We stopped for lunch in Chattanooga on the way back to Atlanta, and found a great Greek restaurant with plenty of #glutenfree options! When I lived in Santa Barbara, CA, for a couple years around '05, I spent a lot of time walking about the neighborhood and taking pictures of neighbors' flowers with my zoom lens. (The lens was great the camera not so much.)
Last night I could feel, it was almost like it clicked over, that my body has now fully detoxed all the poisonous effects from gluten and my body can begin to heal. I no longer have that severe acidic rash on my neck, though it itches a tiny bit from time to time. My eyes don't water and most of the detox symptoms that I've listed before, I no longer experience.
As an energy practitioner I am aware, of course, that for any healing to take place, you must first locate the cause of a problem, remove the cause and then healing can complete itself. I am very curious to see how my body can now restore itself. I've had this my entire life so I don't really know what it's like to have good, solid perfect health. I know it will continue to be a gradual process that I will observe for the next couple of months. I'm no longer in pain and to stay painfree I continue to be vigilant in what I eat. That which I thought was extra weight has slowly been melting away all by by itself. I'd like to see that continue and I'd like to grow a whole lot more strength.

Crepioca... "crep" what?
On my last trip to Brasil my friend and fellow dietitian @kkbrodrigues introduced me to crepioca. This is a gluten-fee, sugar-free tapioca crepe made with eggs and tapioca flour that has been gaining popularity in Brazil over the last couple of years. It's so easy to make and it's pretty satisfying 😋
You can get really creative and make your crepe savory or sweet. This morning I filled mine with mozzarella cheese, ham, and sliced avocado. This is a great option if you have Celiac's disease or a gluten intolerance or sensitivity. You can enjoy tasty crepes for breakfast, lunch or dessert without tummy troubles 😉
Beat 1 egg with 2 Tbsp of tapioca flour. Add some salt and pepper (if you want a savory crepe). Heat crepe pan or small low-sided skillet brushed with a little olive oil or cooking spray. Grasping the pan by the handle pour the batter onto pan and quickly tilt all directions, swirling the batter to form a very thin round layer of batter. Cook crepe for 1-2 minutes on first side, then flip with a spatula and cook for about 40 seconds on the second side. Remove crepe from pan. Eat or serve filled with whatever you want.

How I'm spending my Saturday morning. Good info that's free to listen to. Many of the problems that start in the gut may be connected to SIBO, which is small intestinal bacteria overgrowth. It's more common than you think but still fairly new in the medical world and most often diagnosed for its symptoms as IBS..anyone familiar with this? Forgive my naïveté, but even though I've seen dozens of similar "bloat" posts, I can't believe that's me on the right only 7 hours ago.
To be honest, I've never felt any particular food affected me in a negative way. Yes, I'd occasionally feel bloated, but it always seemed random and food has never caused me pain. The last few months I've been gluten and dairy-free only as a way to to manage my rosacea, but yesterday was Swedish Midsommar 🌧 and I decided to just eat whatever the fuck I wanted and enjoy the day with my friends. 🥂
Bread, smördeg, shortcake, cream and butter were all happily consumed. By the end of the evening I was feeling pretty damn uncomfortable. 🤦🏼♀️
When we got home and I saw my bloated belly, my first thought was, "Oh my god, I've undone all my hard work" 😧 Second thought, "No, calm down. This is air, you'll fart it all out while you sleep. But you'd better document this so you know it happened and why. And for the love of whatever, stay away from gluten"😕
I love it when we're traveling and just stumble upon an amazing #glutenfree restaurant. 😋🙌🏻 This 'Hawaiian mama' pizza was so good that I'm already dreaming about eating it again! 😍😍 They even made my pizza in the back, away from the wheat flour pizzas, and used clean gloves.
