Making veggie stir fry. My family gobbles this up, no matter how much I make, we rarely have leftovers. It's simply zucchini, peppers, sweet onion, corn and carrots. I cook them with coconut oil, salt, pepper, curry powder and veggie base. We eat it with short grain brown rice. It's been a busy week so meal planning never happened and eating out was my only option between work, dates and studying.
When I make meals I always want to know what I'm making and have the right ingredients. Having random ingredients throws me off. .
But that changed this morning. .
I woke up early enough to make breakfast and lunch for me and bf. It only took 30 minutes! I sautéed leek, parsnip, Italian sausage and spinach together, and added rice noodles. .
Result? I enjoyed it and knowing I made this to nourish myself got me feeling all warm and fuzzy inside.
Use what you have, experiment in the kitchen and have fun. 💕

Vegan Pasta with Butternut Squash "Cheese". .
So this delicious recipe was actually a mistake! The Butternut Squash did not hold its shape and became kind of mushy. After tasting it, it had a very similar consistency to mac n cheese! It's so flipping good! .

This mornings smoothie bowl 😍 here is the rough recipe for you to try ⬇️
To my @ninjakitchenuk cup I added 3/4 cup frozen blueberries, small handful of pineapple chunks, half an avocado, 1 tbsp of @linwoodshealthfoods flaxseed and chia seeds, 1 tbsp @thatprotein cacao protein along with roughly 200-250ml of @rudehealth almond milk and blended until smooth. I then topped it with @coconutmerchant coconut flakes, @therawchocolatecompany cacao nibs and some @kokodairyfree yoghurt stirred through 🤤
