Most people tell me how they can’t live without meat, dairy or eggs. The way I️ see it, is most people place more love to the “food” than they do to themselves. When you eat like you love yourself, you learn to eat to fuel your body, not your emotions. My love for myself has become stronger when I️ gave up my soul ties with food { true story }. I️ have grown a thing for vegetable pakoras 🤤. The good thing about them (besides the taste) is that you can prepare ahead of time and freeze, and just fry or bake them in oven whenever you are ready to eat. {in this pic, pre-cooked vegetable pakoras with seasoned sweet potatoes}
Here’s the recipe for the pakoras:

BATTER
1 cup chickpea flour 
2 tablespoons oil
1 teaspoon ground cumin
1 1/2 teaspoons salt
1/2 cup water
VEGETABLES
1-2 green chilies, chopped (jalapeno or your choice depending on heat pref.)
1 tablespoon cilantro, chopped
1 potato sliced 1/4 thick
1 small cauliflower, broken into very small florets
1 cup spinach leaves, torn
1 1/2 cups onions, halved and sliced

PROCEDURE:
1. Boil the potato slices until *just* tender, being careful not to overcook.
2. Mix batter ingredients well. Beat in a blender for 4-5 minutes to incorporate air (this will make the batter fluffier). Let batter rest 1/2 hour in a warm place.
3. Add the vegetables and mix in evenly.
4. Deep fry in oil that is heated to 375° until deep brown (somewhere between 4-6 minutes per batch). Drain on paper towels and serve immediately.

I made it. That's about all I can say for today's workout. I did 35 minutes on this machine and then 10 minutes on the elliptical to complete my 45 minutes of cardio. Calorie burn was much less than my usual 600.

I won't beat myself up though, because i had a super busy/long day at work, I'm dealing with (mother nature) hormones, trying to keep my mind focused on positives (in the mist of my current life challenges), and I STILL went to the gym and worked out 💪🏽.

Even though I contemplated just doing half my cardio time; I didn't. I have a goal and I set a plan that I'm going to stick too. Even when it's hard. Even when no one is rooting me on. Even when my motivation has dropped. I will not change the plan. I'm not going to waiver! ---
As long as I keep my mind in check, I can conquer anything💪🏽✨ Power, Love, Sound MIND [2 Tim 1:7]. That's what God gave me. All I have to do is claim it✨ -------

Never thought I’d say this but, I MISS the kitchen! 😝Truth is I haven’t cooked a decent meal since last week. We moved over the weekend and can’t seem to catch a break to prepare myself what my body craves and needs. I’ve literally been surviving on hummus and bread since Friday (don’t judge 😅). Fun Fact: I LOVE my beans very seasoned. I attribute this to my Dominican roots. But here’s the trick, I don’t use any artificial ingredients. This is what I do for the seasoning:
•1 Tbsp olive oil •1 yellow onion (cut in small pieces)
•4-5 Garlic cloves (minced)
•a mix of diced peppers (green, red, yellow)
•1 Tsp ground oregano
•1/2 Tsp cumin
•1 Tbsp tomato paste
•1/2 Tsp apple cider vinegar •salt and pepper to taste | P R O C E D U R E |
After heating up oil, Add all ingredients and stir over medium heat until all ingredients are combined. Add: 2 cans of pinto beans (rinsed and washed); 1 cup of carrots, zucchini and or squash (cut in small chunks); add approx 2 cups of water plus less than a handful of fresh cilantro and bring to a boil. Once the beans have softened up. Remove cilantro and blend all of the vegetables together with some of the beans. Then bring back to pot and mix with the rest of the beans. This is particularly a great trick for kids to hide the veggies. But also by blending, all the natural flavors infuse in your creamy beans, and there you have your naturally seasoned “Dominican style” beans 🌱🤗

