Decided to honor that beautiful solar eclipse today with some fantastic homemade gluten-free flatbread pizza! Just add some pesto, tomato slices and basil to your dough and throw that beauty in the oven to cook to your liking. Vegetarian as always, and SO super healthy. Perfect way to finish off and speed up any slow Monday 🤤👊✨ Hope you all had some time to catch and enjoy the special moon tonight with some friends or even home with the family as I did! Finally got around to trying @traderjoes cauliflower pizza crust. I used fresh tomato paste and sprinkled basil, oregano, thyme, sea salt and pepper. Then, I topped it with some fresh veggies, caramelized onions and vegan mozzarella cheese. It made a perfect amount for lunch time for the hubby and I. Happy Thursday!

My mom and I decided it would be a fun project to tackle cooking 3 different types of box gluten-free pizza dough not realizing how long it will take with 1 oven. I believe we spent about 4 to 5 hours total but the results were DELICIOUS! Which brand did we think was the best and which brand should you avoid? Mushroom pizzas! 🍕🍕 Perfect for dinner, appetizers, or just because!
10 to 12 large mushrooms
1 fresh mozzarella cheese ball
1/4 cup parmesan cheese
1/2 cup sliced pepperoni
Italian spices to taste
Heat oven to 350F or 180C.
Remove the stem of the mushrooms.
Place mushroom tops on baking pan with a sheet of baking paper.
Cut the bottom of the stem and discard.
Finely chop remaining mushroom stems, fresh mozzarella, and pepperoni and add to bowl.
Add parmesan cheese and Italian spices to bowl and mix together until combined.
Scoop mix into mushroom tops.
Bake mushroom pizzas until cheese melts. Approximately 20 minutes.
Optional, but delightful: Dip in pizza sauce! 🍕
