Ok so here’s another soup recipe as promised. This one is a curried sweet potato and corn chowder. Dairy free and cruelty free 🤗🌱
| I N G R E D I E N T S |
* 1 tablespoon olive oil
* 1 medium onion, chopped
* 3 garlic cloves, minced
* 1 large sweet potato, peeled and diced (about 3-4 cup diced sweet potatoes)
* 4 ears of sweet corn, kernels removed from the cob (about 4 cups of corn)
* 2 teaspoons curry powder * pinch of ground ginger
* 1 (15oz) light coconut milk from the can
* 2 cups vegetarian broth
* 1/2 teaspoon salt, plus more to taste
* Freshly ground black pepper
* To garnish, if desired: vegan sour cream (I made mine cashew based)or coconut yogurt, cilantro and green onions
| I N S T R U C T I O N S | 
1. In a large soup pot over medium heat add the olive oil, onion, garlic, sweet potatoes, corn, and saute for 6-8 minutes or until potatoes start to soften. Season with curry powder, salt and ginger.
2. Slowly stir in the coconut milk and vegetarian broth, scraping up any bits from the bottom of the pan as you stir. Reduce the heat to low and simmer for 10 to 15 minutes or until the potatoes are tender and can easily be pierced with a fork.
3. To give a creamy texture, blend at least 3 cups of the soup then return to the pot. Stir to incorporate and season with more salt (if needed) and pepper. Taste and adjust seasonings as necessary.
4. To serve, sprinkle with cilantro, a swirl of vegan sour cream or coconut yogurt and green onions. #veganrecipes #vegansoups #sweetpotatocornchowder

🍏🍒🍇What does my health have to do with God?!🍇🍒🍏Recently I've been (on purpose) looking after my health. Be it cutting down on the cookies from Lidl 😋 not eating as much carbs and drinking so much more water. I'm not going to make my health a New Year's resolution, but a way of serving God. 1 Corinthians 6:19-20 tells me that my body is a temple and the Holy Spirit lives in me so I must honour God with it. If I've got the Holy Spirit in me then filling my body up with junk food, not exercising, etc. is gonna make Him uncomfortable. And if I want to live this amazing life that God's got planned for me then I have to make sure my body is well enough to do so! 🏋🏾‍♀️ But in saying that health is definitely important but not as important as spiritual health! I’ve been getting a lot of requests for soup recipes lately. So decided to try and share a few of my favorite ones this week. This one you see here, has the perfect mix! Don’t go by looks, because I promise you they will be deceiving! This soup is so savory will have you going for seconds 🤤. Swipe ⬅️ to see the creamy version
| I N G R E D I E N T S |
* 32 oz vegetable broth
* 8 oz sliced baby bella mushrooms
* 1 cup carrots chopped
* 2 stalks of celery chopped
* 1/2 medium onion chopped
* 2 cloves garlic crushed
* 1/2 cup quinoa rinsed
* 1 can chickpeas drained
* 2 handfuls of baby spinach chopped
* 1 tsp. dried thyme
* ground black pepper and sea salt to taste | I N S T R U C T I O N S |
1. Add vegetable broth, mushrooms, carrots, celery, onion, sea salt and garlic to a large sauce pan, cover and bring to a boil. Reduce heat to medium and cook with lid vented for 10 minutes.
2. Stir in quinoa and chickpeas and continue to cook on medium-low with lid vented for 10 minutes.
3. Stir in spinach and thyme and cook for 5 minutes.
4. Remove from heat, cover and allow to rest for about 5 minutes, or if desire, add to a blender and blend together until creamy and smooth.

Here’s another recipe worth trying. I specially like making this when have leftover homemade mash (which will cut half the time preparing)
| I N G R E D I E N T S | {For the filling}
•1 medium onion diced
•3-4 garlic cloves minced
•1 1/2 cups uncooked lentils rinsed and drained.
•4 cups vegetable stock •2 Tbsp fresh thyme or 1 Tbsp dried thyme •1 Tsp cumin
•salt/pepper to taste
•1 10oz bag of frozen veggies: peas, carrots, corn, green beans. {for the mashed potatoes}
•3lbs of gold potatoes peeled.
•4 Tbsp of vegan butter (I used I can’t believe is not butter-vegan)
•salt and pepper to taste |I N S T R U C T I O N S|
Cut potatoes in small chunks and add to pot with water. Add generous amount of salt and bring to a boil. Cook over medium/high heat, stirring  occasionally until potatoes slide off a knife easily (about 20-30 min). Once cooked, drain out water then bring back to pot and mash and add vegan butter. 
While potatoes are cooking, prepare the lentils filling. In a large saucepan over medium heat, add 1 Tbsp of olive oil and sauté onions and garlic.  Add lentils, stock, thyme, cumin and salt and pepper and stir. Bring to a boil then reduce heat to simmer. Continue cooking until lentils are tender (about 40 min).
In the last 10 min, add the frozen veggies. To thicken mixture, add 2-3 of mashed potatoes and stir. 
Add filling on baking dish and layer with potatoes, top with black ground pepper. Bake at 425 degrees F for 10-15 min. Let cool and enjoy 😋 #veganrecipes #shepherdspie #veganshepherdspie

