Nothing about this post is crazy because I was feeling lazy🎶 but it’d be a good time to point out that healthy eating starts with habits including shopping habits. Gluten free is great and all for whatever sensitivities you have or if you just want a leaner diet, but a lot of GF products also make up for all the wheat with starchy veggies like these beautiful @gardenlites waffles made with squash and carrots. I promise they taste like normal waffles and they’re like a dollar more then those empty nutrition eggos. The pictured cuties here are drizzled with almond and maple butter. Also feel free to admire my purple protein smoothie in the background🙋🏼 (apologies to my strictly vegan friends, these waffles do have eggs in them)

Starting my day off right with some gluten free vegan waffles 😛
I decided to take part in #veganuary this year to see if going vegan would be possible for me, and it’s been a lot easier than I thought! I have celiac disease so I was worried that I would be extremely restricted if I went vegan as well, but so far so good! These waffles are made with gluten free flour, almond milk, and flax seeds!
In early December I was in a car accident which resulted in me suffering from a concussion, a stiff neck, and back pain. On top of this, I was told by my physiotherapist that it would be months before I can return to my normal exercise routine, which was devastating as my fitness classes were always my favourite part of the week.
It’s been six weeks since the accident and I’ve decided it’s time to stop complaining and start doing the exercises I’m allowed to do and move on! I’ve started this account to hold myself accountable and keep me motivated! I’ll be posting my new exercises, the healthy food I’m eating, and anything else that keeps me happy! ☺️
Here are two different cauliflower pizza recipes for inspiration.
The first is vegan and the second is vegetarian.
Both are gluten free and can be topped with anything you like.

Red Curry with Sesame Onion Edamame Noodles 🍜🥥🌶🙃 I could probably drink Thai style red curry for every meal. A lot of Thai spices are good for your immune system and kick start your sense of taste. Along with that the veggies are obviously healthy and I’m using those protein and fiber packed edamame noodles. Ingredients for curry: coconut milk (regular and light), red curry paste, garlic, honey, coconut sesame and olive oil, stir fry veggies (snap peas, broccoli, etc.) salt, white pepper. Noodles: edamame noodles, sesame and coconut oil, caramelized onions, soy sauce, sesame seeds
A little late, but I’ve finally gotten around to uploading photos from my trip to Emilia-Romagna. More to come, but up first this delicious plate of pumpkin tortellini with balsamic sauce. Is Italy my favourite place for food? I don’t know, is the pope catholic?
Gluten free at home: I love risotto, it’s such a customisable and delicious dish, and naturally gf! This one included pumpkin, peas, thyme, and spinach. I puréed some of the pumpkin for added color and added a little cream for added richness. Yum all around!
Cauliflower Rice & Stir Fried Vegetables & Cashews - vegetable centric, vegan and low carb not to mention darn delicious! I’ll be honest, I wasn’t sure this would keep me going till bedtime yesterday. I do love a carb! But vegetables are carbs and a handful of cashews paired with a generous portion of vegetables saw me through the evening. Happy days!
