I had big plans today, big plans I tell you. Everything changed when I woke up to below freezing temps and decided I couldn't be bothered with real pants. Instead I stayed home and baked focaccia and cleaned my makeup brushes... so really I still win, right?
Spinach, garlic and tomato tortellini 🔥
INGREDIENTS: -Olive oil
-2 onions (diced)
-5-6 garlic cloves (finely chopped)
-2 tomato tins (chopped)
-1 tsp oregano
-Chilli powder (optional)
-Water (half cup)
1- Boil your choice of tortellini and set aside until the end.
2- Put five tablespoons of olive oil into a heated pan.
3- Add onions and sauté until transparent, add garlic and chilli and sauté for a further two minutes until golden brown.
4- Now add a quarter of the water and following that add salt and black pepper according to your preference.
5- Next, add in some chilli powder along with the rest of the water; reduce heat and let simmer for five minutes.
6- Go ahead and throw in the tomato tins, bring them to boil then reduce heat and let simmer for a further five minutes until the consistency has thickened.
7- For the final flavour boost add a teaspoon of oregano .
8- Add in your tortellini of choice and serve! 🙌
