die Zeit nur hin. Jetzt mit #baby vergeht sie sogar noch schneller. 🙈

150g Zucchini klein raspeln,
mit Wasser bedecken,
50g Haferflocken (z. B. @koelln_deutschland) und
1 EL Chiasamen hinzufügen.
Alles kurz aufkochen lassen, bis es eine schöne cremige Konsistenz hat.
Zum Schluss noch 25g Vanille Proteinpulver unterrühren.
