Bitterballen! Who's tried these delicious, Dutch balls of goodness? 🙈 This was a five flavour tasting platter (and the bouillabaisse one blew my mind) but in essence they are a crispy breadcrumbed ball filled with a meaty (or fishy or veggie) béchamel sauce. Kind of like traditional Spanish croquetas! So moreish and absolutely delightful washed down with a (zero alcohol) ice cold beer at the bar. Happy hump day ❤❤

This morning I saw this picture of one of my breakfast with figs from my mum's garden plus @gleniskinsta organic natural yogurt, Irish local honey from @mileevenfoods 🍯 and crunchy pistachios, and I am still drooling 😋

Figs are a great source of fiber and several minerals and vitamins such as calcium, magnesium, manganese, potassium, copper, vitamin K, vitamin B6,...🌱 I wish I had some figs left, but I had Irish apples instead and the mix of yogurt, honey and pistachio with the apple worked pretty well too!

Ah pesto how I have missed you! This tasty hearty bowl was just what I needed tonight. I’ve had a hungry day today. Not long ago I would have been trying to suppress my hunger, believing that what was enough one day would be enough every day, these were the days I would have ended up binging, eating everything in sight and been left feeling stressed, depressed, guilty and sick but today I honoured my hunger, I had some bigger, more filling meals and some extra snacks. No guilt, there was no restriction so there was no out of control feelings when I ate. Some days your more hungry the others and that’s ok, it’s normal and if your hungry then it means your body NEEDS to eat, we’re taught in diet culture to ignore our hunger, to try to fight it, like this natural thing we feel is somehow trying to sabotage us but really it’s our body looking after us, telling us “hey I need some nourishment” and you know what? Once you start answering that call you don’t obsess about food anymore, you don’t have crazy cravings anymore and you dont feel the need to binge because there’s no depravation just satisfaction and tasty eats. #ad After I attended the @AlaskaSelectSeafood event last week I took a good look at my grocery store seafood labels during my shopping trip this week. I could not believe all the different countries our seafood is imported from: Indonesia, Thailand, Canada, just to name a few. We are eating seafood imported from farms while 79% of our wild caught Alaskan salmon is exported abroad. Think about how crazy that is for a minute!
I was sent home with salmon after the event so I made one of favorite recipes. 
This recipe only has 2 ingredients- Italian dressing and your favorite seasoned salt. Simply brush your salmon filet with about 1 tablespoon of your favorite Italian dressing and then generously sprinkle your favorite seasoned salt (i.e. Lawrys) I used my Traeger grill to cook the salmon at 325 for about 20 minutes, check the temperature for the best results. You can also use your oven to bake it. I think the dressing is the secret as it keeps the filet tender and moist. 
Gently break apart the filets and top with your favorite taco toppings. I had some guacamole and mango salsa (1 diced mango, 1 small tomato diced, 1/4 diced red onion, 2 tablespoons cilantro diced, juice of one lime and salt and pepper to taste).

All natural, refined sugar free caramel sauce made with only simple ingredients. Talk about a winner!🙌🏻 I've been pairing this goodness with just about everything I can find lately, but I think my favorite so far has to be these apples. Definitely toasting to Tuesday with this one!😉😋

Salted Date Caramel Sauce
8 dates, pitted
Hot water (enough to cover dates)
2 Tbsp unsweetened almond milk
1/4 tsp vanilla
1/4 tsp sea salt
1 tsp @furtherfoodcollagen (for some extra nutrients😉-use sweetcherries10 for a discount)

Directions 
1. Soak pitted dates in hot water until nice & plump. Discard skins when done.
2. Blend dates with 2 Tbsp water (from soaking the dates), almond milk, vanilla, sea salt & collagen until smooth. 
3. Spread on apples, pretzels, toast, anything! Or just eat it by the spoonful!😉

simple dinners are my go-to🍴😉 tonight's bowl: @eatbanza chickpea pasta with New Barn tomato basil red sauce from @wholefoods (this one's made with simple ingredients and has NO added sugars) my secret to making a creamy red sauce is to add goat cheese and I used my fave here (@laurachenel crushed olive goat cheese). make sure to add the cheese over stovetop or while the pasta is still hot to allow it to melt, then sprinkled with hemp hearts, black pepper & sea salt 👌🏼

