Chai tea, cinnamon and apricot  chia seed pudding. I am a tea lover, so a I like using it to flavour all sorts of things. To make this chai tea chia seed pudding it's really easy, I just filled up a glass with almond milk, leaving some space at the top, then added some chopped apricot, cinnamon, stevia sweetener like I would use the sweeten tea and a pinch of salt and nutmeg. Then I added two tablespoons of chia seeds. This creates a lose chia seed pudding, so if you would prefer it thicker add 1-2 tablespoons more chia or use less liquid. Make sure to mix the pudding after five minutes with a fork and then again after another five so the seeds don't clump together. To add the tea flavour, I just steeped a chia seed tea bag in enough boiling water to cover the bag for around three minutes. Then I removed the bag and swirled the water into the pudding . The same can be said with anything you're not comfortable doing.

Sometimes I wish that Instagram had a 'smellagram' function, these oils smell soooo good, especially this guy 👆🏼Lemon Myrtle... it kind of smells  like an explosion of home made lemonade, the scent of lemongrass and the Australian bush all blended into one (that's obviously the technical description 😂)... I recently went on a kinder excursion to the local indigenous centre & a beautiful aboriginal lady there explained to us about native plants and their uses.. I was immediately hook on the Lemon Myrtle plant and was stoked to find out that Young Living produce and bottle its oil 🙌🏽... Give this guy a whirl if you're looking for support for your immune system and cold symptoms, concentration, calming your mind & body. Lunch: Pure Protein caramel PB bar and medium apple (not pictured: 1/3 of a Costco hot dog without the bun)
Dinner: 4oz shredded chicken breast (cooked in Herdez avocado salsa in my Instantpot), light Baby Bell cheese melted on top, 2c homemade Mexican rice, 5 sweet mini peppers
Last snack: 1/2c Dreyers slow churned cookies n cream ice cream, 1c strawberries, Kirkland cookie dough protein bar warmed up (not pictured: sliver of angel food cake and another serving of my Crio Bru hot cocoa drink)

Blender Peanut Butter Bars 😲 
Set oven to 350 
Blend:
1 (15 oz) can chickpeas (garbanzo beans), rinsed and drained
½ cup peanut butter
1/2 cup honey (can substitute maple syrup for a vegan option)
1 TBS almond milk
2 tsp vanilla
½ tsp salt
½ tsp baking powder
¼ tsp baking soda

Put into a greased 8" or 9" glass baking pan.

Press ½ cup of chocolate chips onto the top of mixture. 
Bake for 20-30 minutes

Why the heck haven't we been doing this with our oldest kiddo longer?!
He loved adding his own toppings and making his tacos all by himself.  It was a bit of a mess, but was super fun! 
We stuck with ground turkey, and the boys had crunchy taco shells.  Toppings included fresh tomato & avocado, olives, green onion, cheese, Greek yogurt, lettuce... and hot sauce for the hubs.  YUM!

Sharing this here as this was my first attempt to make Alfredo Sauce!

I found the recipe for a lightened up and creamy version of Alfredo Sauce at Damn Delicious. I used organic butter and heavy cream, flour, skim milk, garlic powder, 4 pieces of Laughing Cow Cheese wedges and freshly grated parmigianno-reggiano cheese, salt, pepper and dried parsley.

I served it with Spinach quickly cooked with garlic and just a touch of butter. This went perfectly with the sauce and fettuccine rice noodles. Amazing combination! I also enjoyed some small Salmon Sweet Potato Cakes. Tasty, satisfying and kept me full (not stuffed) for 4 hours...perfect! 👌

I used to care a lot about what people think of me. So much so that I was terrified of letting people know about my Instagram account. I thought they'd think it's stupid and cheesy and weird. They'd see all these pictures and captions talking about things that matter to me, and they'd have negative opinions about it. I let these made up thoughts go wild in my mind and you know how paralyzing that can feel! 😞

Somewhere along the way though, my perspective on myself changed. I slowly started to realize that the opinions of others are outside the boundary of how I feel about me. 💯 Now...I'm like "you can just call me @justdimpleit" 😄I started owning who I was and started embracing others getting to see me vulnerable, open and honest here. Perhaps not everyone will understand my vision or see the value in what I stand for and that's ok. I know that I am living my truth and I LOVE my truth. 💯💞Once we all start to embrace our truest self and are no longer fearful of how others could perceive us, then we can all start to recognize just how strong we are. 🙌🏼

Ok so this just happened... most of you know that we eat healthy 90% of the time but we are human and have our reward meals too. Today it was McDonald's because we haven't had it in about 2 years!!! To be honest we didn't really enjoy it much although Lilli loved the idea of the box with a toy in it 🙄 I'm sure that's how us parents get sucked in!
