New favourite #glutenfree snack: home made trail mix! Love eating this in the US when we visit, but not a massive fan of all the salt they put in their packets 🤔🤷🏻♀️ so instead, grab a jar and throw in some plain nuts and raisins and some m&ms: bosh. It's SO addictive though. This tiny jar doesn't last long...
White Bean Pumpkin Chili for dinner tonight! It did NOT disappoint! 🤤
1/2 tablespoon olive oil
1 pound ground turkey
1 small onion, chopped
1 jalapeno pepper, minced (seeds and membranes removed for less spicy)
3 garlic cloves, minced
1 ½ teaspoons chili powder
2 bay leaves
1 1/2 teaspoons cumin
1 teaspoon oregano
1/4 teaspoon cinnamon
½ teaspoon each salt and black pepper, or to taste
1 (15 oz can) white great northern, rinsed and drained
1 (15 oz can) navy beans, rinsed and drained
1 (15 oz can) pumpkin puree (not pumpkin pie filling)
1 (7 oz) can chopped green chiles
2 cups low sodium chicken broth
Heat 2 teaspoons oil in a large saute pan over high heat. Add ground turkey and cook until no longer pink. Add to crock pot.
Add remaining oil to saute pan. Add in onions and jalapeno; saute for 2-3 minutes. Add in garlic and sauté for an additional 1 – 2 minutes. Add cooked vegetables to crock pot.
To crock-pot add herbs and spices, beans, pumpkin puree, green chilies and broth. Cover and cook on high for 4 hours or low for 7-8 hours.
Remove bay leaves and adjust seasonings to taste, if needed.
** I left out the pepper and onion so that the kids would eat.
1.5 cups is 1 red, 1 yellow, 1/2 purple for those of you who are counting colors. Enjoy! 🎃🥄

Eating healthy while traveling can be a real challenge, UNLESS you're somewhere near a Trader Joe's. This easy salad-to-go came from 1 stop: 1️⃣ Lemon Garlic Roasted Chicken (pre-cooked) 2️⃣ Broccoli & Kale Slaw w/ dried cranberries 3️⃣ Chunky blue cheese dressing. SOOO GOOD! Try it for an easy lunch at work, lazy dinner or on-the-go meal. #nomnomnomnom
SALAD 🥗 SUCCESS TIPS:
-Make sure you make enough dinner for leftovers the next day. -When you buy lettuce or spinach, clean and dry it right away and place layered with paper towel in a ziplock bag. I avoid buying pre washed salads as half the time they are slimy after a few days. It’s a bit more work but you will eat it way more and it keeps a lot longer. I clean kale as I need it. It keeps well in the fridge. Use a tea towel to dry your kale. -Keep on hand your favourite salad toppings like seeds, avocado, sauerkraut, goat cheese, nuts etc. -Switch things up and add fruit. -Use what you have in the fridge instead of wasting your leftovers! -Bring a big bowl to work to toss all your salad fixings before you eat.
For this salad I only had to cut a few cherry tomatoes. That’s spaghetti squash from my father in law’s garden 👌🏻. The sweet potatoes I made last night using a recipe from @laurasfuentes website. It’s called “sweet potato tater tots”. Only 2 ingredients! Happy hump day...here's some thoughts of weekend home fries brunches to get us through... 🤔💭☕️ (in the pan: par-boiled diced potatoes, spinach, pancetta, spices and we'd top it with a fried egg. Would make an excellent #glutenfree lunch too!)

I roasted the veggies last night (pumpkin, cauliflower & onion with olive oil, fresh thyme and dukkah) and then added the egg and kale this morning!
