INGREDIENTS:
1 medium stalk of celery, chopped (40g)
3 tbsp. chopped onion (36g)
1 medium carrot, chopped (61g)
1 tbsp. poultry seasoning
Salt and pepper to taste
1 ounce uncooked @eatbanza pasta (28g)*
3 tbsp. frozen corn (26g)
3 tbsp. cooked chickpeas (28g)
ยผ cup tempeh, cubed (41g)**
ยฝ cup spinach (15g)

DIRECTIONS:
1. To a small pot add your chopped celery, onion, and carrot with a splash of water. Stir in your poultry spices until veggies are coated and cook until veggies are soft, or about 5 minutes.
2. Add in 2 cups of veggie stock or water and bring to a boil.
3. Add in pasta, frozen corn, garbanzo beans, and tempeh cubes. Bring to a simmer until pasta is cooked.
4. During the last minute or so of cooking, stir in your spinach so it has time to cook down before serving.

The first pic was Feb 2017 when Miguel & I were still doing long distance. Obviously his goal here was to put on mass. All I instructed him to do was EAT, he didnโ€™t have a gym membership. The problem with most most ppl who struggle with putting on weight is that hey arenโ€™t eating enough. They do eat A LOT, but still not eating enough to be in a caloric surplus (eating more calories than their bodies burn). So of course he still had trouble gaining bc he was not used to eating the amount of food he should

At the end of May, Miguel moved in to my house in Cali, still around 152 lbs. We started eating realllll good obviously.  Copious amounts of food lol. just told him to make sure he was hitting his protein. He also got himself a gym membership & finally started lifting consistently. This boy packed on 20 lbs in a month! However, his clothes started getting too tight & he wasnโ€™t happy with his belly. So we decided to take it down a notch. The plan was to cut down to a comfortable weight so he can enter a LEAN bulk from there

It wasnโ€™t until about 3 weeks ago where I really challenged him to get serious. I told him to end his cut with a BANG before thanksgiving so he can get right back into a building phase just in time for the holidays. in 3 wks, he went from 167# to 157# by eating intuitvely. NO RESTRICTIONS ON ANY FOOD GROUPS#! STILL EATING WHAT HEโค๏ธ (OREOS, CHEESECAKE, ICE CREAM, NUTELLA, OATS ON OATS, RICE, STEAK) just being more mindful, making smarter food choices for his goal

His goal is to now put on lean mass (not as fast and excessive as the first time). Since he didnโ€™t track during his cut, we donโ€™t know what his macros are. But I plan on making him intuitively eat but track while doing so just do see what his calories are right now! That way, he can track his lean bulk an optimize his gains

Broccoli soup is one of my favorites and Iโ€™m finally sharing my recipe! LINK IN BIO. I love it because itโ€™s super satisfying, low-calorie (113 calories), and relatively high-protein (9g). The best part about a low calorie soup is that you get to eat a ton of stuff with it! LOL. Here, I paired it with @thevegan8 lentil loaf.  I bake it in a brownie pan because theyโ€™re easy to pop out and freeze individually. Such a satisfying combo!

As I sit behind my computer surrounded by books, notebooks, pens, highlighters and COFFEE I need to remember that this chaos is WORTH IT.

I set a goal 3 years ago to finish my undergrad in Nutrition and move on to get my RD. My Ohio credits didnโ€™t transfer to CO so I essentially finished a 4 year degree in 3 years. I got married, struggles with fertility, traveled and had a baby! I took one summer off, thatโ€™s it. I gave birth to Ben on the first day of my spring break this year (yeah that was a party)! People said I was crazy to go back when he was only 5 months old but I did. I figured it out, worked through it and persevered. .
I havenโ€™t done it alone and I have learned a lot more than my major. The most important lessons Iโ€™ve learned is how to ask for help, how to say no when necessary and how to be a little selfish with my time.

One semester to go and graduation in May!! My post-grad goals have changed slightly. Iโ€™m delaying my RD and plan on doing an internship along with a masters program. Yes, I want to repeat this madness and go to grad school. Ultimately I want to get a PhD and be a college professor as well as a clinical RD. If you are still reading, you are allowed to tell me that Iโ€™m crazy. But, when you having a calling that excites you... you go for it! .

Anyways, I like zoats. Itโ€™s a way to add a nutrient-dense low-calorie veggie without much notice. But I changed things up and turned the oatmeal into muffins!

Zucchini Bread Muffins
Ingredients:
โ€ข 1 cup oat flour or 1 cup oats blended or processed into flour
โ€ข 2 tsp baking powder
โ€ข 3/4 cup fresh grated zucchini
โ€ข 1 small container (4oz) unsweetened apple sauce
โ€ข 1/4 cup maple syrup

Directions:
1. Preheat oven to 350F. Place 5 muffin parchment liners into separate  muffin tray compartments. I like @paperchef culinary parchment, because theyโ€™re non-stick!
2. Mix together oat flour and baking powder.
3. Add and mix in zucchini, apple sauce and maple syrup.
4. Pour batter evenly into muffin liners and bake for 30 minutes.

Protein quality is measured in various ways, looking at the digestibity, amino acid profile, and bioavailability - measuring the amount of nitrogen absorbed and utilized for anabolism (build up of tissue). Today I also threw in some work with the ab roller!
