I usually start with two smashed bananas 🍌 then add some cocoa powder, oats, homemade nut butter, seeds/granola, chia mix in a good processor/ by hand, form balls and refrigerate!! Made Vietnamese noodles to go - you just have to poor hot water in, till all noodles are covered. Wait about 3 minutes and enjoy!

What you need:

150 g rice noodles (Pho-Style)
100 g firm tofu
1/4 cucumber
1/4 zucchini
2 carrots
2 mushrooms
2 green onions

For the sauce:
1 tsp Pho instant paste 
1 tsp sesame oil
1 tsp ketchup manis
1 tsp sriracha

To serve:
Some lime and herbs like mint and coriander

Recipe:

Cook the rice noodles, wash them under cold water and put them in a 1,5 l Mason jar while wet. Pour the sauce ingredients in and whisk well. 
Try the noodles - they should taste a little bit salty because you will put water in before you eat it. 
For marinated tofu you can fold it into the noodles now.

Put the veggies in and you are good to go.

To serve:
Put water in till all the noodles are covered. Wait 3 minutes. Combine everything with long chopsticks and put some herbs and lime in. Enjoy!

After watching Blue Planet II I really and truly cannot buy bottled water and my charcoal filter stick in a carafe, I’m just not convinced it’s cutting it. β€’ 1 cup plant based milk
β€’ 1/2 avocado
β€’ 1 tbsp baking powder
β€’ 1 tsp powdered peanut butter or 1 tbsp nut butter
β€’ 1 tbsp lemon juice
β€’ Pinch salt
β€’ OPTIONAL: honey, vanilla, maple syrup (for sweetness), matcha powder, spirulina, etc (for coloring)
β€’ Coconut oil

1. Add rolled oats if using to food processor and pulse till you get a flour-like consistency
2. Combine with the rest of the ingredients (minus the coconut oil) and pulse until you get a batter
3. Heat up the coconut oil in your pan over medium heat
4. Pour pancake sized dollops on the pan and cook for 4-5 min each side* (depends on size and heat)
5. Top with your favorite pancake toppings and enjoy!

yes, i know this isn't vegan. i tried to keep this as plant-based as i could, but who eats lasagna without cheese? i didn't have any vegan cheese in my fridge, nor did i feel like going out just to buy it, and i'm slowly beginning to realize that veganism might not be the best diet for my particular body type. i did a food sensitivity test a few weeks back, and i got the results recently. turns out that i'm sensitive to cow's milk (i knew it!) and STRAWBERRIES and QUINOA. can you believe it? strawbs and quinoa? that really broke my heart.
i'm still not entirely sure how i "should" be eating, i'm still figuring out what works best for me, but one thing that i do know (that really confuses me) is that my body thrives better on an omnivorous diet than a herbivorous one. when i was vegan, i made sure to eat enough and get enough protein and eat a wide variety of foods to get an assortment of vitamins and minerals. but my stomach wasn't having it, and my digestive system kept going down a downwards spiral. i'm now incorporating more fish and seafood into my diet, and unfortunately, it actually seems to be working well. my skin has cleared up quite a bit, and i'm experiencing less aches and digestive pains. it's weird, isn't it? how what we want may not necessarily be what's best for us. πŸ€”
vegetarian lasagna! i made this beautiful baby with slices of eggplant, zucchini, nagaimo, and tempeh. i layered them with homemade marinara sauce in between, then topped it off with crumbled tempeh pieces and feta β‹™β‹—β‹™β‹—β‹™β‹—β‹™β‹—β‹™β‹—β€’β‹–β‹˜β‹–β‹˜β‹–β‹˜β‹–β‹˜β‹–β‹˜ yes, i know this isn't vegan. i tried to keep this as plant-based as i could, but who eats lasagna without cheese? i didn't have any vegan cheese in my fridge, nor did i feel like going out just to buy it, and i'm slowly beginning to realize that veganism might not be the best diet for my particular body type. i did a food sensitivity test a few weeks back, and i got the results recently. turns out that i'm sensitive to cow's milk (i knew it!) and STRAWBERRIES and QUINOA. can you believe it? strawbs and quinoa? that really broke my heart. i'm still not entirely sure how i "should" be eating, i'm still figuring out what works best for me, but one thing that i do know (that really confuses me) is that my body thrives better on an omnivorous diet than a herbivorous one. when i was vegan, i made sure to eat enough and get enough protein and eat a wide variety of foods to get an assortment of vitamins and minerals. but my stomach wasn't having it, and my digestive system kept going down a downwards spiral. i'm now incorporating more fish and seafood into my diet, and unfortunately, it actually seems to be working well. my skin has cleared up quite a bit, and i'm experiencing less aches and digestive pains. it's weird, isn't it? how what we want may not necessarily be what's best for us. πŸ€”
