Good evening☺Yesterday I made a quiche with dairy-free cheese, spinach, tomatoes and kalamata olives. Here is the recipe! I love baked tomatoes, and so does my family! What about you? Yesterday we finished the quiche, but I'm sure that I'm going to make it again☺

Here is the recipe (for four):
♡175 g wheat flour
♡0,5 teaspoon salt
♡150 grams cold dairy-free margarine
♡1 tablespoon cold water
♡2 tomatoes
♡200 grams shredded dairy-free cheese
♡30 grams spinach
♡50 grams kalamata olives
♡Black pepper
♡Sea salt
Crumble in the margarine and knead in the water. Place the dough in a quiche pan, and use a fork to make some wholes in the dough before baking for ten minutes on 225 degrees celcius. Cut the tomatoes in four boats per tomato. Place the dairy-free cheese in an evenly layer in the crust. Add the spinach, the tomatoes and the olives. Sprinkle on some pepper and salt. Bake for 30 minutes on 225 degrees celuis, or until the crust is crispy and golden. Take a look at the quice from time to time. If it turns golden, place a sheet of aluminium foil on it, so if won't be burnt. Enjoy☺

Basil is one of my favourite herbs for its fresh and sweet taste, so I have a little plant in the kitchen. However, it never seems to live past a few weeks, despite regular watering and sunlight. I don't know what I'm doing wrong 💔😢. Anyway, pictured here is a little snack I have been enjoying recently. It's some toasted brown pitta bread spread with some pizza sauce or tomato puree (I also like to add finely diced tomato but I was out of tomatoes today), then sprinkled with garlic flakes, salt, pepper and nutritional yeast. One of my all time favourites: Sesame eggplant udon 🍜 This fast and easy dish is always a hit. 
RECIPE:
1. Sauté onion and garlic in pan.
2. Add chopped eggplant. 
3. Add 1/4 cup of water, 4tbsp soy,  2tbsp sesame oil and chilli flakes (to taste)
4. Turn heat to low and cover for 10+mins, stirring occasionally so it doesn't stick.
5. Once liquid has been absorbed and eggplant is cooked, stir in cooked udon noodles and sesame seeds.
6. Serve with fresh coriander, chilli, lemon, spring onion and more sesame seeds!

Recipe:
(Makes 2 large or 4 small servings)
2 green bell peppers 
2 cups button mushrooms
1 med. white onion
1 tbsp liquid smoke
Olive oil, for sautéing 
1 package @hodosoy braised tofu
1 package @fieldroast Chao cheese 
2 @scharglutenfree Baguettes .

To make:
Slice onion and start to caramelize in olive oil in skillet over medium heat; add sliced peppers and cover, stirring occasionally. Soak mushrooms in salted water, agitating and draining + replacing water 1-2 times to clean and brine. Slice mushrooms and toss with liquid smoke; add to pan (push onions & peppers to one side but continue to cook). Cut tofu block in half to form two narrow rectangles; finely slice these to form thin squares. Push veggie mixture to one side and cook tofu - it will soak up flavor as well. When everything is well cooked, divide into 4 sections in pan and top with 1-2 slices of Chao per portion. On very low heat, cover skillet so that Chao steams and melts. Cut baguette in half and then lengthwise; add portion of toppings to each section. Enjoy!

Good morning☺We often eat pasta in various meals, and we like it a lot, so I thought: why not try to make a pasta cake? This idea turned out to be a great idea, and the family was very pleased with the cake! I must say that pasta is an ingredient that you can use to make so many different meals. Have you seen my pizza with pasta as a topping? 
If you want to make my pasta cake with coconut and vanilla, here is the recipe:
♡500 grams vegan pasta (I used thin pasta made for soups)
♡5 decilitres coconut cream
♡4 decilitres coconut milk
♡150 grams brown sugar
♡1 teaspoon vanilla extraxt
♡1 teaspoon cardamom
♡0,5 teaspoon salt
♡Coconut flakes
♡Pearl sugar
Cook the pasta in salty water. Drain the water, and put the pasta in a 20 centimeter round cake pan. In a bowl, combine the coconut cream, the coconut milk, the sugar, the vanilla extract, the cardamom and the salt. Pour the liquid gently, little by little, over the pasta. If the liquid doesn't flow to the bottom by itself, use the back of a spoon to press the pasta down. It will make the liquid flow more. Decorate the cake with coconut flakes and pearl sugar, and bake on 200 degrees celsius for 45 minutes. Put a sheet of aluminium foil over the cake if it turns golden before the baking time is over. Cool the cake down before serving. Enjoy☺

I just mixed the ingredients together in a mason jar and let that sit overnight.

Just made with 2 frozen bananas, 2 tsps maple syrup, 5 soaked cashews, 1/2 tsp vanilla essence. Blend the ingredients together and divide into two portions. To one add 2 tbsps carob powder and to the other add a pinch of butterfly pea powder from @just_blends to get the indigo color and create the swirls. Top it with buckwheat groats and hemp seeds. (Had to post it again, Insta has been weird sorry for that)
