A bit of a departure from our typical style, but just made this white chocolate coconut cake with berry coulis from @plantlabculinary and it's AMAAAZING! Feelin' all gourmet over here 😏🍴We adapted the recipe to make it a bit more seasonal by adding in fresh beet juice (see this morning's post), cinnamon, chocolate chai sauce & a fall fruit coulis of cranberries and concord grapes and then topped with pomegranate seeds & orange zest. GF pork sausage on the side, pinched from husband who is having a sausage sandwich. 😁 Finished with olive oil and sea salt. Overnight oats in ma @peanutbutterco White Choc tub cuz ain't no peanut butter going to waste in this household 😌

I keep skipping breakfast, causing me to overdo it at lunch 😩 So, am trying my best to get back on track and prep as best as I can. To start, I threw this together in 5 mins and bam, breakfast done!

Here's how I made it:
~ 3/4 Cup Coconut Milk made w/ a tiny bit of protein powder to thicken up. Use whichever one suits your diet best.
~ 1 Tsp Chia Seeds
~ 1 Tsp Flaxseed Meal
~ 25g @pipandnut Maple Peanut Butter
~ 1 (generous 🙄) squeeze of @bulkpowders_uk Zero Maple Syrup
~ Handful of @waitrose frozen cherries
~ 1 @danone.es Soy Yoghurt
~ 1 Pack @quakeroatsuk GF Oats

Mix it all up in the empty jar, making sure the oats are all soaking and layered as you prefer (adding more toppings if you so please). Then leave them to chill TF out in the fridge and enjoy the next day! ⏲

There is also a huge benefit in eating overnight oats (aside from the time-saving). As the oats soak overnight, their starches break down which improves digestibility. The soaking acts like a long cooking, which you won’t get from just heating them in the microwave or in a saucepan. (You'll find that most people who suffer from digestive problems, find overnight oats much easier to stomach for this reason).

PLUS... It tastes like dessert and dessert for breakfast is a beautiful thing...so win/win 💁🏼

I love fish. Fish on fish? Win win. 
Recipe for 2: 
1/2 cup gluten free bread crumbs (I love @clearspringuk brown rice bread crumbs) 
1 tbsp drained capers 
1 tbsp chopped parsley 
2 cloves of garlic minced 
A big punch of sea salt 
A few fringe of pepper 
Zest 1/3 of lemon 
1 tbsp lemon juice 
2 tbsp extra virgin olive oil 
2 sea bass or sea bream fillets 
4-6 anchovy fillets 
Preheat the oven to 230c. Line a baking tray with baking paper. 
Mix all the ingredients till it looks like wet sand. Place fish on the paper, and divide the ingredients between the two fillets and lay on top. Put as many anchovies as you like on there - I like as many as 3 on top of each one. 
In the oven for about 20 minutes. Devour. 
Tip: for the children: I Pan fried their fish in a little olive oil. This way, I’m making fish for the whole family - even if a little modified.

Gluten Free Zucchini Fries 🍟 
A delicious side dish and alternative to French fries.
Very easy to make!
1. Slice zucchini into small slivers- they can be all different shapes and sizes.
2. Add egg to a bowl - i used 2 eggs for two zucchini. 
3. Add #glutenfree Breadcrumbs to another bowl. I used crumbs from @iansnaturalfood Start off with a cup and add more as needed.
4. Dip zucchini sticks into the egg and then into the breadcrumbs and place onto greased pan. 
5. Heat at 300° for 10-15 minutes 🥒🍟

Celebrating #tacotuesday with this colorful combination 🌈this is the first time I've actually made tacos on the proper day of the week so I'd say that's a win! 🎉 Speaking a bit about non food related things, I woke up to a not so great internship rejection email this morning and it being the first thing I saw I immediately felt like it was "just one of those days." The whole morning was a struggle, until I showed up for my weight lifting class. This semester I am taking a 1 unit PE class and honestly my coach and other students (along with getting in great workouts between classes) constantly turns my day around. The point of this long caption being, never underestimate the ability of doing things you love to cheer you up, and if something less than perfect happens turn the day around! Happy Tuesday! 💕

Mixed bean turkey chili - PERFECT for fall ⠀⠀⠀
⠀⠀⠀
Sauté one chopped yellow onion, 1 chopped bell pepper & 3 cloves minced garlic in a large drizzle of olive oil over medium heat until soft (2-3 minutes). Add in 1 lb lean ground turkey and your favorite spice blend. I like things spicy so I used chili powder, cayenne pepper, black pepper, cumin & sea salt. Break up the meat and let cook for about 5 minutes. Pour in:

1 28 oz can of crushed tomato
1 can black beans (drained)
1 can pinto beans (drained)
1 can corn (drained) ⠀⠀⠀

Mix well and bring to a boil. Reduce heat to a simmer and walk away. I let everything simmer together for about an hour to allow the chili to thicken. ⠀⠀⠀

I topped mine with some fresh jalapeño and green onion but some shredded cheddar and avocado would be great additions as well. ⠀⠀⠀

This recipe serves 6-8. Don't make the mistake I did and make sure you store it in a container big enough to hold it all. I've gotta go clean chili off my kitchen counter ...

