And oldie but a goodie. I remade these the other day to take new photographs since I lost the old ones a few years ago from a laptop malfunction, but not sure how I feel about the new photos... oh well. The point is that they taste BOMB and you need them in your life/face NOW.

These are the BEST Veggie Tacos I have ever had (You need to try them!) Ingredients
3 small zucchini, sliced lengthwise
2 small yellow squash, sliced lengthwise
1 small eggplant, chopped
3-4 tbsp extra virgin olive oil
Salt and pepper, to taste
1 tsp chili powder
1 tsp cumin
Pinch of cayenne
1 avocado, pitted
Juice of 1 lime
1/2 red onion, thinly sliced
2 tbsp cilantro, chopped
1 lime, cut into wedges
8 Paleo tortillas
1. Place the zucchini, squash, and eggplant into a large bowl. Drizzle with olive oil and sprinkle with chili powder, cumin, cayenne, and one teaspoon of salt. Add pepper to taste. Toss to coat.
In a small bowl, mash the avocado with the lime juice and a dash of salt. Set aside.
2. Heat the grill to medium-high. Place the zucchini, yellow squash, and eggplant onto the grill and cook for 8-10 minutes, turning once, until slightly softened but still crispy.
3. To assemble, top each tortilla with a few pieces of squash or eggplant and red onion. Spread the avocado mixture over the vegetables and garnish with cilantro. Serve with lime wedges. ============

Good old pavlova is always a dessert winner 👏 Sunday's bake was topped with coyo vanilla yoghurt, thawed mango, tinned pineapple & passionfruit, fresh blueberries together with toasted coconut flakes. 😋 By using coconut yoghurt in the topping, this made the pav DF also 👌
I've been using the same pav recipe for as long as I can remember (I cut it out of a mag ... which mag 🤷🏻♀️I don't know 🤦🏻♀️). It's always perfect & not too sweet 💜
6 x 700gm egg whites (room temp)
1 1/2 cups caster sugar
2 tsp GF white vinegar
1 tbsp GF cornflour
▶️Pre-heat oven to 120c.
▶️Use an electric mixer.
▶️Ensure mixer & mixing bowl are squeaky clean & dry.
▶️Beat egg whites until soft peaks form.
▶️Gradually add caster sugar 1tbsp at a time (beat well after each addition).
▶️Add vinegar & cornflour - mix through.
▶️Spoon meringue into a round 20cm shape onto a baking paper lined tray.
▶️Bake for 1 1/2 hours.
▶️Turn off oven, leave door ajar & allow pav to cool completely.
⚠️Fellow Coeliacs ensure you read product labels for vinegar & cornflour to ensure they are GF. Remembering vinegar containing malt is NOT GF!

Thanks goodness, you do not need to be a pastry cook to prepare this cake. just simply combine 1 egg white with 75g of pumpkin puree, and a serving (60g) of @lilbuffprotein cake mix flavor of your choice. pour it in a microwave safe bowl and microwave it for about 2-2:30min, depending on your microwave.🤤