I take it to Daddy, is almost as I don’t even have to say much to Him lately, He just knows. But I question Him “but why?!” “Why is everyone so lost?” “Why can’t I make a difference in someone’s life?” “What’s the point of saying anything at all if no one is listening?”. But then He reminds me, that He died for love, knowing that He would be rejected, He still did. Just seems so pointless at times... or is it just me? Celebrating Hispanic Heritage Week with this delicious recipe. I turned the popular “Arroz con Leche” vegan 🌱😁 here’s what I used:
•2 cups rice (soaked in 4 1/2 cups of water for 1 hr)
•2 cans coconut milk •1 Cup sugar •1/2 Tbsp vanilla extract •4 cinnamon sticks •1 Tsp all spice • 1 Tsp ground cinnamon
•the peel of one small lemon •pinch of salt (Raisins optional)
Top with more cinnamon
| P R E P A R A T I O N | 
After soaking rice, bring to a pot with same water and then cook over medium heat stirring occasionally for about 15-20min, (or until rice is tender) add cinnamon sticks, coconut milk, sugar, pinch of salt, vanilla, all spice, ground cinnamon, lemon peel and raisins. Cook stirring occasionally for another 10 min or until rice reaches a pudding like consistency. serve warm or cold from fridge. Might need to add a bit more plant based milk when leaving in fridge overnight. #arrozconleche #veganrecipes #veganfoodshare

So I didnt eat ANYTHING all day. Was so busy at school I forgot to eat. Only water🥛 and BPC☕ until like 5:00pm! 
When I got home I STILL wasn't that hungry but I ate anyway..This is the last of the meatloaf(looks a little dry.lol)..I added cream cheese and colby jack to my Broccoli... all of the BBQ meat is gone.(hubby ate it all.lol)A few cough drops..may have some "fake" cheesecake later🍰lol...I'm good tho!

•1 Tsp cinnamon
•1 Tsp hemp seeds •1 Tbsp maca powder

All this hurricane anxiety had me craving some vegan ice cream these past few days. Until I realized I could make my own without having to give into eating junk food or hit the crazy roads. It came out so good! Here's the recipe (serves two)
•3 Frozen bananas
•3 Tbsp peanut butter
•2 Tbsp unsweetened cocoa
•2 Pitted dates
•2 Tbsp coconut shreds
•1 Tsp cinnamon 
Blend together (I used my Vitamix blender) until appears to have ice cream consistency (be careful not to over blend). Enjoy immediately, you'll be licking off the spoon and inside of blender lol. #nicecream #rawveganrecipes #veganicecream

These last few days were the longest and hardest days I've ever had to endure. My faith got shaken and tested to another level. My heart was torn on what decision to make, do I leave, do I stay, and panic was rising as I was being pulled in all sorts of directions. I had to force myself to disconnect from my surroundings and only focus on God and my family. You see, it is very easy to judge and point fingers and even insult someone's intelligence when you are on the other side. I had to go past that and quiet the chaos and opinions and only look up to God. Then I was reminded that He is my rock and my fortress, and I was able to quiet the voice of fear who had been knocking me down. I took this hurricane extremely seriously and prepared so much I even had bags of food and clothes in our closet. I'm beyond grateful for all those who have reached out of concern and love. And even more grateful that I was able to endure this difficult time with a sober mind and with my faith founded on Jesus who is my rock. Today more than ever I say, in Him I trust! I deeply pray for those who this storm brought destruction, I deeply pray for this country and for the world! And I don't only pray for God to spare their lives, but I pray for salvation. This life is only temporal, but salvation is eternal. The word of God says: “For what will it profit a man if he gains the whole world, and loses his own soul?”
‭‭{Mark‬ ‭8:36‬} so I Pray. And I don't just say it to use a hashtag! I pray for protection and I pray for salvation!, I pray for spiritual awakening, I pray for the hearts of all men kind to be shifted back  to the heart of our creator. I pray people realize that what happens on this earth is the consequence of our own decisions and doings. Not God's! Therefore I pray, we can come together stronger than ever, as one people all over the earth, to make different choices. For the sake of humanity. For the sake of this world. Wondering if this would count as my 1 meal for the day? Lol choosing what my body needs as opposed to what it desires has always been my struggle. But I'm choosing the next 21 days, starting today, to eat based not  on desire. I have to point out, that the reason I created this account was to inspire others and to show that being vegan and being a Christian actually goes hand in hand. Now, there's days like today, that I just can't help but voice my opinion without keeping it "offense free". I went to eat with a non-vegan friend this weekend, she's always been supportive of my decision to go vegan. However, she voiced out the popular "but God made animals for us to eat". Part of me wanted to slap some sense into her, while the other part wanted to defend the fact that she's been socially conditioned to think this way. But instead, I just stated the following: "if it's true that our perfect God who is an all loving and merciful God, created animals with the sole purpose to be eaten, then... why do they Always fight for their life? Like really? If their purpose was to feed, why don't they just surrender when they are ready be eaten, like plants do? Why do they show feelings and emotion like we do? Why do they bleed, the same exact way we do?" She didn't respond, and we quickly changed the subject. But I'm grateful for the push, gave me something else to talk to God about. I used to be a vegan junk food eater. Yes folks, there's such a thing! From the vegan donuts, to the vegan brownies, burgers, hot dogs, loaded nachos, you name it! I would consume it ALL! as long as it was cruelty free, it was ok with me lol. I'm consciously now trying to replace those fast processed guilty pleasures, for healthier options such as this. Adding more raw veggies than cooked ones, has helped me feel more rejuvenated, full of energy and even my skin is reflecting it. Being vegan is about having love for the planet and love to the animals (in other words, love for God's creation) but many times we forget to keep in mind that is also about loving ourselves and taking care of our temple. I'm going for 20 total carbs or lower, not net. I've been at 182 pounds for over a month now(which I absolutely​ love) but I've developed a little bit of a sweet tooth eating so much sugar free stuff,subtracting sugar alcohols​,halo top,etc)so I'm changing up a bit. I wanna see what happens. 
Breakfast: BPC