I finally discovered the trick into making the best Tofu! The trick is not just in letting it marinade, but also making sure to remove all excess moisture to absorb more flavor prior to marinating. Made this sweet teriyaki tofu recipe today and my husband absolutely loved it! So happy to share with the rest of the world 🤗 | I N G R E D I E N T S |
•1 package (14oz) of extra firm non GMO Tofu •1/2 cup soy or Tamari sauce (I used Tamari)
•1/4 cup of Agave
•2 Tbsp Lemon juice •1 Tbsp garlic powder •1/2 Tsp ginger
•1 Tsp minced Garlic | I N S T R U C T I O N S |
After removing tofu from packaging, place about 4 paper towels on a plate and set tofu on plate covered with more paper towel. Press it down with a pan or something heavy on top and let sit for at least 15 min (this technique will allow tofu absorb all the marinade flavor).
Mix all the rest of ingredients together in a bowl. Cut tofu into 1” pieces and place in bowl with marinade. Toss to coat all pieces and let sit for about an hr (the longer you marinade, the better the taste). Once tofu is ready, bake at 400 degrees for about 20 min. Eat over rice, quinoa, or your favorite vegetables. {in this pic, accompanied by roasted cauliflower} #tofu #sweetteriyakitofu #veganrecipes

The açaí juices are just reprocessed from the açaí purees and they lose a lot of antioxidants in that process, not to mention they add a lot of sugar water or other juices to the purees to make it a juice.

If you know me, you already know I really don’t eat salads. And if I do, it’s more of a side dish thing. So attempting to eat fully raw vegan foods for 21 days has been quite the challenge. Grateful to discover simple and tasty recipes like this one. Check it out and give it a try 🤤😍 | I N G R E D I E N T S |
•1 medium zucchini •2 large tomatoes •dried basil to top
•nutritional yeast to top

Cashew cheese:
•1 cup unsalted cashews (preferably soaked and rinsed)
•2 and 1/2 tablespoon lemon juice
•1 and 1/2 tablespoon nutritional yeast (this is what gives it the cheesy flavor)
•1-3 tablespoons water
•2 cloves of garlic
•Pinch of basil
•Pinch of salt

Blend together all ingredients until receiving the texture desired. The less water you use, the thicker your cheese will be. Set cheese aside.
Basil Pesto: {refer to my previous sandwich post for recipe}

After you have the cheese sauce and basil ready, take the zucchini and slice it horizontally into thin slices. Start with a layer of zucchini, spread cashew cheese and place tomato slices and pesto on top, layer with another slice of zucchini, then spread graciously with cashew cheese, repeat until desired height/amount of lasagna is reached. Top with dried basil and nutritional yeast. Serve, enjoy!! 😋 #betterthansalad #rawveganlasagna #rawveganrecipes

First time making a wheatgrass smoothie bowl this morning. Wheatgrass has tons of health benefits and in addition to all of its vitamins, it includes high concentrations of the most alkaline minerals. In this recipe I used frozen wheatgrass juice that comes pre-packed in small individual packages, but they also sell it in powder form that you can add to your bowls/smoothies.

•1/4 unsweetened almond milk (add more if want more of a smoothie consistency) •a handful of spinach •2 packs of frozen wheatgrass juice (I used the brand @evergreenjuices) *OR* use 1 Tbsp of wheatgrass powder •1-2 medjool pitted dates *Or* 1 Tbsp maple syrup.

•1 Tsp pure vanilla extract | I N S T R U C T I O N S |

If you are like me, you probably get really lazy to cook around the holidays. So here’s a simple yet delicious way to make yourself a quick meal {in this pic: Basil tomato “mozzarella” panini} swipe ⬅️ to see the vegan cheese I use (my fave is coconut herb!!) but overall best tasting vegan cheese <in my opinion>
Here’s the recipe for pesto: |I N G R E D I E N T S|
•1/4 Cup nutritional yeast •2 cloves garlic •1/3 cup chopped macadamia nuts
•1/4 Cup pine nuts
•3/4 Tsp sea salt •1/8 Tsp black pepper
•6 cups packed basil leaves •1 Tsp fresh lemon juice •3/4 Cup olive oil |I N S T R U C T I O N S|
Add all ingredients except for the basil, lemon juice and olive oil to the food processor and give a quick whir, about 10 seconds. Next add the basil leaves and lemon juice. Turn the food processor on and slowly drizzle in the olive oil. Blend for 20-30 seconds until everything is combined. (Store unused pesto in fridge for up to 5-7 days)

