Not the super model of breakfasts, more like it's wholesome plain-Jane cousin. But really delicious anyway and perfect for a chilly morning. Topped with sultanas, nuts and seeds ✨
Two typical Italian specialties, here in their #glutenfree version! Focaccia on the left and arancino (or arancina) on the right! Arancini (or arancine) are stuffed rice balls which are coated with bread crumbs and then deep fried. They are usually filled with ragù (meat and tomato sauce), mozzarella, and peas. Awesomeness!! Haven't had one of those in ages!! #glutenfreeguru
Absolutely no filter needed here 😍 @oominoodles have launched in Sainsbury’s recently and you can find them in the fresh stir fry section (rather than the GF area)! I made their ‘Protein Packed Peanut Butter Stir Fry’ recipe from their website! Genuinely the BEST stir fry I’ve ever made, who’d have thought of putting peanut butter in a stir fry?! This cost me a total of £2.42 to get all the ingredients at Sainsbury’s! I love these noodles so much, such great macros on them as well and a fab way to increase your protein intake! Yesterday I went to @dennysdineruk that recently opened in town as a post exam treat! It’s only just opened in Swansea (and I think it’s the first in the U.K.?) and tbh I was pretty disappointed. We were waiting for absolutely ages to get a table, for our orders to be taken and for anything to even come out - including water?!? We had some nachos to share, which were alright but I could probs make better at home. Then I shared the ‘Bourbon Chicken Skillet’ as a main. The flavours were really nice in this but it was pretty expensive for what it was (sorry for lack of photo). The manager was very apologetic for the service, which was nice. I’ve attached loads of pics of everything GF on the menu! Would recommend to avoid for a few weeks till they get themselves properly set up over there ☺️

Inspired by @myglutenfreeguide and @theglutenfreesuitcase amazing waffles from @rawpressco I literally couldn't eat anything else for lunch today. My version is slightly different, based on which ingredients I had in but ohhhh my goodness it was delicious! So glad those fabulous looking waffles popped up on my feed. How I made the waffles 👇🏻(Serves 3-4)
•100g cooked butternut squash
•60g sweetcorn (roughly mashed with a fork)
•110g gluten free flour
•10g chickpea flour
•1/2 tsp baking powder
•1 tsp tumeric
•1 heaped tsp cumin
•1/2 tsp chilli powder
•1/2 tsp salt
•150ml almond milk
•1 tsp olive oil
Mix together all the dry ingredients with the spices.
Slightly warm the almond milk then blend together with the butternut squash, egg and olive oil. Mix the wet ingredients into the dry, adding in the sweetcorn.
Cook until golden on a waffle iron ✌🏻
Good morning! Just wanted to share these amazing little pancakes. I used @birchbenders gluten free mix, added a scoop of @vitalproteins and a scoop of Aria protein from @traderjoes. For the sauce I mixed @peanutbutterco powdered peanut butter with water and half a serving of pure maple syrup. So good! The PB only has 45 cals per serving and the pancakes 130 cals for two 4 inch pancakes. Not too bad! If only I had a #banana they'd be perfect! 🍌😅🥞

This worked SO well as a chocolate sauce substitute and is just made from dates, bananas, cocoa, almond milk and a bit of expresso 😍

Simple but good.
•60g banana (roughly half, the rest can be sliced and put on top)
•15g gf flour
•1 medium egg
Blitz together and cook in a greased frying pan. Top with yoghurt and fruit. (Makes 2)

To celebrate it being Monday, I made a big pot of coffee, then tipped it everywhere. Then I spent the next fifteen minutes cleaning coffee off every surface of the kitchen, then had to rush my breakfast 😡 I hate Mondays.. but then I'm pretty sure 99.9% of the population does. So I was thinking... 🤔 why don't we just cancel Mondays and create an extra weekend day? I'm taking suggestions for the new name.....

I do love a good Sunday roast but our January resolution is to eat less meat, drink less alcohol, eat less chocolate, go to the gym more bla bla bla... but even without meat this roast was pretty darn good. In the centre are mushrooms encased in a chestnut and pecan nutloaf with some gf pastry around the outside 👌🏻❤️
Following the release of these in @tescofood recently I thought I’d give the Rainbow Curry Bowl a try! Got some lovely flavour to it (besides the coriander which I’m not a huge fan of), very filling but just a bit too expensive to be a regular purchase! It’s £3.50 😱 macros are 311CAL, 26C, 7P, 18F! It is nice to have another healthy, gluten free and vegan option available though! Anyone else tried it?

