Quite possibly my best batch of chili ever!
It's a bit on the spicy side- too spicy for the kiddos. So I cooked up some @eatbanza macaroni noodles and served theirs with a quick batch of vegan queso, while hubs and I scarfed on our spicy chili mac. It's warming, filling, and downright delicious.
Make it yourself!
1 onion, diced
1 Poblano pepper, diced
1 orange or yellow bell pepper, diced
3 cloves garlic, minced/pressed
1 16oz can organic tomato sauce
1 16oz can fire roasted tomatoes, diced
2 tbsp Adobo chili powder
1 tbsp cumin
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp Mexican oregano
Approx 2 tbsp molasses
2 16oz cans kidney beans, drained/rinsed
1/2 bag frozen corn kernals
Saute the onion, peppers, and garlic until soft, then add canned tomatoes, beans, spices, and molasses. Allow to simmer, covered for 30 minutes. Stir in frozen corn, simmer for 5 additional minutes.
Serve over your favorite (GF) pasta, and top with DF cheese, chive or green onion, crumbled tortilla chips, or avocado! 👊

So much of the flavors you know and love from a traditional dish but without the saturated fat and cholesterol! The whole family loved it- from the baby, to the finicky toddler, to my "everything is Ew" 8 year old, to my once meat-loving hubs... Lucky for me- I'm home to scarf the leftovers! And as I did, the toddler was leaning over my plate, looking for bites. 😄
Lentils are packed with all kinds of good stuff. 1 cup provides 16g (64% daily amount) of fiber, 18g protein, 20% daily amount of potassium, and 36% of your daily amount of Iron. I added some split peas to this recipe, and got some bonus fiber, protein, and a ton of extra Vitamin C!

I have never enjoyed breakfast as much as I do now. Whether it's oats or toaster waffles, all the flavors come from what I put on top.
Since berries are long out of season, it's been a lot of bananas- but I recently started chopping up a couple dates after reading how good they are for us (on Nutritionfacts.org) and love the added sweetness and flavor (and fiber!) they give. I discovered my new favorite Almond butter from trader joes, and still load up breakfast with omega-3 rich chia seeds and protein packed pumpkin seeeds.
They're piled so high I almost can't pick them up to eat them! 😆
I'm also cutting back- waaaay back, on my coffee for the time being. I'm hoping it's the answer to my sleepless nights with the baby... green antioxidant tea for me!
