Gluten Free Penne Rosa
Tastes a lot like the dish from Noodles and Company! So delicious!
Ingredients • 16 oz Gluten free penne pasta
• 1 lb boneless chicken breasts
• 8-10 oz fresh spinach
• 1 (14 1/2 ounce) can Italian-style diced tomatoes (drained)
• 2 (16 ounce) jars alfredo sauce • 1 (8 ounce) can tomato sauce
• red pepper flakes
• parmesan cheese (optional)
1. Fill a medium size pot with water and add red pepper flakes, bring to boil, add penne noodles.
2. Cut chicken into pieces and cook thoroughly. Set aside and keep warm.
3. In a large saucepan mix Alfredo sauce, tomatoes, tomato sauce, spinach and more red pepper flakes (to taste). Simmer on low for 15-20 minutes.
4. Drain pasta and place in a large serving bowl.
5. Add chicken to pasta and stir.
6. Add sauce and stir.
7. Serve immediately and sprinkle with Parmesan cheese and additional red pepper flakes if desired.
I was exhausted tonight and not in the mood for cooking, so I picked the easiest Sun Basket we had. This is gluten-free orzo with a sun-dried tomato pistou. I altered the recipe slightly - no goat cheese for me, and I added kale and a fried egg, and it was good! The orzo is made from quinoa, and I messed up a little and didn't stir it, so it was a little clumpy, but the flavors were great and this only took me about 30 minutes to make! It was a good, quick, and easy dinner.
SO happy to be back home at our local farmers market, and can’t help to reminisce on the Italian farmers market we visited ☺️🥒🥕🍅🍠🥑🍊🍋 this week we picked up string beans, spaghetti squash, butternut squash, lettuce greens, fresh herbs, persimmons, jujubes, and more... what about you?!

So I've decided to make a load of NO BANANA smoothies 🍌 I actually love bananas but I've realised that too much ripe banana doesn't love me 😮 (& im not a fan of underripe banana, who is?!) 😝 I'm also always asked if I have any no banana smoothie recipes so I thought I'd make a few to help you guys out 😇 These smoothies are all low FODMAP, gluten free, dairy free & oh so yummy 😋 I'll link to the recipes in my bio - the post is a bit of a different one for me, showing you how to prep your smoothies in advance. Let me know what you think 🙂 What are your favourite smoothie flavours?
Who wins?? (It's a no brainer for me.😆) ⬆On the left we have your typical (though at least gluten-free rice noodle natural variety) macaroni and cheese, courtesy of my mini me (who I haven't yet fully converted to mostly grain-free😬)...And on the right we have butternut squash 'noodles' (courtesy of Target!😅) mixed with grassfed butter, sea salt, onion powder and aged parmesan plus feta cheese......No brainer right?! Well at least for health and fat-burning purposes. Nonetheless, there was no competition with who got done first...we both gobbled them up waaay too fast. 😋 Lesson of the day- ◾There are plenty of tasty healthier fat-burning friendly alternatives to just about anything you can think of, IF you take the time and make the effort to find them. ✴P.S. My butternut squash noodle 'mac n cheese' actually took less time to prepare than the boxed mix. (Partially due to the lovely fact that the squash 'noodles' were already prepared by the awesome company that sells them....but still!)
💦don’t forget to hydrate! Do you keep a water bottle by your side? 🙋🏽 💦💦💦💦💦💦💦💦💦💦💦
Did you know? ... Glucose cannot leave the body without a water molecule attached via urination. Thirst is your body’s cue for help in removing excess glucose. Drinking water and going to the bathroom are PLAN A to get glucose out of your system.
Plan B? Fat storage. Yep.
So basically, if you don’t want to be inconvenienced by frequent bathroom visits you are choosing fat storage. Drink your water!
Also water intake is 💥imperative💥when you are taking detoxing supplements such as Plexus!
And “hunger” is often more of a queue that you are really thirsty!
#ddrink water 👆🏼💦🙌🏼