Lunch: salad w/ leftover fajitas meat,avocado, olive oil vinaigrette

Dinner: 4 scrambled eggs,fried mozz cheese,4 sausage links,salsa Verde

5 bottles of water so far..I am done eating for today.

Many people have been asking me lately how do I feed my kids and how do they "survive" on a plant based diet. Well, for starters, if a food is not healthy for an adult, It will definitely be unhealthy for your child. And obviously it is difficult with children in the sense that they want what they see their friends having, specially at school. So for school lunches, for instance, I try to mimic what most other school lunches look like, or what other kids bring, but in a vegan way. They still get their "ham and cheese", they get their nuggets, they get the pasta, the rice and beans, the mashed potatoes, and of course they still get the chips and sweets. If you ask me, I think their lunches are pretty darn cool 😁. Not one single day have I heard from any of my kids that they are "suffering". They actually look forward to see what I have packed for them and like giving me ideas for future lunches 🌱. #vegankids #vegankidslunch #poweredbyplants

forget the chicken noodle soup. Lentils and veggie soup is good for the souuuuul!!!!! 🌱😋 {ingredients used: Lentils, peeled potatoes, zucchini. Squash, carrots, celery, [blended onions, garlic and bell peppers] salt, black pepper, oregano, basil leves, cilantro and bay leaves; brought altogether to a boil and then kept on medium heat until all veggies were tender} tip: will taste better the longer it sits to let the natural herbs flavor kick in. #lentilsoup #veganrecipes #lifewithoutmeat

But I plan one day of my week to shop at the following places: Trader Joe's, Whole Foods, Aldi's and Costco. I try to smart shop. For instance, I only get at Whole Foods the items that I can't absolutely find anywhere else, such as the  vegan nuggets, the vegan chocolate chips, hazelnut spread and chocolate syrup and vegan ham. Most of my items I get at Trader Joe's and Aldi's. It just sucks that Aldi's has such limited vegan options, but their prices are amazing. I usually get the sandwich bread for the kids, chips, organic canned beans, and pastas there. At Costco, I like to bulk buy things like coconut oil, quinoa, rice, strawberries and other frozen fruits and veggies for smoothies. In the end, this is how I find is more efficient for me to save money. Still learning and comparing prices and products as I shop. When people tell me vegans eat a lot of carbs and a lot of carbs are not good for you, I think to myself, but isn't this what God made for us to mainly eat in the first place? How can it be bad? I understand processed carbs, adding junk to it it's obviously not ideal. But people are so conditioned that they see a bowl of fruit the same as a having a bowl of fruit loops. I'm making an effort to add more real raw foods to my diet as opposed to as when I first became vegan. I have found that even though I'm eating larger portions and eating more often, I have not just lost a lot of weight, but I'm feeling more energetic than I was before. It is very easy to rationalize, justify and come up with excuses.  And it's easy to come up with shortcuts. People rather pay more money on shakes and pills than to spend money on raw wholesome foods that needs prepping. People rather spend money on "healthier versions" of animal products than to completely cut them out of their diet. People rather spend money on body wraps, creams and even surgery than spending time working out. Why? Because it's easier. Why? Because it's more accepted by society. Why? Because it requires minimal sacrifice. But no pill, surgery, body wrap will be successful against processed junk food.
