We have a very busy weekend with birthday parties 🎂, so it's nice to get my workout in early so I don't have to worry about it for the rest of the day!

I thought it would be really uncomfortable going somewhere with people I've only ever met online, but it was like getting together with old friends!
They say like attracts like, and that was never more apparent then tonight!

We celebrated the first day of fall with a @traderjoes #glutenfree pumpkin haul. We've already finished a box of the crackers, started our yearly stock up of pancake mix, plan on making some nachos for a Friday night treat with the tortilla chips, and am seriously mad at myself for not buying the pumpkin cream cheese! Loving all the options at Trader Joe's right now!

Many of you know that I am gluten free, and after asking you for good gluten free pasta brands (thank you! ❤️) I took some of your advice and used this low starch vegetable and it tasted great! .
Something I am increasingly aware of is that gluten-free doesn't automatically = healthier... (that study showing increased risk of diabetes?🤷♀️) but I think it's cos many are highly processed and refined, so I am seeking more whole-food whole-grain options. This is a great option But man, spiralizing those squash was tiring 😂😂 I need to get myself a proper spiralizer (hubs will be ecstatic at another kitchen gadget 🙊🙊)
Last night we celebrated my Grandma's 82nd birthday at the Market Street Grill. I've had two amazing experiences there since my diagnosis. Our waiter was fantastic; his wife even has celiac. It is so nice to have people who understand when you eat out!! My meal was delicious and I cheated on my calorie counting and indulged in the creme brûlée. If you are in Utah they are a great option. They have a restaurant in the SLC airport if you need a GF meal during a layover. Now if only I could find a way to make their amazing clam chowder GF at home! Back in my gluten days I would grab a bread bowl and chowder any time I had to fly for work. Thanks @market_street_grill I'll be back!
I'm currently reading this book and I give it too huge 👍👍 up! I wish the doctor would have given me this book when I was diagnosed last October. The book is from 2008 but the history of CD, emotional impact, recipes, and struggles of your first year are SO relevant. I had no idea that early celiacs ate a diet of only bananas and milk. 😳 Yikes! I'm so grateful I have more options and resources! I found this book at the library and I'm glad I did! I was so excited to find @birchbenders Paleo pancake mix @target! The monk fruit made them much sweeter than I expected. Of course, my boys weren't complaining! Love how easy, healthy, and delicious these are.
My brother-in-law is Italian 🇮🇹 the real kind. The kind that's born and raised there and owns his own vineyard [with my sis 🙌🏼]. The kind that was raised by a nana who taught him how to cook 👨🍳 like a real Italian should - with precision, flavor, and simplicity. This here pictured is "his" pasta recipe [although nana would say it's hers and now I'll say it's mine because of the changes I've made to it]...in any case, it's a bowl of sunshine ☀️ and you need to try it. First start to boil some water so you can cook 2 cups @explorecuisine GF organic chickpea and red lentil penne, or any pasta that you like really. Also boil fresh organic corn 🌽 and cut it off the cob to add as garnish. To make the sauce melt coconut oil on your skillet and sautéed half a sweet onions thinly cut, along with four juicy garlic cloves mashed, and 2 small carrots 🥕grated. Add salt and peppa' and cook till caramelized. Once this starts going it's time to boil your pasta with generous amounts of sea salt for good flavor. Once the veggies have caramelized add one can of @wildplanetfoods wild albacore tuna [if you're vegan obviously skip the tuna, but if you're like me and you eat fish and meat sparingly don't skip it - it's what makes this SO DARN GOOD - trust me!] mix the tuna well into the onion and carrot combo then turn off heat. With tongs drop in the hot pasta into the skillet - don't drain it! You need all that extra bit of water that comes along for the ride; it's what softens the sauce and makes it all come together. Finally, add generous amounts of olive oil [like, go for it] and salt and pepper to taste. That's it. It's so fast and so delish. Top it with the fresh corn and parsley and let your kids try it too - they'll LOVE it. Simple cooking with minimal ingredients. Current mood : everything healthy. My poor body is fighting something so with little time and energy, I tested my #instapot out! I watched a 10 min. YouTube and got to work. It took a fraction of the time and the soup tastes 100 times better than my old stove top method. I share how I did it on my stories. I'm really impressed!!!
