My husband and I are fond of spaghetti squash. It is a great way to eat vegetables & cut back on carbs at the same time.
Of course, if you want a good spaghetti, go for it because nothing can replace it. But I cannot have spaghetti everyday, can I? On the other hand, I can eat spaghetti squash every day, especially when it is abundant at the farmer’s market.
To make it even more appealing for the kids, I decided to serve it in a #pumpkin ! They gobbled it in seconds. Obviously, it is not for everyday meals but sometimes a little creativity and work does not hurt!
