Super simple and delicious zucchini crust pizza! 3 zucchinis shredded, ~1/2 cup chickpea flour, ~1/2 cup coconut flour, 2 eggs, salt & oregano. Mix, form into a crust on a parchment paper lined pan, and bake for 20 minutes or until golden. Top with whatever you'd like - I did tomato sauce, truffle goat cheese, a little Parmesan, and arugula. Bake for another 5-10 minutes, and enjoy! 45 minutes total of simple prep and cook time, full of healthy proteins, fats and carbs, and so satisfying! 👌🏻 .
