It’s been too long since I’ve had a homemade salad. This was today’s lunch cos I needed some fibre!! Avocado, homemade coleslaw, greek(ish) salad, radishes, 1 spring onion, a dollop of hummus on a bed of spinach and rocket... 🥒🍅🌶🥗🍋🥙🥑
Meal prep idea >> I like to do two trays of roasted veggies simultaneously. I spray everything with @traderjoes coconut oil spray and then roast at 400 for 40-45 min. Pictured here: 2 bags @traderjoes broccoli and cauliflower mix, 3 sweet potatoes (peeled and chopped) and one can of chickpeas. The veggies are great to have as sides for dinner throughout the week or I also love to mix them in with apples, kale and cranberries for a salad for lunches. What are your favorite things to meal prep?

Not only did I get a full plate of tortilla chips and quite possibly the best salsa and guacamole I've ever had but I was lucky enough to get some tacos with beans and greens and crunchy tortilla goodness on top.

My late night😴💤 baking resulted in a batch of 🍎cinnamon muffins😍 that are 💯% gluten & oil free (I used at least5️⃣ different flours to get them pretty close to perfect👌🏼-why is GF baking so tedious🙄) But when you can’t stop eating the batter you know the end product is going to be a winner⭐️

🥕🥕Qué ricas las zanahorias verdad? Y además son un cóctel de vitaminas: carotenos, ácido fólico, C, E, B1, B2, B3, B6... asi que nos ayudan a proteger nuestra piel 🙌🏻 ojos 👁y encías 👄. Hoy os dejo una receta de PAN DE ZANAHORIA 🥕🥕 Y TRIGO SARRACENO. Muy fácil de elaborar y sabroso 😉. 📖🖊INGREDIENTES: 1️⃣400 g de harina de trigo sarraceno 2️⃣1 sobre de bicarbonato y otro de cremor tártaro 3️⃣50 ml de leche vegetal (yo use bebida de coco @alpro ) 4️⃣50 ml de aceite de oliva 5️⃣200 ml de agua 6️⃣1 pizca de sal 7️⃣1 cucharadita de cúrcuma 8️⃣200 g de zanahoria rallada 9️⃣semillas de calabaza. 🥄ELABORACIÓN: Precalentar el horno a 180 grados; pelar y lavar las zanahorias, rallar y reservar. En un bol disponer la harina e ir añadiendo en el centro el resto de ingredientes poco a poco. Mezclar bien y añadir la zanahoria y las semillas de calabaza. La masa resultante es bastante pegajosa. Engrasar un molde o cubrirlo con papel de horno. Hornear unos 30-40’.
