This is my SEAFOOD PAELLA, one of my favourite Spanish dishes and a great dish for sharing with friends. More details in the post, link in bio.
¼ tsp saffron threads
8 oz bottle clam juice
4-5 cups GF chicken stock
1 Tbsp olive oil
1 boneless, skinless chicken breast cut in chunks
1 GF chorizo sausage, sliced
½ red pepper, chopped
¼ cup olive oil
1 medium onion, grated
3 tomatoes halved and grated to measure 1¼ cups
8 cloves garlic, 4 finely chopped and 4 left whole
½ tsp pimentón
¼ tsp salt
1¾ cups arborio rice
12-18 each mussels, scallops and shrimp
½ cup frozen peas
In a small frying pan toast the saffron until fragrant, 30-60 seconds.
In a saucepan combine clam juice and chicken stock, bring to a boil over medium heat. Remove from heat and set aside. Crush toasted saffron onto the clam juice and chicken stock. Set aside.
Heat paella pan over medium high heat. Add oil and sauté chicken and sausage for 5 minutes. Add red pepper and sauté 5 minutes. Set aside.
Set paella pan over medium-low heat, add oil. When hot add the onion, stirring occasionally until it softens, 4-5 minutes. Stir in the tomato pulp, chopped and whole garlic, paprika and salt. Gently cook the mixture in the center of the pan stirring frequently, until it becomes dark red and thick, 15-20 minutes.
When the sofrito is done, add the rice to the pan and cook over medium heat, stirring constantly to combine it with the sofrito, 1-2 minutes. Spread the rice evenly in the pan. Increase the heat to high and slowly pour the clam/chicken broth over the rice. From this point on, do not stir the rice. Bring to a boil and adjust the heat to maintain a simmer, moving the pan as needed so it bubbles all the way to the edges. Simmer vigorously, about 8 minutes.
Evenly arrange the shrimp and mussels in the pan, pushing them into the rice. Lower the heat so the broth maintains a moderate simmer and cook for about 5 minutes until shrimp is pink, scallops are cooked and mussels are opened.
Add the peas, cooked chicken, sausage and red pepper.
Simmer until liquid is absorbed and the rice is tender, about 5 minutes. The rice needs to simmer for about 18 minutes total.

✨Simple Pancakes 🥞
2 cups oat flour
2 cups almond milk
3 eggs .
2 large bananas
A Sprinkle if Cinnamon .
Add almond milk and oat flour together and let sit for 5 minutes. .
Mix eggs and bananas in a food processor or mash with a fork. Add mixture to oats and almond milk. Stir well then let it sit until it thickens. You can add whole oats or oat flour if you desire a thicker consistency. .
Heat pan on low with a little coconut oil, add 1/4 cup of pancake mixture to pan, let sit for 2-3 minutes on each side or until golden brown. .

Last night I lost all 6,000 pictures on my phone.
This morning I woke up to half of Reagan’s birthday balloons being deflated.
Then Reagan chucked my POS phone at my face and I am left with a fat lip.
I called my mom and like any other amazing mom she came right to my rescue.
I was thinking:
While I hate that my cloud only backed up half my images, half my contacts and half my videos — it could be worse.
I’m so very blessed to have a healthy daughter with a smile to light up the world.
It’s okay to be sad but when you put it into perspective we value technology SO much that we often forget how lucky we are to have the REAL thing to make those memories with.
This is coming from someone who earns a living on social media. So TRUST ME when I say this post is not easy😩
Today is such a special day. I get to celebrate the little girl who gave me life.
I might be a little more MIA than usual the next few days while I enjoy the moments with my family + then regather my life 😅
