It's Thursday night for me, but I'm so ready to call it done for the week. 😂Taking It easy tonight and asked the hubby to pick up some Chinese take out from our favorite place in Philly called New Harmony. I am now happily filled with steamed veggies, rice and their seitan 'beef'. Topped it with a little tahini, minced basil and red chili flakes since I opted against using the sauce that came from my meal. Really hit the spot. 🙏🏽I love being able to get take out food that is pretty close to what I typically make at home. Definitely doesn't make me feel too bad about relying on it for a quick meal every so often. 😏

Still dreaming about this sweet and simple meal we made with @mariabrander33 and @kevinakevina a few weeks ago. Baked falafel, sweet potato fries, roasted kabocha squash, and lots of fun toppings! We did a fun gym session together before so when we got home we snacked so much that by the time our food was ready, we were already getting stuffed! But this meal type of appetizery meal is perfect for Saturday nights like that because you can just munch as you please throughout the evening!
Been spending evenings organizing the hard drive and can’t help but stop to do some comparisons when I run across shots like the one on the right. There is no doubt going plant-based saved my life. I look and, most importantly, feel like a completely different person.
Someone please tell me WHY have I never tried making applesauce before?!?! For some reason it’s always seemed so daunting... it’s literally the easiest thing in the world! 😂 .
I had a bunch of gala apples, a few pink ladies, and a whole bunch of yellow pears laying around that were all bruised up and over ripe, so I chopped them up and threw them in the InstantPot with some cinnamon and a pinch of nutmeg. 😍 I got two of these big jars and the kids already ate a bowl each. Lol.
When you look up Moroccan chickpea stews online and the recipes are extremely complicated with tons of ingredients, you make up your own recipe! It was absolutely delicious😍 Filled with chickpeas + zucchini + bell pepper + peas + carrots + tomatoes + raisins + spices and it was insanely flavorful! It went PERFECTLY with @yolelefoods fonio! They were kind enough to send me a package of their fonio (which is a tiny superfood grain from West Africa) and it was like couscous but better! Paired so well with this stew to soak up all the broth. I cannot wait to cook with it again! Added some lime + cumin/cinnamon roasted sweet potatoes for an amazing dinner🙆 I am a VERY happy vegan! #whatveganseat

So I said I’d post more about the cruelty free products that we buy and so far I’ve been generally useless. I thought I’d start with a shop in general. George’s two favourite shops are Lego and Lush. There are so many reasons I take him into Lush, clearly the main one being that they don’t test on animals. The next reason is that (speaking about every experience in the Oxford Street branch) they are consistently just the kindest, knowledgeable, smiley, welcoming team of team of people. George is treated with such respect in there and given so much time. Without fail the team talk to him and really listen to what he’s saying and he loves it. George loves the bath bombs of course, the bubblegum and chocolate lip scrub, the jelly soaps, the ‘fun’ bath soap and ‘Rub rub rub’ amongst other things! Just a note: there are some non-vegan products containing either honey/eggs/milk which I hear that they’re phasing out but worth checking.
It's my rest day from the gym as my knee is acting up again (years of running 10-15 miles everyday probably has taken its toll) so I am listening to my body and staying home to stretch, foam roll and relax.
So tonight will just be spent re-building my body with lots of veggies and healthy fats. 🤗

First time trying the @eatbanza Chickpea pasta. I need to cook it longer next time, but the flavor worked well with these curried veggies! 25g of protein in that pasta, with approx 10g from the beans, chickpeas, and broccoli! This recipe is a keeper. 🌱💪😍🤘✌🌱

Pigs especially are more intelligent than toddlers. Chickens recognise people's faces. Cows develop extremely close bonds with their young.
So Why do we love one, and brutally murder, dismember and devour the rest?
We (well most of us, me included) grew up eating animals, however now that we are presented with information and facts about the meat industry, we cannot turn a blind eye. We cannot say "we didn't know". It is our moral responsibility not to contribute to this industry, and choose a better way of life for ourselves and a way of life that of course does not harm these lovely, sentient beings. .
It is so simple now to live a plant based, vegan diet. The options are plentiful!

The list goes on. So ask yourself, why? Why STILL cause unnecessary animal suffering when you can live a healthy fulfilling life without doing so.

@arancinibrothers have turned their Old St branch PERMANENTLY VEGAN🌱 The world is changing guys and it tastes like heaven 😍 They invited me down to try, had the @fatgayvegan burger (mushroom courgette risotto patty with double cheeze, pickles, crispy onion, ketchup and mustard) with paprika fries and mayo and it was SO DREAMS 🎇💭 and the staff are so lovely 💚 Do your taste buds a favour and get your butt down there 👌
