Nettle Italian Pasta⠀
The Pecorino Grand Cru, an aged sheepsmilk cheese gives the fresh pasta some depth and umami while the lemon and pepper brighten it up. Fava beans, when lightly boiled and shelled have a texture a bit like edamame, but they are much sweeter and have a flavor similar to peas.⠀
1 1/2 cups Flour⠀
2 Eggs large⠀
1 cup Fava beans lightly boiled and shelled⠀
2 tablespoons EVOO (extra virgin olive oil)⠀
1/2 cup Pecorino grated Grand Cru (or other hard Italian cheese)⠀
1 teaspoon Black pepper freshly ground⠀

This flavour packed Herb Pesto Dip is so easy to whip up and you don’t even have to worry about having fresh herbs on hand!
You could use this on pasta, as a dip, on eggs, in a sandwich - so many options! And I’m seriously so impressed with the amount of flavour of these @gourmetgardenaustralia lightly dried herbs. So handy to have in the fridge!
🌿💚 Herb Pesto Dip 💚🌿
// INGREDIENTS // 1 handful baby spinach
1 lemon (juiced)
1 cup raw cashews
3 tsp @gourmetgardenaustralia Lightly Dried Parsley
3 tsp @gourmetgardenaustralia Lightly Dried Coriander
1/2 tsp garlic powder
2 tbsp nutritional yeast
1/4 cup olive oil
Sea salt & pepper
// METHOD // 1. Add all ingredients to a food processor.
2. Process until combined and creamy. I like it with a little texture, but you can process smoother if you prefer.
3. Store in a glass jar in the fridge for a week or so.
// NOTES // For the record, I do love fresh herbs, but let's face it, they just don't stay fresh more than a few days! And if you hate coriander, swap it for the basil 😉 .

Neapolitan is my favorite ice cream only second to rocky road🤤 Of course I had to turn it into a dessert smoothie🍨 The base for each layer is frozen coconut cream, cauliflower, banana and almond milk. For the vanilla layer I just added vanilla extract, frozen strawberries and @thecoconutcult for the strawberry layer and last but not least @sunpotion anandamide, @navitasorganics cacao powder, @alohamoment chocolate protein and @wild_friends chocolate almond butter for the chocolate layer.
