After a full day of travel and arriving in Barcelona drained of energy, we could only muster the strength to go out somewhere near our hotel to get some food before passing out for the night. We found a random Galician seafood place nearby and ordered this attractive combination seafood plate with mussels, grilled baby octopus, and cuttlefish. Though it wasn't the gastronomic food bomb that Barcelona might be known for, it was perfectly simple and delicious, and exactly what we needed to begin our time eating through Catalonia.

Чем холоднее становится на улице, тем больше хочется быть дома, зажигать свечи, доставать плед, пить литрами чай или кофе и ничего не делать. 
Такое ощущение, что срабатывает природный инстинкт - забраться в норку и впасть в зимнюю спячку 🤗
Но как-то не хочется подпадать под влияние своего организма... Теперь надо придумать как с этим бороться 😁
А какие у вас способы "включиться", расшивилить себя?

Been around to a few fishmarkets in Japan , really admire the Japanese for their hardwork, dedications , ingenuity and attention to detail to achieve the UTMOST QUALITY of their products.
My ultimate goal as a food supplier is to be able to provide superb quality products likewise. 
I've been lucky enough to be seated in a few top restaurants in Asia, can't argue that one key of creating trully magnificent and amazing dishes is the INGREDIENTS, (right chef ?) A good supplier have to extend their thoughts up to the DINING TABLE, it doesnt just stop at the  KITCHEN.
Back home, i realized its still a long way of educating and constant learning process for  fishermen, fishmongers and stakeholders alike , including myself....(patience🤔)

Ну, что - порадуем любителей остренького. Погода как раз благоволит для этого блюда - острые бараньи ребрышки.
Измельчённый чеснок и перец чили обжарьте 2 минуты на кунжутном и растительном масле, добавьте тимьян. 600 грамм рёбер промойте, обсушите и  жарьте 3 минуты в этой же сковороде, предварительно вынув все специи. Далее уменьшите огонь, посолите, поперчите и готовьте ещё минут 10.
Подавая к столу, украсьте рёбра кунжутом, а для остроты добавьте перчик чили.

When Chef Gaggan’s daughter was old enough to start eating regular food, he told us he wanted to create a curry for her but a Google search of ‘how to make curry for a baby’ came up fruitless. It was around the time of a collaboration dinner he had with Chef Ana Ros and so he asked her what she cooked for her children when they were young. Her response was the unlikely combination of curry, banana, and chicken liver! During the collaboration dinner they recreated the dish and served it, which was loved by all! This incredible story truly goes to show that collaborations between chefs are not just about 4 hands, but an opportunity for chefs to share, learn from each other, and create together. After the collaboration Chef Gaggan went home and made a version of the dish for his daughter which she loved too! Chef told us that whenever he travels for more than a week, he makes the curry, banana, chicken liver and keeps it in the fridge for her (❤️!) We can absolutely see why this combination is enjoyed by all- the flavours were a beautiful interplay of sweetness, spice, and rich meatiness on a sesame bread that gave a subtle nuttiness. And somehow the dish tasted even better knowing the wonderful story and meaning behind it 🍌

Our experience at Canlis began with alluring bites of æbleskiver oozing with tantalizing aromas from the blueberries. Æbleskiver is a traditional Danish pancake in a shape of a sphere. This amuse-bouche was made with salted blueberries and coconut milk, with a lovely golden-brown crust and an interior that was soft and creamy. Dusted with nasturtium powder which added peppery notes to the dish.

As we continued our culinary journey through India, the next dish took us to the South, inspired by the rice cake called Idli, a common breakfast food. In Gaggan’s version, the rice cake was light as air complete with a delicate foam which felt as though we were consuming a beautifully fluffy cloud of rice! 🍚

Now the following course was supposed to be fish however we were told the fish never arrived so the kitchen scrambled at the market to find ingredients to create a substitute which was a granola. But we should have known that things at Gaggan are not always what they seem. Once we ate the granola the truth came out, there was seabass in it! The sweet, salty, and chewy bite was a medley of dried apricots, nuts and fish. A clever and delicious trick to say the least! 🐠

If there is a restaurant that defines class and timeless elegance, it is indubitably Canlis @canlisrestaurant. I say this with utmost honesty, as with all four of my experiences here, they have consistently delivered superb execution of food and service. In fact, this restaurant has surpassed some of my personal 2* or 3* gastronomic experiences in other cities.  Canlis is located in Seattle, WA, a city that is not known for fine-dining making this restaurant a captivating gem of the Pacific Northwest.

Since it opened its doors in 1950, Canlis has seen six Executive Chefs who have graced the kitchen. The sixth and current chef, Brady Williams joined the Canlis team back in April of 2015 when he was just 28-years-old.

Chef Brady combines his Japanese-American heritage as well as his experiences as Executive Sous Chef at Roberta's and 2* Blanca in Brooklyn, NY in his cooking. The addition of Chef Brady to Canlis has definitely brought a refreshing, exciting and youthful flare to the seasonal tasting menu.

And as I was going thru the menu to choose another item,  the server came back to tell me that the chef is in the market and can grab a lobster for me.
