Tomorrow starting a shred, but now, I noodle (and isn't a biggg leg day always a good excuse to go carb crazy??) Going to be doing a month of strict "cleaner" keto (keto without going too crazy on the cheese 🙄😬). I have been a little toooo loose with my eating lately and my body and mind are both really feeling it. Starting my functional nutrition course in a week so need the mental sharpness only ketones can provide me 😁🙌
#breakfast this morning was so damn good. Picked up some organic arugula at #traderjoes yesterday along with this nitro infused espresso; crispy fried some pastured eggs in the cast iron and topped it with some chopped bacon and everything but the bagel seasoning 👌👍😍 ⭐️

You've asked me to start posting recipes and I will do my best but remember that I cook intuitively and don't really measure much. Not everything needs to be a 'to the letter' recipe and you can easily swap out ingredients for things you have on hand or you prefer. I want to inspire you to make plant-based meals more than I want you to try my actual recipes.
1 medium sized sweet potato (try to get a wide one)
Vegan butter of choice (2-4 TBSP depending on your tastes)
Vegan cream cheese, 1 TBSP (this is completely optional)
Spinach, small handful
Bell peppers, chopped, about 1/4 cup
Mushrooms, chopped, small handful
Salsa of choice (enough for topping)
Avocado (enough for topping)
Vegan sour cream topping (I just use unsweetened, plain vegan yogurt)
Spices: cayenne pepper, paprika, onion powder, sea salt, black pepper, cilantro, cumin (all these are to taste, I don't measure them)
1. Fork sweet potato to create vents, wrap in foil, bake at 425 for 1 hour.
2. Chop up your veggies and sauté on medium heat with a little oil or water. You can add some spices here.
3. Add butter, cream cheese, and seasonings to a bowl.
4. Remove potato from oven and unwrap. Cut the top of the potato off and carefully scoop out the inside and place in the bowl. Mix the potato with the butter, cream, and spices until well combined.
5. Fill the potato skin with the mixture and add the sautéed veggies. You can incorporate the veggies into the mixture or layer them in by themselves. Top with a little more mash and replace in the oven for 20 minutes.
6. Add toppings and devour!

Dinner was baked salmon with baby tomatoes, fennel and salad, with nibbles of mackerel pate and pistachios and dessert of homemde coconut flour espresso cookies (which were amazing) and these beautiful strawberries dipped in chocolate. Incredible, delicious and so appreciated 😙😙

My eldest daughter has just started following the autoimmune diet protocol due to a thyroid condition and she has been so inspirational with it! The only way to deal with making big dietary changes is to embrace them, get organised and start cooking. She's been making meals for work, including these delicious mini frittatas. They're quick and easy to make and you can take one for a snack or grab a couple for breakfast or lunch. There's plenty of protein and good fats in them to keep your blood sugar levels balanced and energy up for the day ahead.
So here's the ingredients - 6 eggs, half a cup of coconut milk, 1 cup of shredded spinach and 200g of sundried tomatoes with salt and pepper to taste.

Starting the day off with some fruit + bone broth because the healing life is in full swing and I am more motivated than EVER after getting some really positive test results this week! @healthyandpsyched Cauli Oatmeal - without the oats! You really REALLY have to have an open mind for this one 😝 The peanut butter goes well - we always put peanut butter in a casserole with cauliflower - and the raisins sweeten it. I had it with #tigernutmilk I'm not one for a cooked breakfast - even porridge in cold weather is eaten nearer lunch-time - so the jury's out on having this first thing. But it's a good way to get 2 of your #fiveaday straight off. Very filling too. I did it, Rach 😄🙌🏻
