-1 sobre de Açai
-1/2 taza de leche de coco
-1/2 plátano congelado

Vegan style “crab cakes” from hearts of palm, SO good, and even better topped with vegan mayo and paprika/Old Bay.. honestly have never been a mayo gal but this one tasted pretty dang good !
(Crab cake recipe from @washingtonpost “Hearts of Palm and Artichoke Cakes” and altered it by adding bits of another recipe by @veganhuggs - 1/3 cup chickpeas, 2T aquafaba, 1t vegan Worcestershire, 1t mustard, and omitted kelp; Vegan mayo recipe by @ohsheglows)
Made Vietnamese noodles to go - you just have to poor hot water in, till all noodles are covered. Wait about 3 minutes and enjoy!
What you need:
150 g rice noodles (Pho-Style)
100 g firm tofu
2 green onions
For the sauce:
1 tsp Pho instant paste
1 tsp sesame oil
1 tsp ketchup manis
1 tsp sriracha
Some lime and herbs like mint and coriander
Cook the rice noodles, wash them under cold water and put them in a 1,5 l Mason jar while wet. Pour the sauce ingredients in and whisk well.
Try the noodles - they should taste a little bit salty because you will put water in before you eat it.
For marinated tofu you can fold it into the noodles now.
Put the veggies in and you are good to go.
Put water in till all the noodles are covered. Wait 3 minutes. Combine everything with long chopsticks and put some herbs and lime in. Enjoy!

You can get the sauce ingredients in an Asian market.
Spaghetti Squash w/ Veggies & Cauliflower Alfredo. Tried out this recipe from @sproutingzeneats tonight and it was delicious. I just added in some extra veg cuz I had it on hand. No oil and tastes great. I’ll definitely be trying more of their recipes!

Lunch! 🥗😋 A simple kale, spinach and quinoa salad with tomatoes, walnuts and a maple-tahini dressing you HAVE to try!! For the dressing: take 1 small grated clove of garlic, ½ cup neutral oil, ¼ cup tahini, 3 Tbsp white vinegar, 2 Tbsp maple syrup, 3/4 tsp salt, ¼ tsp ground pepper. I use my Nutri Bullet to blend it, but you could whisk it together by hand in a bowl. 👌🏼 I served my salad with pan-seared tofu squares for some protein 💪🏼🙌🏼
After watching Blue Planet II I really and truly cannot buy bottled water and my charcoal filter stick in a carafe, I’m just not convinced it’s cutting it. Thinking of getting the ViaFoser water distiller to knock out impurities including flouride. What do you do for 💦 💧 water, anyone used a distiller ? The more I study, the more confusing it gets....!

Happy Wednesday! 🌈 Oatmeal bowls perfect for this cold morning! 💙💙 Turmeric buckwheat oatmeal with blueberries, green apple, banana 🍌🍌, quinoa puffs, brazil nut and a drizzle of maple syrup and @melrosehealth ABC spread! I’m trying to finish all my other spreads before I open a new bottle of peanut butter because I realised I always reach out for the peanut butter once it’s opened 🥜🙈 I’m also entering this breakfast bowl into @anna.culina #happyfood15k party 🎉 Anything with nut butter makes me happy!🙌🏻😇 Go show her some love and join the party💕 .
PS. I added a tsp of Maca powder and realised that the powder gets clumpy if I don’t whisk it in properly. Anyone else has the same problem? How do you deal with it??

Nature and the plant world really are kind of amazing. If we tune into the seasons with what we eat, we get what we need for right now. Look at all this beautiful seasonal fruit 🍊 🍊 🍋 🍋 , brimming with vitamin c and plenty more nutrients, helping to boost our immune systems to fight infections, flu and general lurgies abundant at this time of year....................................... Go get some! A good local greengrocer should have many more varieties than the predictable supermarket shelves here in the UK, and for much less £££
i made this beautiful baby with slices of eggplant, zucchini, nagaimo, and tempeh. i layered them with homemade marinara sauce in between, then topped it off with crumbled tempeh pieces and feta
yes, i know this isn't vegan. i tried to keep this as plant-based as i could, but who eats lasagna without cheese? i didn't have any vegan cheese in my fridge, nor did i feel like going out just to buy it, and i'm slowly beginning to realize that veganism might not be the best diet for my particular body type. i did a food sensitivity test a few weeks back, and i got the results recently. turns out that i'm sensitive to cow's milk (i knew it!) and STRAWBERRIES and QUINOA. can you believe it? strawbs and quinoa? that really broke my heart.
i'm still not entirely sure how i "should" be eating, i'm still figuring out what works best for me, but one thing that i do know (that really confuses me) is that my body thrives better on an omnivorous diet than a herbivorous one. when i was vegan, i made sure to eat enough and get enough protein and eat a wide variety of foods to get an assortment of vitamins and minerals. but my stomach wasn't having it, and my digestive system kept going down a downwards spiral. i'm now incorporating more fish and seafood into my diet, and unfortunately, it actually seems to be working well. my skin has cleared up quite a bit, and i'm experiencing less aches and digestive pains. it's weird, isn't it? how what we want may not necessarily be what's best for us. 🤔
