Gluten-free pumpkin bites 😍 with a nice lil dollop of homemade whipped cream. All I could think about at work today was pumpkin pie. Stopped my fav store @sacfoodcoop to stock up on all of the essentials.
2 cans of organic canned pumpkin
6 whole pastured eggs
2 pastured yolks
3 Tbsp of pumpkin spice
1/2 cup of raw honey
1/2 cup of coconut flour ( I used @nutiva)
1 Tbsp of raw, organic sugar ( I used @wholesomesweet)
1 cup of coconut flakes ( I used let’s do.. organic)
1 cup of raw nuts
1 cup of coconut flour
1 pinch of sea salt
2 Tbsp of coconut oil ( from @costco )
for whipped cream
1 1/2 cup of organic whipping cream ( I used @horizonorganic)
1 tsp of vanilla extract
1/2 Tbsp of raw, organic sugar
1. In a blender or food processor ( I used my @vitamix ) mix all of the crust ingredients until it forms a nice dense consistency. Flatten on the bottom of a 8x13 baking dish. Bake for 10 min or until crust starts to turn brown at 350 degrees.
2. Mix all filling ingredients with a handheld blender or stand mixer (I used my @kitchenaidusa handheld blender). Pour over baked crust and bake for 45 min at 350 degrees.
3. Mix all whipped cream ingredients on medium speed for about 2 min, then on medium-high for another 1-2 min. You will notice the cream consistency changing. If you stop and it sticks to whisk, you’re good to go.

This weekend I climbed two mountains. Crawled my way out to a rock face and gazed into the face of #buddha carved into the Yosemite Falls.
And the mountain spoke to me and took something from me that needed to be taken.
I off trailed into #halfdome with a g’damn ridiculously amazing man who continues to humble me.
We found a V3/V4 level rock face, and I free climbed a mossy vertical wall, and if it had not been for him at the end I would not be writing this right now.
I stood on edges that could kill with 1/8th of a wrong step.
I felt the presence and release of every man who’s ever violated me.
I saw the light of my brothers spirit shining through the mountain.
We left that mountain with much that did not serve us.
Because we are owned by this earth, and she can handle our shit if we only muster the courage to let her take it so we can finally stop complaining.
WE HAVE CONTROL IN LIFE!
I have control you have control, it’s called DISCIPLINE AND COMMITMENT.
You’ve got to own it.
Or your heart suffocates in the ashes of your dreams.
On the drive away from #yosemite , into the California sunset, I felt an incredible and deep upwell of grief.
Thinking about my brother, how much I miss him; my divorce, how incredibly it shredded my heart; my hopes and failures as a mother, and how absolutely I love my son . . . ✨✨continued in comments✨