Nothing like sipping on some homemade hot cocoa while watching your kids unwrap gifts around the tree. Here’s the recipe:
• one 13.5 can of “lite”coconut milk (lite leaves less coconut taste)
• 2 Tbsp Unsweetened cocoa.
• 3 Tbsp of dairy free semi-sweet chocolate chips (I used enjoy life brand)
• 2 Tbsp maple syrup (add less or more according to sweet-o-meter) • 1/2 Tsp vanilla extract
• 1/2 Tsp ground espresso coffee (makes chocolate taste richer)
•1/8 Tsp sea salt | I N S T R U C T I O N S |

Oh heyyyy back rolls🙋🏽‍♀️! Truth is, this is my number two (#1 being my “FUPA”; if you don’t know what that is, head on over to good ole urban dictionary👌🏽) biggest insecurity about my body. And quite honestly, if flaw-hiding was a sport, I’d be  dammit MVP💅🏽😎.

Today I’m taking the leap! I’m done hiding!!! I’ve done this for 20+ years. And for what?! Cause let’s be real, there’s no pants that will squish you down enough, or a bra strap that will smooth them out enough, to 100% hide from viewing eyes what we so desperately have tried to camouflage. So, to hell with it! Here’s my rolls, *gasp*😱. Like seriously, it’s skin and cells. Why is this such a big deal?! (what i asked myself). And truth is, i’m picky as HELL about who i follow on ig, but one thing i look for is people that are brave enough to be real with there posts. Sn, I made it though my annual christmas party with some of my besties, and didn’t eat bad or go over my calories🙌🏽🙌🏽! Now all i have to do is keep from munching with the hubby tonight 😬.

How dang befitting! Today, for the very first time in my life, I ran 3 MILESSSSSS!!!! Nonstop!💪🏽🙌🏽💪🏽🙌🏽💪🏽🙌🏽
Like, I seriously can hardly believe it!! 🔻🔻🔻🔻
It was hard, I won’t lie! About 1/4 into it I started second guessing what I’d set out to do😬. Ya’ll I was so unsure if I was capable! Heck, if you watched my ig story today, you’ll notice that I didn’t even say what my “goal” was for this run🙊👀. I said I just want to run as far as I can...But I knew In my heart i wanted to run the complete 3 mile track. And I did! I may have been “slower than a sloth in honey” (as someone on ig said in there post this week; I’m sorry i can’t remember who you are right now 😬), but I never stopped! 🙌🏽 And actually once I got past the half way marker, It got easier! I’d come too far to quit!

These cuties you see right here, I’m proud to call my own 😍. What made me go vegan? They did! When nursing my second child, I discovered he was extremely allergic to eggs and dairy. I remember feeling devastated thinking I had done something wrong and that I had made him sick. I considered feeding him a hypoallergenic formula (as suggested by his doctor), but had so many mixed feelings about it. After successfully nursing my first baby, I felt I owed it to this new child to give him my very best. So in my desperation I began to research and one discovery in the food industry led to another. I then cut all dairy and egg products from my diet while nursing him and was able to successfully nurse him his first year. Today I am vegan and I am raising them as close to vegan as it can get. And tho it was a process and took another few years for me to take this turn, I look back now and thank my children. Had my youngest two not been highly allergic to dairy, I probably would’ve never been forced to find out how much our bodies not only don’t need it, but they actually do better without it 🌱. #thisismystory #vegankids #vegetariankids #thediaryofaveganchristian

My addiction to cheese used to be surreal. I can honestly say today that I don’t even miss it! You can keep all your scary dairy, and leave me with my cashews 🤤 check out this vegan version of the best “Alfredo” sauce ever! || I N G R E D I E N T S ||
1 cup raw cashew nuts (soaked overnight in water)
1/2 Cup nutritional yeast flakes
1 Tbsp white misso (optional)
1 Tsp of fresh minced garlic
1 cup Unsweetened almond milk
A pinch of nutmeg 
Salt and pepper to taste || I N S T R U C T I O N S ||
Drain and rinse the cashews (discard the water they were in) 
Combine all ingredients together in a high-powered blender (I used my vitamix), and blend until smooth. Add more almond milk if needed to create desired consistency. Use straight away and pour over cooked pasta, or store in fridge in a tight container for up to 3 days.

