I know it might not look like much and I'm kinda over posting but I can't get over this gluten free sourdough. As someone who cooks mostly from scratch and likes to use real whole ingredients, gluten free baking so often feels like such a bummer, with all its xanthum gums and such... so this- entirely sourdough risen, with fresh ground buckwheat and oat flour; white rice and tapioca flour... it's as close to real bread as I'm gonna get #glutenfreesourdough

It's time when you need only tea and thinking about nothing.
I kind of forgot about Instagram for a bit there... Work got more hectic and my free time disappeared for the last week. I'm back with raspberry bread. I posted the recipe before but I modified it slightly again so here is the updated version. I topped it with almond butter, hemp hearts, and rose jam which is a Turkish import I found at my supermarket. Very fragrant. 🌹
GLUTEN-FREE VEGAN RASPBERRY BREAD v.2
- 2 flax eggs (2 tbsp ground flax + 5 tbsp water, left for 10min to gel up)
- 125mL unsweetened applesauce
- 75mL milk of choice
- 1 tsp vanilla extract
- 150g sugar
- 250g frozen raspberries
- 100g sorghum flour
- 60g corn starch or tapioca starch
- 40g buckwheat flour
- 40g almond flour
- 1 tsp psyllium husks or 1/2 tsp xanthan gum
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
>>mix wet together in big bowl
>>mix dry together
>>add dry to wet and mix well
>>pour into loaf pan lined with parchment paper
>>bake at 190°C for 45min
>>let cool before slicing

This is seriously giving me life this morning! It is like a WAY better version of the famous Sausage McMuffin! ⠀
I subbed the original sausage recipe in the book for pork from my recent @butcher_box. The biscuit is plantain based and even has bacon on it! Topped it off with some raw melted honey! Sunday Brunch is served! ⠀
Being AIP, breakfast can always be the hardest because of how we classify traditional breakfast in America, so it is nice to mix it up and have something that reminds you of a good ole American classic!