What a lovely way to start a Saturday morning 😍 avocado toast and a poached egg 🥚 I’m trying to up my cals during meals because I find I’m snacking constantly during the day! So, breakfast macros are: 373CAL, 23C, 12P, 25F
🖤Gluten Free Welsh Cakes 🖤
I almost can't put into words how much I love welsh cakes. I'm Bristolian, only a stones throw from Wales so I view them as my own.
Last year I made some for a Spanish student of mine and she loved them so much that we later had an English class where I taught her how to make them. Perhaps in 50 years time there'll be a random area of Valencia which will be known for its famous Welsh cakes 😏
225g gluten free flour, sieved
1 tsp xanthan gum
1 tsp baking powder
110g salted butter
1 free-range egg
handful of sultanas
milk, if needed
85g caster sugar
extra butter, for greasing
Rub the fat into the sieved flour, xanthan gum & baking powder to make breadcrumbs. Add the sugar, dried fruit and then the egg. Mix to combine, then form a ball of dough, using a splash of milk if needed.
Roll out the pastry until it is a 5mm thick and cut into rounds with a 7.5-10cm cutter.
Rub a griddle or heavy based frying pan with butter and wipe the excess away. Put it on to a direct heat and wait until it heats up, place the Welsh cakes on the griddle, turning once. They need about 2-3 minutes each side. Each side needs to be caramel brown before turning.
Remove from the pan and dust with caster sugar while still warm.
Serve whilst still slightly warm with a cup of tea 👌🏻
Homemade Indian Paneer 🧀
Day four of #meatfreemondaytothursday (it has a ring to it don't you think?!) Tonight we had roasted cauliflower and paneer curry with basmati rice and gf naan bread. It was a win 💪🏻
I can't readily get 'unusual' ingredients where I live so I've learnt to make the things I really miss myself. Naan bread is an old favorite, SO simple to make at home, it's been funny this week seeing people waxing lyrical about M&S new gf naan bread, I will share my easy peasy lemon squeezy recipe below.
I was inspired by @pure_glutenfree a while back to make some paneer and having finally got around to it, I realize how easy and fun it was! I couldn't get my hands on any muslin cloth so I used an old (clean 😉) pair of tights and it worked fine! Will post method in comments.
Gluten free Naan bread
300g gf flour
1tsp xanthan gum
1/2 tsp salt
1tsp mustard seeds
1 heaped tsp dried yeast
150ml lukewarm milk
Mix together the dry ingredients and then add the warm milk.
Work into a ball and knead, adding a little extra flour or milk if needed until you get a soft dough.
Leave to rest until needed then roll out and cook in a hot, dry preheated frying pan until brown spots start to form or when it starts to puff up. Then turn and cook the other side. (If the pans hot they only take 30secs-1 min per side)
Holy chic peas! Ya gotta get some of this dessert hummus. It’s delish. They swapped out the savory hummus ingredients for sweet. It was the perfect little dessert I needed post dinner that didn’t make me feel like a turd. Kiddo approved too!

I'm making up for my childhood now by eating as many eggs and soldiers as possible. I didn't like eggs when I was a kid.... whyyy?! 🤷🏻♀️ They are so versatile and delicious. (I'm still not a fan of hard boiled eggs but with a runny yolk and toast, that's what dreams are made of 💖)

It was at the expense of my diet but ah well sometimes that happens 😂 tried to make up for it with this evening’s meal, which is half a tin of Tesco mixed bean salad, and one of their cod fillet sweet potato fish cakes 😍 macros for this meal: 347CAL, 46C, 19P, 7P

Return of beautiful breakfasts!! Finally home and back to routine means I'm back in my kitchen and back in control! I love eating out but after nearly three weeks of it I'm glad to be home. You always end up eating more unhealthily when you eat out and my body is screaming for vegetables 😩 In fact we're going to attempt meatless and alcohol-less Monday-Thursday.... baby steps people! I'm no martyr 😂
Coconut & Cashew Granola recipe is posted a few weeks back 👈🏻 and for the apple rose I just sliced half an apple and put it in a bowl of water in the microwave for a minute then rolled them up ✌🏻
Back on it with the stir fry!! Used mixed veg from Tesco, a pepper, some frozen peas, tuna, Oominoodles and I topped it with some sweet chilli sauce 😍 so glad to be eating nutritionally again 🥗🥦 macros: 315CAL, 17C, 27P, 14F

Homemade turkey meatballs...well, not really perfect round balls, more like turkey blobs! 😂 Swipe for how-to process ☝
Turkey mince, garlic, ginger, onion, green pepper (or red/yellow) parsley, corriander, cumin, and an egg. Fried to seal and brown then into the oven. Tasty! Bit on the dry side, but the cumin definitely gives it a richer taste. It's always good to use an 'actual' recipe, this is what happens when I make up quantities and ingredients up myself!🙈➡
