Japan, such a beautiful place and such genuine people but in terms of the food - soy sauce and deep fried batter is highly abundant! Gluten free is not a commonly understood term in japan, even for those individuals who can speak good English. But this place called little bird was an absolute haven! Everything there is gluten free and they have dairy free options too. Try the gyoza and karage 👌 to die for! While you’re there I highly recommend grabbing some of the gluten free soy sauce (if you didn’t bring your own) so that you can take it with you on your journeys.

I threw a party for my husbands birthday this arvo, and absolutely could not be stuffed cooking dinner so this is my ugly but delicious post party meal: left over brown rice, 2 eggs omelette and homemade gluten free dumplings (I made a Japanese feast for the party and was supposed to serve these but didn’t get around to it)
It might not look like it, but this is a perfectly healthy meal (although not as veggie loaded as I’d like!), sometimes you make the best food choices you can 💕

Gluten free vegan herb dumplings 🌱 These are going in a vegetable stew ... and then in my belly 😬 They're super easy to make ... just 150g gluten free self raising flour + 75g gluten free vegan suet + water & dried herbs. Add enough water to the dry ingredients to form a dough. Firm not too sticky. Roll into dough balls, then add to your stew 20 mins before it's ready 😋 The stew is currently in the crock pot ... Have you ever noticed the tastiest meal is often the least attractive? Certainly the case here. Missing ingredients made me reinvent chicken and dumplings and honestly, it’s the best thing I’ve made in weeks. It was deemed, wait for it, #legendary so I guess this means I’m writing it down. And sharing it here. There are a lot of steps but just think of it as a fun afternoon of comfort cooking.
Chicken & Collards with Dumplings and Roasted Butternut Squash
Stewed Collard Greens
1 bunch collards, washed, cut into ribbons
4 slices sugar free bacon
2 medium onions, chopped
1 dried Serrano Chile
1/4 teaspoon chili pepper flakes
Cut cold bacon into small pieces and fry in Dutch oven until crisp. Add chopped onion & chili peppers and sauté until golden, about 7-10 minutes. Stir in collard greens & add 4 cups water. Bring to boil, turn down & simmer covered 30 minutes. Drain collards, set aside & reserve liquid to use with chicken.
8 chicken thighs,
4 tablespoons butter
8 ounces mushrooms chopped
1/3 cup flour (gluten free)
1/2 teaspoon salt or to taste
Liquid from collard greens
Melt butter in a heavy bottomed skillet or Dutch oven. Pat chicken dry, then season with salt & pepper. Add chicken to pan and cook 5 min on each side over med high heat until golden but not cooked through. Remove chicken to plate & set aside. Add mushrooms to pan over high heat & cook 2-3 min. Turn heat down to med high & stir in 1/3 cup flour. Stir continuously with wooden spoon for 1-2 min until combined & remove from heat. Whisk in liquid from collard greens. Return to heat and cook 3-5 min over med heat until boiling and thickened. Add collard mix to sauce then chicken and any reserved juices. Sauce should mostly cover. Cover, turn to low & simmer 20 mins. Add dumplings & simmer covered 10 more minutes. Serve over squash.
3 tablespoons butter
1/3 cup milk
1 cup gluten free flour
1 heaping teaspoon baking powder
In small pan heat milk & butter until simmering. Combine flour & baking powder. Stir milk mixture into flour mixture with a spatula & gently combine. Shape into golf ball size. Place on top of chicken.

I can confirm that Mao Please now have gluten-free pan-fried dumplings, when before their gluten-free dumplings were only available steamed. Better yet, these pan-fried pork ones don't have even a smidgen of onion and garlic so they're completely FODMAP-friendly. ZERO BLOATS from something that only ever gave me pain.

My Gluten-Free Dumpling recipe, I am guessing here folks, because I didn't measure. So experiment if it does not turn out, just like when you perfected the mud pie recipe, you just mixed and added in more ingredients, until it was just right! I am sure these could be done dairy-free too if needed, substituting in almond milk, cashew, coconut and a Tbsp of oil, like grapeseed, avocado #glutenfree , #glutenfreedumplings , #Chickendumplingsoup ,
