Sunday F-U-N-D-A-Y is where it’s at 🙌🏼 My day is all about preppin for a solid week 🙋🏻 But I wanted to show you a sneak peek 👀 at what I’m eating in a day🍴 Starting out w an egg + sautéed spinach in oo + avocado + snack is @belgioiosocheese cheese + boiled egg w greens + @jilzcrackerz + @toobusytoeat pb bar yum! + my baked tofu + crackers + greens + @eatenlightened prob my 3rd fav flav 🍦
The time has come to bake some Christmas Cookies. We have so many favorites but one of my daughter’s all time favorites are gf Thumbprint Cookies. Normally we use Strawberry and Apricot jam with them but this time I feel like doing something different. So I am making a CRANBERRY, LEMON, GINGER JAM which I think will go great with the holiday season.
Here’s 2 other recipe ideas for this jam. •Baked Nut Brie. (I love Macadamia Nut Brie) Just cover the top of the Brie with generous amount of the jam, dried cranberries, almond slivers. Bake, sprinkle some Lemon Zest and enjoy!!! •Yogurt Parfait. Layer some Almond Milk Yogurt with Jam, granola and dried cranberries. Sprinkle with Lemon Zest.
CRANBERRY, LEMON, GINGER JAM
4 cups whole fresh Cranberries
1 teaspoon grated fresh Ginger
1 tablespoon Lemon Zest
1 cups Coconut Sugar
1/2 cup Water
1/2 cup Orange Juice
1/4 teaspoon All Spice
Add all the ingredients to a pot and bring water to a boil, reduce heat to a low boil for 10 minutes while stirring occasionally. Taste test and add any additional sugar if you feel you want it sweeter. Reduce the heat to the lowest setting for an additional 10-15 minutes – stirring constantly. Cool in pan for 30 minutes and transfer to a clean jar of container. •
