Exactly 1 year ago today I decided that I wanted to be vegan! I can't believe it's already been a year since the day I found @plantifulsoul on YouTube and was so inspired by her videos that I decided that night to totally change my lifestyle. I have loved being vegan so much, it's crazy to think that I didn't think it would last. Definitely no going back!! Feeling very grateful 😊💖 [Lunch today was a big spinach salad with carrots, peppers, tomatoes, cucumbers, mushrooms, radishes, avocado, and some salt and pepper 🥗]

Tried something new today! I've been searching for ways to get protein and/or greens that's quick and easy on my stomach. So far this brand is a success! Garden of Life Raw Protein & Greens powder blended with coconut milk, handful of frozen strawberries and a handful of ice, topped with bananas and granola 🙌🏻 loving this powder! Yesterday I tried the Raw Organic Protein powder in chocolate with just coconut milk and loved it! Tomorrow I'll try the vanilla kind and see which I like best! #glutenfreevegan

Handful of spinach
Handful of frozen coconut meat
About a cup of frozen blueberries
2 frozen bananas

Superfood chocolate bark! 🍫
Because what is a summer house without a bit of #chocolate in the kitchen!?
Being that I don't have my camera or lenses with me, I took this photo with my iPhone as the chocolate began to melt (being made out of coconut oil, it tends to do that🙈) but I got the shot!
The recipe for the chocolate is simple:
1/2 cup organic cocoa powder
1/2 cup melted coconut oil (no problem there since its summer and its always melted!) 1/4 cup maple syrup
Pinch of Himalayan salt
Whisk all the ingredients together and pour onto a lined (with parchment paper) baking tray or plate. Top (and/or mix in) your favorite nuts/seeds/berries and viola! #vegan#glutenfree#refinedsugarfree#chocolatebark
This yumminess has chopped almonds, goji berries and pumpkin seeds.
Trust me, this stuff is gooood! 😊
Oh, and leave it in the freezer for at least an hour. Can be stored in the fridge (do not leave it out!)
Made a mango quinoa with black beans, green peppers, onion, lime, and this cilantro chili lime seasoning from @traderjoes. Today I used corn tortillas from @traderjoes and topped it with a little spring mix, avocado and fresh grilled corn 🌽 to make #vegantacos . It's #tacotuesday 🌶 🥑
Jackfruit enchilada soup 👌🏽✨🎉 There's a person in my house who loves soup no matter what temperature it is and I decided to surprise him 🤗😉 Here's the recipe: . Jackfruit Enchilada Soup. . *1 can jackfruit
1 tbsp garlic
1 tbsp cumin
1 tbsp dried oregano
1 tsp cayenne
2 tbsp tomato paste
16 oz diced tomatoes
1 green and 1 red bell pepper
1 medium onion diced
1 cup of corn (I used freeze dried)
15 oz beans
48 oz veggie broth
Heat olive oil (or other oil) in a pot over medium heat. Sauté onions, bell peppers, spices tomato paste and jackfruit for about ten minutes. Until everything starts to have that just cooked appearance. Add beans and tomato. Combine and add veggie broth and corn. Turn down to medium low and allow to simmer for a half and hour or so (the longer you let it go the more the jackfruit with soak up the flavors around it) . Top it with whatever! Avocado, tortilla strips, pumpkin seeds, nut cream, salsa... all of that? Go crazy haha!
Chocolate Cherry Smoothies
This is one of our favourite smoothies! 🍫🍒 Here's what you'll need: • 3 Frozen Bananas
• 1 C Frozen Cherries
• 1 Scoop Vanilla Protein Powder
• 1 Tbsp Maca Powder
• 2-3 Tbsp Cacao Powder
• 2 C Almond Milk
Blend until smooth. Makes 2 - 16oz Smoothies. Hope you all have a happy Tuesday! 💗

Was ich damit sagen möchte: Ich bin so extrem dankbar hier so extrem gute Freundinnen kennen gelernt zu haben, bei denen aus vereinzelten Nachrichten echte Freundschaften geworden sind und die ich in der Realität vermutlich gar nie getroffen hätte 🤗🙈 #instamakesfriends

Hello, lovely people! This is my cashew, mango, avocado and lime cheesecake that I made few days ago. There were no friends to eat it this time, we had to do it all by ourselves 😀😀🙌. I added a little bit of spinach powder to enhance the color, but it didn't affect the taste at all. It was really delicious and refreshing.
