Some of you know that I've been attempting to become dairy-free for a lonnngggg time. Like, probably 3 years or so. I've struggled so much because I LOVE cheese. Milk, don't care. Ice cream, don't care. Yogurt, care a little bit. But cheese? Omg. SO hard to part with! And one of the main reasons is that PIZZA is one of my favorite things EVERRRR
The first exciting thing that happened in regards to dairy-free pizza was finding @beaujospizza . Once I tried Beau Jo's gluten & dairy free pizza & fell in love, I knew I could make it myself, it would just take a lot of trial & error. Well, last night was my first attempt in my friends' woodfired pizza contraption and it actually wasn't a complete disaster. I did have to add a little goat cheese because my cheese choice was rough (sorry Trader Joe's, your vegan mozz is less than perfect) but I added a bunch of toppings so it was definitely palatable. But today... omg. Today I discovered @miyokos_kitchen mozzarella cheese & my life is forever changed. I'm SO FREAKING excited. Guys, I literally ate it with a spoon. I kid you not, it's THAT good.
So anyway, this is my saga about my struggle to find a palatable vegan cheese 😂 I hope that some of you can relate because it isn't easy. But don't give up, because there ARE some good options out there, you just have to be willing to spend a little more & to search high & low. And definitely give @miyokos_kitchen a try! You won't be disappointed.

Today I made this glutenfree pizza!
I think it's my first gluten free one 😳🤔
So anyways! I used chickpea flour...it has literally THE MOST DISGUSTING smell on earth..I'm not gonna lie I has to hold my breath to not throw up 😅😬😐 But as soon as you bake it, the smell completely disappears (Thank 'god')
I also used yeast, salt, brown sugar and nutritional yeast ..oh and water!
I put way too much water in (thats what I thought) so the 'dough' had a creamy consistency...turned out to be pretty good!!👍🏽👍🏽💪🏽💚🍕🍕 The next time I'll cut out the sugar part 😅😅🙄😖

Gluten-free pizza bases (@white_rabbit_pizza_co) topped with:
🍕 3hr tomato sauce (spiked with anchovies), tinned sardines (@fish4ever_recipes), grilled courgette, organic buffalo mozzarella (@laverstoke) and oregano. 🍕 Sautéed beetroot and onions, roasted butternut squash, mozzarella, Sicilian ricotta salata cheese and oregano. 🥗 Sides: fried padron peppers (swipe left - playing Russian rulette with these, some are really hot, some not, from @riverford), crispy pancetta and green salad.
Attention to anyone who likes pizza (and eats dairy🍼)! Particularly rubbish Monday? Then you should get on our lit 🔥vegetarian 🥕 pizzas. The Vegetariana (aubergine🍆, courgette🥒 and pepper) and the Regina (goats cheese 🐐🧀 and caramalised onion). Destined to release endorphins and happy hormones in all who eat them, even the carnivorous 🍗 kind ❤🐇🍕

Experimenting with cauliflower pizza crust and assorted veggies. This one is topped with tomato sauce, home grown zucchini, leftover garlic roasted cauliflower and torpedo onion, artichoke hearts, Miyoko!s vegan mozzarella and fresh basil. Good stuff! #husbandapproved#tasteslikemore

After walking ALL OF THE MILES through ALL OF THE CITY, working out was the last thing I FELT like doing.
I took my rest day on Saturday and I told my girls in my virtual gym that I'd make up for it today. As much as I wanted to say all that walking counted as a workout, I knew it wasn't good enough. I knew there was more to give. And I knew that I had a responsibility to my virtual fitness team to be the example..so I did what I'd tell anyone of them to do "JUST DO IT!!!!"
30 minute cardio sesh. Got my butt HANDED to me. And then I handed my butt a gluten free pizza 🍕 because after all, I'm in NYC and well, I DESERVED IT 😜🙌🏼 fitness and pizza. They go well together 👌🏼
