If you are gluten intolerant and or practice a diabetic diet these little sweet biscuits are speaking your language.
Solely made from
3 cups almond flour
1/4 cup milk powder
1/4 cup coconut powder
2 tbsp. ghee
1/4 cup coconut milk
2 tbsp cocoa powder (optional)
1 tbsp. grated ginger
1/4 cup coconut nectar
Spices according to taste ~ cardamom powder, clove powder, cinnamon and vanilla essence.
Mix all dry ingredients in a mixing bowl.
Add the coconut nectar and gradually add the coconut milk (may not need to use all the milk) to form a sticky dough. .
Divide into 15 Gulab Jamun sticks and bake for 20mins at 250 degrees.
When removed from the oven let them rest for 15 minutes on a wire rack. They need to cool off in order to firm up 👍
Yes!!! definitely the taste is not quite the same but it's satisfying, and comforting the little sweet cravings this time around.
We will not be tossing these in sugar syrup, they are served up in all its natural beauty 😉

Love my food processor! Makes life and meal prep so much easier. Used whole almonds to make my own almond meal/flour added an egg, coconut oil, zest of 1 lemon, lemon juice and a few squirts of maple syrup blitzed it all up and when it all came together into 1 ball it was ready to form into balls for baking. My family & I love these cookies. They only take about 15min cook time & a short time to prep.
Healthy & Deeeelicious!
CHOC HAZELNUT COOKIES (gluten free)
💙1 1/2 cups of almonds, blitz into almond meal.
💙1 cup arrowroot/tapioca flour.
💙1/2 cup Rapadura sugar.
💙Pinch sea salt.
💙2 teaspoons vanilla extract.
💙1/2 cup organic butter.
💙1 tablespoon cacao.
💙Hazelnuts for decoration .
HEAT oven to 170. Line baking tray
MIX dry ingredients in food processor until fine.
ADD butter & vanilla & blend until a dough forms
ROLL into walnut sized balls.
After 5 minutes of baking, flatten with a fork and push a hazelnut into each cookie.
Bake a further 8-10 minutes.
Allow to cool otherwise they tend to crumble.
