Hello friends! Big news! I've officially launched my website! I'm not calling it a blog exactly, because 1) I'm not much of a writer and 2) it is my solemn swear to focus on the RECIPES! I will post some lifestyle/wellness stuff, and sometimes I'll blabber on, but it'll always be after recipe. 
On it you can find out more about IBS, the low-fodmap diet, and even me! I've put a lot of time into making this and a lot of effort into making sure there is content there before the launch (everything I've been posting lately is already up)

One of my most favorite appetizers during the holiday season is a cheese ball with cream cheese and such. 
New favorite this year:  Dairy Free Cream Cheese w/ Tajin seasoning mixed in and spread on a gluten free cracker.  #WheatFree #GarlicFree #OnionFree #DairyFree #TasteFULL

Sunny Vanilla Mugcake! So scrumptious! For whatever reason, this batter cooks much better in the microwave and forms little bundles of crystallized goodness that are a little gooey and a little crunchy, a bit like kookie brittle (see center of second picture). 😍 This is grain and nut free, vegan, and fruit-sweetened. ✨

1/4 C @traderjoeslist sunflower seeds, unsalted dry roasted 
1/2 banana 
1/4 C applesauce, unsweetened 
1 T @naturalevolution green banana flour 
2 splashes vanilla extract (or fresh vanilla bean!)
1/2 t maca powder (opt)
1 scoop @furtherfood collagen (code: tolerableats10)
2 T @sunfood  cacao nibs 
In a food processor or blender, blend the sunflower seeds until sandy. Add the rest of the ingredients except the cacao nibs. Blend until fully mixed. Add the cacao nibs and mix through. Pour into a mug and cook in the microwave for about 3:40. Pull the biscuit out once it’s cooled a bit.

For the frosting: I saved one tablespoon of the mixture and mixed it with one tablespoon of @redwoodhillfarm goat kefir. Topped with more cacao nibs 😊

It's snowing today. First in what feels like forever! So I made a few Vegan Caprese Salad boxes. Tomato, sliced tofu, buckwheat pasta, pinenuts, fresh basil, salt, pepper and olive oil. Lovely when hot for diner and the perfect lunch the next day! Now off to celebrate Sinterklaas (the Dutch version of Santa!) with the whole family 🤗

They’re so satisfying and frothy 😍 I had originally called this one a “Reese’s” Hot Chocolate on my stories some days ago, but truth be told, you can’t taste the peanut butter very much. ☹️ Even when I upped the dose! I’ll have to play around with it some more. It is however a delicious take on a sugar, dairy, & coconut free spiced hot chocolate!

1 mug of warm water
2 T cocoa powder 
1 T creamy peanut butter 
1 scoop @furtherfood collagen peptides (code: tolerableats10 for 10% off!)
1/4 T cinnamon 
A sprinkle of cayenne

This is like an accidental spin on turmeric-poached chicken. I made chicken soup last night with red cabbage and was reminded of its incredible abilities. Anthocyanin is the compound in red cabbage that gives it its color and changes from blue to red depending on the temperature and pH. The acid from the lime here is the little sprinkle of magic! ✨ #science [I apologize if this totally grosses you out! But about as weird as colored ketchup.]

Basic chicken soup 
3-4 quarts water
4 md carrots 
4 stalks of celery 
3 zucchini
2 red potatoes 
1 md onion 
1/4-1/2 head cabbage (any)
1-1.5lb chicken*
Salt to taste 
Simmer for 20-40 minutes

*the best chicken soup is from a whole chicken but when I need some in the now, I throw in cuts of chicken (drumsticks, thighs, breasts, whatever). Meat with bones-in will need longer to cook.

3 Ingredient Squash Soup (minus the usuals). _____

1 butternut squash
1 sm onion 
1/2 T dried sage*
EVOO, S&P

1. Wash, halve, scoop seeds, and roast the butternut squash face down with EVOO or avocado oil & salt at 400 for 30-45 minutes, until fork can easily pierce through. 
2. Sauté onions until translucent with dried sage, EVOO & salt. Roughly 2-3 minutes.
3. Add everything to a blender, including the skin of the squash. A little water to loosen it up a bit. S&P to taste. DONE.

Roasted sweet potatoes + sautéed Swiss chard with EVOO and red pepper flakes + whole roasted eggplant with tahini & za’tar + radish slices + avocado. That avocado quickly got dragged on to that white sweet potato for some unforgettable bites that I’m still thinking about. 😛 So good!

For the eggplant: after washing the eggplant, stab it a few times with a knife (or fork), wrap it whole in tin foil, place in pan, and roast for 40ish minutes at 400 (or until skin is wrinkly). Perfect for adding to veggie plates or making into a dip!

That avocado quickly got dragged on to that white sweet potato for some unforgettable bites that I’m still thinking about. 😛 So good! ____ For the eggplant: after washing the eggplant, stab it a few times with a knife (or fork), wrap it whole in tin foil, place in pan, and roast for 40ish minutes at 400 (or until skin is wrinkly). Perfect for adding to veggie plates or making into a dip!

Fresh Turmeric!! I topped this beautiful organic fruit salad of red papaya, mango, banana, blueberries and vegan coconut yoghurt with grated fresh organic turmeric, maple syrup and some fresh cardamom seeds that I ground in my mortar and pestle. It was nothing short of incredible!

30 Minute Ragu (with an Instapot*). The Ultimate! I love a good ragu when it’s cold, but they can take HOURS & ain’t nobody got time for that. This creates a full-flavored sauce in about a quarter of the time. 🙌 I had mine on a bed of sautéed cabbage, topped with pecorino. 😍 My next bowl will be spaghetti squash!

1 lb ground beef
1 T EVOO
2 carrots, chopped (optional)
1 med onion, chopped 
1/2 C red wine (or broth)
1 32-oz can crushed tomatoes
1 C water
1 chunk of parmesan or its rind
S&P to taste

Brown the beef & remove. Add the oil if needed. Sautee the onion and carrots until translucent & soft. Add the red wine or broth to get all the bits off the bottom of the pan & reduce. Add the beef, tomatoes, and water. Use the “meat/stew” setting for 20 minutes and allow time for a slow release. Salt at each step. That’s it! 👉 *If you don’t have an Instapot, use the stove! Simmer the sauce for 1-2 hours. You don’t need to go for the traditional 4, I promise. I caution against a crockpot or the oven as it turns it into more of a BBQ sauce, which isn’t ideal. 😬