National Pasta Day!!! On pouvait pas choisir meilleure journée pour essayer la recette de @troisfoisparjour de pâtes sans gluten avec tapenade aux carottes. Mon verdict?! Bien bonne façon de venir à bout de mes vieilles carottes 🙈 pis c'est pas mal simple comme recette. À part la coriandre fraiche, tous les ingrédients sont de base donc déjà dans le garde-manger ou au frigo. Faites juste attention de bien choisir des noix et épices certifiées sans gluten, sur ce... bon app! 🍝

These are the BEST Veggie Tacos I have ever had (You need to try them!) Ingredients

3 small zucchini, sliced lengthwise
2 small yellow squash, sliced lengthwise
1 small eggplant, chopped
3-4 tbsp extra virgin olive oil
Salt and pepper, to taste
1 tsp chili powder
1 tsp cumin
Pinch of cayenne
1 avocado, pitted
Juice of 1 lime
1/2 red onion, thinly sliced
2 tbsp cilantro, chopped
1 lime, cut into wedges
8 Paleo tortillas

Instructions

1. Place the zucchini, squash, and eggplant into a large bowl. Drizzle with olive oil and sprinkle with chili powder, cumin, cayenne, and one teaspoon of salt. Add pepper to taste. Toss to coat.
In a small bowl, mash the avocado with the lime juice and a dash of salt. Set aside.

2. Heat the grill to medium-high. Place the zucchini, yellow squash, and eggplant onto the grill and cook for 8-10 minutes, turning once, until slightly softened but still crispy.

3. To assemble, top each tortilla with a few pieces of squash or eggplant and red onion. Spread the avocado mixture over the vegetables and garnish with cilantro. Serve with lime wedges. ============

Simple breakfast idea -- onion and potato omelette / kind of a quick spanish tortilla -- made really quick with canned new potatoes. 😊 .

Ingredients: canned new potatoes (345g) + 1 small onion + 3 eggs + 130ml milk + 1 Tbsp olive oil + salt + black pepper .

Directions: 1. slice the potatoes and onion, 2. pan fry the potatoes for a few minutes on medium heat in olive oil, 3. add the onion and pan fry until soft, 4. add salt and black pepper, 5. Beat the eggs with the milk, 6. lower the heat to low and add the egg/milk mixture, 7. Place a lid on the pan and cook for 10-15 mins. .

Anything that I can meal prep days in advance works the best. 🙌🏻 This is a Spicy version of my normal Buddha Bowl with quinoa, chicken, jalapeños, @hopefoods Spicy Guacamole and Sriracha hummus, sweet potatoes, and green onions. 🌶 It is FABULOUS. 💕

Baked in a pre-heated oven of 400F for 10-15 min or till cheese is melted to desired level. (I like my cheese to have a crispy edge!)

Mushroom lasagna (gluten-free)😋😋😋😋😋😋😋😋 Ingredients for 4 people:
⭐️ 450 gr mushrooms ⭐️ 2 onions⭐️ 1 garlic clove ⭐️ 1/4 cup plant-based milk ⭐️ 2 aubergines ⭐️ 1 can peeled and chopped tomatoes (350 gr) ⭐️ 2 tbsp chickpea flour ⭐️Salt and pepper ⭐️ 1/4 cup white wine ⭐️ parsley ⭐️ basil ⭐️ Olive oil
How to make it??? 🍳
🔹Cut the aubergine into slices and add some salt 🔹Clean, peel and chop the onions, garlic and mushrooms 🔹Add 2 tbsp of olive oil in a pan and start cooking 1 chopped onion and the garlic (2min) 🔹Add the mushrooms, salt, pepper and parsley 🔹Cook for 3 min 🔹Pour the white wine to the mushrooms and cook over low heat until the alcohol evaporates (2-3 min) 🔹Add 2 tbsp of flour and blend for 1 min 🔹Pour the hot milk into the pan and blend again for 1 min 🔹 Grill the aubergine in another pan 🔹Prepare the sauce 🔹Add in a pan 2 tbsp of olive oil and the rest of the chopped onion 🔹 Cook for 2-3 minutes 🔹Add the chopped tomatoes and continue cooking (3-4 min) 🔹Add salt, pepper and basil 🔹Place in an oven tray the tomato sauce, then make layers with the grilled aubergine and the mushrooms mixture 🔹Bake it for 10 min at 180º and turn on the grill for another 3 minutes