I love me some Cilantro (Coriander to my fellow Brits) I know it isn’t for everyone, but I am firmly in the 🙌🏽 camp! It’s loaded with phytonutrients (literally just means plant based nutrients) and flavonoids (Groups of Phytonutrients that are Powerful anti-oxidants with anti-inflammatory and immune system benefits). This (fresh AF) Bad boy is amazing for overall Wellness, healthy Skin, and an immune booster to help keep those Cold and flu beasties at bay. Pesto Zoodles & Turkey Meatballs!! 🍃
This is a literal representation of making something of the contents in my fridge... easy!! For meatballs: preheat oven to 400. Mix 1 lb ground turkey (I stock up always to have in freezer because it's so versatile), 1/4c breadcrumbs (I had none so used flour substitutions), 1/2 cup chopped onion, 1-2 egg, 1 tb dried basil, 3 tb parsley, salt and pepper, and I threw some chili powder in but red pepper flakes would be good too! Roll into balls and cook for 15-20 min on baking sheet with avocado or olive oil.
Pesto Zoodles & Turkey Meatballs!! 🍃 This is a literal representation of making something of the contents in my fridge... easy!! For meatballs: preheat oven to 400. Mix 1 lb ground turkey (I stock up always to have in freezer because it's so versatile), 1/4c breadcrumbs (I had none so used flour substitutions), 1/2 cup chopped onion, 1-2 egg, 1 tb dried basil, 3 tb parsley, salt and pepper, and I threw some chili powder in but red pepper flakes would be good too! Roll into balls and cook for 15-20 min on baking sheet with avocado or olive oil.

I'm going to be completely honest here...I absolutely out did myself 💁🏼 I had been thinking about ways to make Red (that's me 🙋🏼) approved ~nachos~ and one thing came to mind, PLANTAINS 🍌 I'm obsessed with these plantain chips from @traderjoes and thought 'hey, I can make some BOMB nachos with these!' But then I decided to take it a step farther (cause why not complicate things?) and made plantains chips at home!! Just trust me on this one guys...

• Slice VERY thinly using a knife or medallion

A beautiful autumn sunset and a delicious golden acorn squash stuffed with turkey chili! It was such a wonderful autumn 🍂 day here in NC and I just wanted to soak it all in. 😌 I was super excited to be able to break out a light weight sweater, scarf, and my new ankle boots! 🤸🏻‍♀️I made this turkey chili last night and decided to change it up a bit tonight and cook this golden acorn squash to use as my bowl tonight. 🙌🏻I have so many different winter squash on my counter right now and I am loving it! So many ways to eat these beauties and I can’t get enough. 😋 ///

Food doesn't always have to look perfect. Sometimes it's planned picture-worthy bowls and other times it's whatever I feel will go together without being gross. 😂 Before I lost weight I had this mentality that it was all or nothing. Each meal had to be perfectly healthy or the day was ruined & I had to restart tomorrow.

Cheers to the not so pretty meals that pack in the nutrients we need. 🙌 Cheers to trying to work full time and packing those lunches every.single.day.

Lunch // 🌿 mixed lettuce, @eatbanza chickpea penne pasta 🍝 topped with dairy-free pesto, sliced radishes, @kitehillfoods almond milk cream cheese, & balsamic.

After being inundated with pictures of pasta🍝 on my feed😳 {and apparently finding out it's #NationalPastaDay 🤷} I knew I needed to go home and make a bowl for myself😋

Took all the random leftover veg in my fridge and tossed it with some chickpea pasta for a super fresh and delish bowl😍

Pasta deets🍝👉 Sautee carrot🥕 ribbons {I made purple and orange - just use a vegetable peeler🙃}, zucchini, and fresh corn🌽 off the cob in some olive oil and adobo seasoning for ~5 mins. 
Toss in cooked chickpea pasta🍝 and a little of pasta water💦 and toss it all together.
Plate on top of some fresh spinach🍃 and add a drizzle of alive oil😋

Yesterday I felt like the walking dead all.day.long. Luckily I only had professional development and didn't have any students to teach yesterday. That would have been rough. I went to bed early last night and slept in a bit and get SO much better. My legs are still sore and I'm still tired, but I actually feel like a real human being. The marathon really beats you up! .