I️ have grown a thing for vegetable pakoras 🤤. The good thing about them (besides the taste) is that you can prepare ahead of time and freeze, and just fry or bake them in oven whenever you are ready to eat. {in this pic, pre-cooked vegetable pakoras with seasoned sweet potatoes}
Here’s the recipe for the pakoras:

BATTER
1 cup chickpea flour 
2 tablespoons oil
1 teaspoon ground cumin
1 1/2 teaspoons salt
1/2 cup water
VEGETABLES
1-2 green chilies, chopped (jalapeno or your choice depending on heat pref.)
1 tablespoon cilantro, chopped
1 potato sliced 1/4 thick
1 small cauliflower, broken into very small florets
1 cup spinach leaves, torn
1 1/2 cups onions, halved and sliced

PROCEDURE:
1. Boil the potato slices until *just* tender, being careful not to overcook.
2. Mix batter ingredients well. Beat in a blender for 4-5 minutes to incorporate air (this will make the batter fluffier). Let batter rest 1/2 hour in a warm place.
3. Add the vegetables and mix in evenly.
4. Deep fry in oil that is heated to 375° until deep brown (somewhere between 4-6 minutes per batch). Drain on paper towels and serve immediately.
5. Enjoy 😋

I made it. That's about all I can say for today's workout. I did 35 minutes on this machine and then 10 minutes on the elliptical to complete my 45 minutes of cardio. Calorie burn was much less than my usual 600.

I won't beat myself up though, because i had a super busy/long day at work, I'm dealing with (mother nature) hormones, trying to keep my mind focused on positives (in the mist of my current life challenges), and I STILL went to the gym and worked out 💪🏽.

Even though I contemplated just doing half my cardio time; I didn't. I have a goal and I set a plan that I'm going to stick too. Even when it's hard. Even when no one is rooting me on. Even when my motivation has dropped. I will not change the plan. I'm not going to waiver! ---

Fun Fact: I LOVE my beans very seasoned. I attribute this to my Dominican roots. But here’s the trick, I don’t use any artificial ingredients. This is what I do for the seasoning:
•1 Tbsp olive oil •1 yellow onion (cut in small pieces)
•4-5 Garlic cloves (minced)
•a mix of diced peppers (green, red, yellow)
•1 Tsp ground oregano
•1/2 Tsp cumin
•1 Tbsp tomato paste
•1/2 Tsp apple cider vinegar •salt and pepper to taste | P R O C E D U R E |
After heating up oil, Add all ingredients and stir over medium heat until all ingredients are combined. Add: 2 cans of pinto beans (rinsed and washed); 1 cup of carrots, zucchini and or squash (cut in small chunks); add approx 2 cups of water plus less than a handful of fresh cilantro and bring to a boil. Once the beans have softened up. Remove cilantro and blend all of the vegetables together with some of the beans. Then bring back to pot and mix with the rest of the beans. This is particularly a great trick for kids to hide the veggies. But also by blending, all the natural flavors infuse in your creamy beans, and there you have your naturally seasoned “Dominican style” beans 🌱🤗

Celebrating Hispanic Heritage Week with this delicious recipe. I turned the popular “Arroz con Leche” vegan 🌱😁 here’s what I used:
•2 cups rice (soaked in 4 1/2 cups of water for 1 hr)
•2 cans coconut milk •1 Cup sugar •1/2 Tbsp vanilla extract •4 cinnamon sticks •1 Tsp all spice • 1 Tsp ground cinnamon
•the peel of one small lemon •pinch of salt (Raisins optional)
Top with more cinnamon
| P R E P A R A T I O N | 
After soaking rice, bring to a pot with same water and then cook over medium heat stirring occasionally for about 15-20min, (or until rice is tender) add cinnamon sticks, coconut milk, sugar, pinch of salt, vanilla, all spice, ground cinnamon, lemon peel and raisins. Cook stirring occasionally for another 10 min or until rice reaches a pudding like consistency. serve warm or cold from fridge. • 1 Tbsp coconut oil • 2 Tsp Garlic
• 1 1/2 cup pumpkin puree
• 1 Shallot • 2/3 cups coconut milk • 1 cup vegetable broth
• 1 Tsp chili powder • 1 Tsp salt and pepper
• 1 Tbsp ground cumin

So I didnt eat ANYTHING all day. Was so busy at school I forgot to eat. Only water🥛 and BPC☕ until like 5:00pm! 
When I got home I STILL wasn't that hungry but I ate anyway..This is the last of the meatloaf(looks a little dry.lol)..I added cream cheese and colby jack to my Broccoli... all of the BBQ meat is gone.(hubby ate it all.lol)A few cough drops..may have some "fake" cheesecake later🍰lol...I'm good tho!
